WHITE CHOCOLATE BERRY PARFAITS



White Chocolate Berry Parfaits image

These red white and blue parfaits are the perfect summer dessert!

8 ounces white chocolate, chopped
1 cup heavy cream
2 teaspoons Frangelico liqueur, optional
Blueberries, Raspberries or Strawberries (slice the strawberries to fit into the glasses)

Steps:

  • Gently melt the white chocolate in the microwave. Set aside to cool (should be thickened, but not firm).
  • Whip the cream to soft peaks. Fold in the white chocolate and refrigerate at least an hour.
  • In small glasses (I used larger shot-type glasses for small parfaits), alternate layers of red berries, white chocolate cream, and blueberries, ending with cream.
  • Garnish with berries to serve.

Create an instant, cool summer dessert. No heat is needed.

1/4 cup chocolate-flavor syrup
1 container (8 oz) Cool Whip frozen whipped topping, thawed
1/2 cup seedless red raspberry jam
2 cups quartered fresh strawberries
1 cup fresh raspberries
1 cup fresh blackberries
1 loaf (11 oz) frozen chocolate cake, thawed, cut into small cubes (4 cups)

Steps:

  • In medium bowl, fold chocolate syrup into whipped topping. Set aside.
  • In large microwavable bowl, microwave raspberry jam on High 30 seconds or until melted. Add strawberries, raspberries and blackberries; toss until well coated.
  • To assemble, divide 2 cups of the cake cubes evenly among 8 parfait, wine or champagne glasses. Layer each with half of the chocolate whipped topping and half of the berry mixture. Repeat layers with remaining 2 cups cake cubes, chocolate whipped topping and berries. Serve or refrigerate.

2 brownies (2x2-inches each), broken into pieces
12 medium strawberries, cut into chunks
2 medium kiwifruit, peeled, cut into chunks
2 cups Yoplait® 99% Fat Free creamy strawberry or creamy vanilla yogurt (from 2-lb container)

Steps:

  • Reserve 1 tablespoon small brownie pieces for garnish. In each of 4 serving glasses, layer the remaining brownie pieces, the strawberries and kiwifruit.
  • Top each with 1/2 cup yogurt. Garnish each parfait with reserved brownie pieces. Serve immediately.

1-1/2 pints vanilla ice cream
1-1/2 pints fresh raspberries
2-1/4 cups chocolate wafer crumbs
Sweetened whipped cream

Steps:

  • Layer each of 6 parfait glasses with 1 teaspoon raspberry liqueur, 2-1/2 tablespoons ice cream, 4 or 5 raspberries and 2 tablespoons chocolate wafer crumbs. Repeat layers twice. Freeze. To serve, top with whipped cream and remaining raspberries.
