3 cups whole wheat pastry flour
¾ cup white sugar
½ cup brown sugar
¾ cup cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups mashed very ripe bananas
½ cup creamy peanut butter
1 ¼ cups almond milk
¾ cup canola oil
1 (10 ounce) bag semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x12-inch baking pan.
  • Mix pastry flour, white sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt together in a bowl. Stir bananas and peanut butter together in a separate bowl until smooth; add almond milk and oil and mix well. Carefully fold banana mixture into flour mixture until batter is just combined; fold in chocolate chips. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 40 to 45 minutes.

One 15.25-ounce box chocolate cake mix
1/4 cup oil
4 ripe bananas, mashed
2 large eggs
1 1/2 cups peanut butter chips
1 cup confectioners' sugar
2 tablespoons peanut butter
3 to 4 tablespoons warm milk or water

Steps:

  • For the banana bread: Preheat the oven to 350 degrees F. Spray two 9-by-5-inch loaf pans with nonstick cooking spray.
  • Combine the cake mix, oil, mashed bananas, eggs and 1/2 cup water in a large bowl and mix with a hand mixer or whisk until well blended, about 2 minutes. Fold in the peanut butter chips. Evenly divide the batter between the 2 prepared loaf pans.
  • Bake until a toothpick inserted in the center comes out clean, 40 to 50 minutes. Let cool in the pans for 10 minutes, then remove and let cool on a cooling rack.
  • For the peanut butter glaze: Combine the confectioners' sugar, peanut butter and 3 tablespoons of the warm milk in a bowl and whisk until smooth. It should be about as thick as pancake batter; if it's too thick, just add a little more milk.
  • Pour some of the glaze over each loaf and let set for about 10 minutes. Slice and serve.

1 teaspoon salt
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1 cup unsalted butter ((2 sticks or 16 tablespoons, 225 grams), softened)
1 cup light brown sugar
2 large eggs
1/2 cup Greek yogurt
3 ripe bananas (mashed)
1/3 cup peanut butter
1 cup chocolate chips
salted or unsalted peanuts (crushed or whole - for decorating (optional))
1/2 cup peanut butter
2 tablespoons soft butter
1 teaspoon vanilla extract
3 tablespoons milk
1 1/2 cups icing sugar (US: powdered sugar)
¼ cup unsweetened cocoa powder

Steps:

  • Preheat the oven to 175C / 350 F. Lightly grease 2 x 8-inch round cake tins with butter.
  • Combine the flour, salt, baking powder and baking soda in a large bowl, then set aside.
  • Beat the butter and sugar together with an electric whisk until light and fluffy, then whisk in the eggs one at a time.
  • Beat in the yoghurt, bananas and peanut butter, then stir in the flour little by little with a wooden spoon until totally mixed in. Finally, fold the chocolate chips through the batter.
  • Divide the batter between the two greased tins, then bake for 35 to 40 minutes or until the cakes begin to pull away from the sides of the pan and a skewer poked into the centre comes out without raw batter on it. Let cool for a while, then turn out onto a wire rack to completely cool.

1 pkg dark chocolate cake mix
1 tsp baking soda
3 eggs
1/2 c oil or melted butter
3/4 c mashed ripe banana
2/3 c sour cream or yogurt
1 tsp vanilla
PEANUT BUTTER GLAZE
4 oz semi sweet chocolate baking squares(each 1 oz.)
2/3 c creamy peanut butter
1/3 c chopped peanuts (optional)

Steps:

  • 1. In a large bowl, combine cake mix and baking soda. Add the rest of the ingredients and beat on low speed for 1 minute. Beat on medium speed for 4 minutes.
  • 2. Pour batter into a greased and floured Bundt pan.
  • 3. Bake at 350 degrees for 45-55 minutes. Cool in pan 15 minutes. Cool fully on wire rack. Can also be made as a layer cake. Bake layer cake for 28-32 minutes. Frost with a peanut butter or chocolate icing.
  • 4. Glaze: In a small saucepan over low heat, melt chocolate and peanut butter, stirring constantly. Spread over cooled cake. Sprinkle nuts on top.

Steps:

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with paper liners and set aside.
  • For the cupcakes: Place the bananas on a rimmed baking sheet and pierce each banana 3 times with the tip of a knife. Roast, unpeeled, until the skin is completely black and the flesh is soft, about 25 minutes. Allow to cool for 15 minutes.
  • Peel the bananas and place them in a medium bowl. Discard the peels. Mash the bananas with the back of a fork until smooth. Remove the bowl from the heat and continue to stir until fully melted. Drizzle the chocolate mixture over the cooled cupcakes. Allow to cool for 1 hour before serving.
