My family loves these rich, sweet bars. The chocolate and raspberry jam go together so well. I make a lot of cookies and bars, but these special treats are my favorite. They're so pretty served on a platter. -Kathy Smedstad, Silverton, Oregon

1 cup all-purpose flour
1/4 cup confectioners' sugar
1/4 cup butter, cubed
FILLING:
1/2 cup seedless raspberry jam
4 ounces cream cheese, softened
2 tablespoons 2% milk
1 cup white baking chips, melted
GLAZE:
3/4 cup semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into an ungreased 9-in. square baking pan. Bake at 375° for 15-18 minutes or until browned. Spread jam over warm crust. , In a small bowl, beat cream cheese and milk until smooth. Add white chips; beat until smooth. Spread carefully over jam layer. Cool completely. Refrigerate for 1 hour or until set. , For glaze, melt chocolate chips and shortening in a microwave; stir until smooth. Spread over filling. Refrigerate for 10 minutes. Cut into bars; chill 1 hour longer or until set. Store in refrigerator.

8 ounces dried blueberries

Steps:

  • Line a baking sheet with aluminum foil.
  • Place chocolate chips into a microwave-safe bowl; heat in microwave for 1 minute. Stir. Heat in microwave for 1 minute more; stir again. Add dried blueberries and mix well.
  • Pour chocolate mixture onto the prepared baking sheet and refrigerate until set, about 30 minutes. Break into pieces.

Sugar cookie mix does double duty in these summery bars forming the base and tasty crumble topping. We love that these bars are loaded with fresh raspberries and blueberries with a finishing touch of white chocolate drizzle to pull it all together.

1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup cold butter, cut into pieces
1 1/2 cups fresh blueberries, from 2 (6-oz) containers
1 1/2 cups fresh raspberries, from 2 (6-oz) containers
1/3 cup sugar
3 tablespoons cornstarch
1/4 cup white vanilla baking chips

Steps:

  • Heat oven to 375°F. Spray 9-inch square pan with cooking spray.
  • In large bowl, place cookie mix. Cut in butter, using pastry blender or fork, until mixture is crumbly (do not overmix). Reserve 1 cup cookie mixture for topping; set aside. Press remaining mixture in bottom of pan. Bake 10 minutes.
  • In medium bowl, mix Filling ingredients. Spread mixture evenly over partially baked crust. Sprinkle reserved cookie mixture over filling.
  • Bake 32 to 36 minutes or until top is light golden brown and bubbling along edges. Cool 30 minutes.
  • In small microwavable bowl, microwave white vanilla baking chips uncovered on High 30 to 45 seconds or until chips can be stirred smooth. Spoon melted chips into small resealable food-storage plastic bag; partially seal bag. Cut off tiny corner of bag. Squeeze bag to pipe over top of bar. Cool completely, about 1 1/2 hours. Cut into 4 rows by 4 rows. Cover and refrigerate any remaining bars.

1 cup raw almond
1 cup raw walnut
2 ½ cups pitted date, roughly chopped
1 teaspoon salt, plus more to taste
½ cup water
1 ½ cups brown rice cereal
1 ½ cups old fashion oat
½ cup dried blueberry
½ tablespoon cinnamon
3 cups dark chocolate, chopped
2 tablespoons coconut oil

Steps:

  • Preheat the oven to 350˚F (180˚C). Line a baking sheet with parchment paper.
  • Spread the almonds on one half of the baking sheet and the walnuts on the other half.
  • Toast for 10-15 minutes, or until lightly browned and fragrant. Let cool 20 minutes before roughly chopping.
  • In a food processor or blender, combine the dates, salt, and water, and process until well-combined.
  • Transfer the date mixture to a large bowl and add the brown rice cereal, oats, blueberries, cinnamon, and salt. Stir until well-combined. Add the chopped nuts and fold to combine.
  • Transfer the mixture to a parchment-lined baking sheet and spread flat with a spatula.
  • Cover with plastic wrap and chill in the fridge for 30-45 minutes to set.
  • In a large bowl, combine the chocolate and coconut oil, and microwave for 1½ minutes, stirring every 30 seconds, until melted and smooth
  • Pour ⅔ of the melted chocolate over the bars and spread evenly. Cover with plastic wrap and freeze for 10 minutes, or until the chocolate is set.
  • Invert the bars onto a cutting board and remove the parchment paper. Drizzle the remaining chocolate over the top. Return to the freezer for 10 minutes, until the chocolate is set.
  • Cut into 16 bars. Wrap individually in parchment paper and store in the fridge or freezer until ready to eat.
  • Enjoy!

1/8 teaspoon (0.625 mL) ground cinnamon
9 sheets graham crackers
4 tablespoons (60 g) unsalted butter, melted
16 oz. (450 g) cream cheese, room temperature
2 eggs
2 lemons, zested and juiced
1/2 cup (100 g) sugar
3/4 cups (110 g) fresh blueberries
3/4 cups (110 g) raspberries

Steps:

  • Preheat the oven to 325°F (160°C).
  • Spray an 8 by 8-inch baking pan with nonstick spray and line with parchment paper, making sure to leave some overhang.
  • Process all the crust ingredients in a blender or food processor until it looks sandy. Pour the mixture into the baking pan and pat gently to create an even layer. Bake the crust for 12 minutes; then transfer to a rack to cool.
  • Mix the cream cheese, eggs, lemon zest and juice and sugar in a blender or food processor. Pour the mixture over the cooled crust and top with berries.
  • Bake for 35 minutes. Remove from the oven, cool completely and then refrigerate for 3 hours. Use the parchment to lift the cheesecake from the pan, slice and serve.
