These are wonderful, quick cookies. It is one of the first things I learned to "cook." You can add more or less oats (3 cups work best for me). I have found that the weather makes a difference on the consistency, its best to make them on a nice sunny day. Also, It is very important not to boil them for longer than one minute.

1/2 cup butter
1 1/2 cups white sugar
1/2 cup packed brown sugar
1/2 cup milk
4 tablespoons cocoa
1 pinch kosher salt
1/2 cup creamy peanut butter (or chunky but is seems to make a more crumbly, dry cookie)
2 teaspoons vanilla
3 cups dry quick-cooking oats

Steps:

  • Add the first six ingredients into a 4-quart sauce pan.
  • Bring to a rolling boil and hold for 1 minute.
  • Remove from heat.
  • Add peanut butter into the hot mixture and stir until melted.
  • Add in vanilla. (almond extract is good also, but I only use 1/2 teaspoon almond extract with 1 1/2 teaspoon vanilla extract).
  • Mix in the dry oats until they are completely coated.
  • Drop cookies by tablespoonfuls onto wax paper.
  • Let cool until set.
  • *Please remember that even if you do follow the recipe exactly, it doesn't always turn out just right. I've had these not set up for me or be hard and dry. But most of the time, the recipe is just right. I adjusted the sugar in the recipe by substituting 1/2 cup of white sugar for 1/2 cup brown sugar, this makes them more moist. I have also found that it makes a difference if you use quick cooking oats or old fashioned. In my experience it takes more old fashioned oats than quick cooking and I like the texture of the quick cooking better. When you make it a few hundred times like I have you learn a couple of things:) Also, Chunky peanut butter tends to make them more dry and crumbly.

Steps:

  • Combine the butter, sugar, and milk in a saucepan and bring to a boil over medium high to high heat (enough to bring the syrup to a rapid boil). Stir frequently to prevent burning or boiling over!
  • Once the syrup is at a full rolling boil, stir and cook for 1 minute then remove from heat.
  • Add the vanilla and cocoa, stir until the syrup is smooth. Add the quick oats and stir until evenly coated with the syrup.

2 cups granulated sugar
3 tablespoons cocoa
1/2 cup milk
1/4 cup butter or 1/4 cup margarine
3 cups quick-cooking oats
1 teaspoon vanilla extract
1/2 cup peanut butter (plain or crunchy)
1/2-1 cup nuts

Steps:

  • Prepare a cooling surface: sanitize and butter a countertop, butter foil, or spread waxpaper.
  • In a large saucepan, mix sugar, cocoa, milk and butter.
  • Bring to a boil and cook for one minute.
  • (You will notice gloss disappear from mixture and slowly start to become more matified, at this point you must work very quickly. If this happens to completely during cooking, you might want to pour mixture into a bread pan and slice and serve like fudge or simply start over. When this occurs while spooning, speed it up!).

1 stick unsalted butter
2 c sugar
1/2 c milk
4 Tbsp unsweetened cocoa
1/2 c peanut butter
3 1/2 c dry quick cooking oats
2 tsp vanilla extract

Steps:

  • 1. In a saucepan, over medium-high heat, melt butter and add sugar, milk and cocoa. Mix well and bring to a boil for 1 minute.
  • 2. Remove from heat and add peanut butter. Stir into mixture until well melted and combined. Add vanilla and then oats, mixing well.
  • 3. Drop by 1/4 cupfuls onto wax paper. Shape into circles with a spoon and let cool to harden. (if yours don't harden, the temperature and humidity outside play a large part with these cookies) They still taste good though! Grab a spoon!

¼ cup whole milk
¼ cup granulated sugar
½ cup light brown sugar
¼ cup cocoa powder, Dutch-process preferred
½ teaspoon kosher salt
¼ cup creamy cashew butter
4 ounces' dark chocolate, chopped
2 teaspoons vanilla extract
2 cups quick oats
flaky salt, for garnishing

Steps:

  • Gather the ingredients.
  • Line two baking sheets with parchment paper and grease with cooking spray and set aside.
  • In a medium saucepan over low heat, melt the butter. Once melted, add the milk, light brown sugar, granulated sugar, cocoa powder, and kosher salt and whisk well until combined.
  • Raise the heat to medium and continue whisking until the sugars have dissolved and the mixture comes to a simmer. Continue simmering for exactly 1 minute then remove from the heat completely.
  • Add the cashew butter, chocolate, and vanilla and stir until melted and combined. Fold in the oats and stir until everything is fully combined.
  • Using a small cookie scoop , scoop the cookie batter onto the prepared sheets. Sprinkle the cookies with a small pinch of flaky salt.
  • Let the no-bake cookies sit on the countertop until firm and set, about an hour.
