- Make the crust: Combine the flour, granulated sugar and salt in a food processor and pulse to combine. Add the shortening and pulse until it looks like cornmeal. Add the butter and pulse a few times until the butter is in pea-size pieces. Add the vinegar and 1 tablespoon ice water; pulse until the dough starts coming together but is still crumbly, adding 1 more tablespoon ice water if necessary. Turn the dough out onto a piece of plastic wrap; shape into a disk and wrap. Refrigerate until firm, at least 1 hour or overnight.
- Put a baking sheet on the middle oven rack and preheat to 425 degrees F. Meanwhile, roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Fold the overhanging dough under itself and crimp with your fingers or a fork. Refrigerate until firm, at least 30 minutes.
- Meanwhile, make the filling: Whisk the eggs, brown sugar, corn syrup, melted butter, bourbon, vanilla, salt, walnuts and chocolate chips in a large bowl until smooth. Pour the filling into the crust. Carefully place the pie plate on the hot baking sheet in the oven and reduce the temperature to 350 degrees F. Bake until the crust is golden and the filling is set around the edge but slightly jiggly in the center, 50 to 55 minutes. Transfer to a rack and let cool completely, 3 to 4 hours.

- For the pie: Preheat the oven to 350 degrees F.

- 1. Crust: Mix wafers and butter. press into 9 inch pan. *NOTE* You can use an Oreo cookie pie crust.
- 2. Filling: In a saucepan melt the marshmallows into the evaporated milk or low heat till melted and smooth. Set aside and let cool completely.
- 3. When the marshmallow milk is cool, stir the bourbon into the cooled mixture.

- Gather the ingredients.
- Combine the flour, sugar, baking powder, and salt in the bowl of a food processor fitted with the metal blade and process briefly to combine.
- Add the cream cheese and butter and pulse until the mixture resembles a coarse meal.
- Transfer the dough to a large bowl. Drizzle the water over the dough and gently use your fingers or a flexible spatula to toss the dough around in order to hydrate the flour.
- Once a bit of dough can be pinched together between two fingers and hold its shape, bring the dough together into a disc.

- Add the corn syrup, sugars, and salt and whisk again.
- Add the melted butter, vanilla , and bourbon and whisk to combine.
- Coarsely chop one cup of the pecans.
- Sprinkle the chopped pecans and the chocolate chips on the bottom of the pie crust.
- Pour the filling over the chopped nuts and chips.
- Decorate the pie with the remaining 1/2 cup of whole pecans, gently nestling them on top of the filling in a pattern.
- Bake the pie for 40 to 50 minutes, rotating at the halfway point, until the filling is puffy and set around the edges, but the center still jiggles slightly when you carefully nudge the pie plate.
- Let the pie come to room temperature before serving, at least 4 hours.
