This from "Cuisines of Portuguese Encounters", in which the author gives recipes she had during travelling thru Portugal and its former colonies. This is a Brazilian recipe, named for a famous Brazilian Air Force Commander in the 1940's. He was a chocoholic. Often served at birthday parties and other festivities. I haven't made it yet.

BRAZILIAN CHOCOLATE TRUFFLE (BRIGADEIRO)

Brazilian Chocolate Truffle (Brigadeiro) image

Make the Brazilian Chocolate Truffles called Brigadeiro with a homemade dairy-free sweetened condensed milk and no refined sugar! This healthier version is sweet, creamy and chocolaty.

Categories     Dessert

Time 2h

Number Of Ingredients 5

1 can (400ml) full fat coconut milk
3 tablespoons raw honey (or maple syrup)
4 tablespoons raw cacao powder
1 tablespoon butter (or coconut oil)
1/2 teaspoon vanilla extract

Steps:

  • Combine the coconut milk and honey in a saucepan and cook over medium heat until it starts to boil.
  • Lower the heat to low and cook mixture for about 2 hours. After 2 hours the coconut condensed milk should be thick enough so that it does not run off the spoon easily and is reduced to about half.
  • Raise the heat to medium and mix in the cacao powder, butter and vanilla.
  • Stir the mixture frequently until it boils, then cook for another 12 minutes approximately, scrapping the sides of the pan. This time may vary and what you are looking for is a thick and creamy consistency.
  • Let it cool and place it in the fridge for about 2 hours. It is important to cool it before rolling it into balls.
  • Remove from fridge, line your hands with butter and start rolling the chocolate into balls. You might need to add more butter to your hands in between a few rolls.
  • Cover each ball in cacao powder, coconut or chopped nuts.If you feel the chocolate is not thick enough to roll into balls place it back in the stove at medium heat and let it cook longer, then cool it in the fridge again before attempting to roll it into balls.

BRIGADEIRO (BRAZILIAN DOCINHO)

Brigadeiro (Brazilian Docinho) image

These sweets made with condensed milk and chocolate belong to that marvelous category of Brazilian "docinhos." They are perpetual favorites with children and adults alike. I don't think I've ever seen a Brazilian birthday party without them and they are a huge success with Americans too.

Time 20m

Yield 40 serving(s)

Number Of Ingredients 3

1 (14 ounce) can sweetened condensed milk
2 tablespoons butter
2 tablespoons chocolate-flavor Nestle Nesquik powder

Steps:

  • In a heavy saucepan mix chocolate with condensed milk and add the margarine. Cook in low heat stirring constantly until you can see the bottom of the pan. Continue to stir for another two minutes. Pour onto a plate and let cool completely before you form the little balls (I usually leave it in the cupboard until next day). Butter your hands slightly to form the little balls. Roll the balls in chocolate powder or jimmies and put them in small paper cups.
  • A little cultural note: Have you noticed how many Brazilian recipes are made with condensed milk? It came to Brazil from Switzerland over a hundred years ago. It's made by Nestlé and because the label featured the picture of a milkmaid, the cans became known as the "maid milk' and that's what condensed milk is called to this day (Leite Moça).

  • Combine condensed milk, grated chocolate and butter in a non-stick pan and heat gently, stirring continuously.
  • Once all the ingredients have melted and are well mixed, continue to cook until the mixture thickens considerably, stirring continuously. When the mixture is ready, pulling the spoon or spatula through it should cause it to pull away cleanly from the base of the pan, almost like a choux dough when it begins to ball up.
  • Spoon a few drops of vegetable oil or butter into your hands and rub both hands together to coat well.

  • Whisk the condensed milk and cocoa powder together until homogeneous (no lumps). Then, stir in the butter.
  • Stovetop: Cook in a medium non-stick saucepan over medium heat (large burner), stirring constantly, until the mixture thickens and starts to peel away/show the bottom of the pan when you scrape it with your wood spoon (about 5-8 minutes).
  • Microwave: Pour mixture into a deep microwaveable bowl. If 900 watts, let cook on full power for about 6 minutes -- removing and stirring at least every 2 minutes, or until thick enough to be rolled (when it cools down, mixture will be thicker).
  • While it is cooking, do not leave the microwave unattended because mixture will rise and possibly bubble over, making a mess. Every time it rises, pause until mixture settles back down. If 1100 watts, cook at 80 % power. Double batches take more time to cook

  • Repeat after me... stir and scrape!! u003cbr/u003eu003cbr/u003eThis is likely the most important advice I can give you. Stirring and scraping during the cooking process, will ensure the brigadeiro doesn't burn AND that no lumps form. The brigadeiro is ready when you scrape the bottom of the pan and it takes 2-3 seconds for all that gooey mixture to come back to its place, or u003cstrongu003ewhen the mixture reaches 205F-208F.u003c/strongu003e You can use a candy thermometer, or just a regular food thermometer to check. u003cbr/u003e u003cbr/u003eu003cimg scale=u00220u0022 alt=u0022brigadeirou0022 src=u0022https://braziliankitchenabroad.com/wp-content/uploads/2019/04/Brigadeiro-Chocolate-Cake-14.jpgu0022/u003e
  • Pour the hot brigadeiro in a plate and let it cool until it's cool to touch. At that point, you can cover the dish with kitchen wrap to refrigerate and roll later, or you can roll now.
