GINGER SLICE
This Ginger Slice is healthy and simple to make . The base is chewy and soft, with a silky smooth velvet ginger top, infused with notes of vanilla, coconut and honey.

Steps:
- Add all the ingredients for the base into a food processor and blitz to combine. Depending on how powerful your food processor is this could be up to a couple of minutes. Blitz until you have a crumby biscuit like texture.
- Press into a tin lined with or foil. (this makes it easier to get out) [large metal loaf tin, measuring 26.5cm in length, and 11 cm wide (10.5 inches long by 4.5 inches wide)]
- Clean the food processor first. Place all ingredients for topping into food processor and blitz for 1 minute, or until it looks like a flaky crumbly texture. When you touch it, it will feel soft and silky. Spoon out topping onto base, spreading evenly using a dessert spoon to get into the corners of the tin. Use your fingers to firmly press down to get a smooth finish.
- Cover with plastic wrap and refrigerate for 3 hours before serving. Cut into 12 even slices with a sharp knife. For best results, clean knife in between cuts. Store in the fridge in an air tight container for upto 7 days.

- Line a 20 x 30cm tin with baking parchment. Mix the biscuits with most of the ginger, then set aside. Melt the chocolate, butter and golden syrup in a bowl set over a pan of simmering water, stirring occasionally, until smooth and glossy. Pour this over the biscuit and ginger mixture and mix together well.
- Tip the mixture into the prepared tin and sprinkle over the reserved ginger, then flatten the top lightly - it doesn't need to be completely smooth. Chill for at least 2 hrs, or overnight, before cutting into small squares.

- About 2 hours before you want to start, bring your cream and cream cheese out of the fridge (see recipe notes).
- Crush the biscuits (either with a rolling pin or in a food processor). Mix with the melted butter and press into your 7" tin.
- Combine the whipped cream, cream cheese, melted ROOM TEMPERATURE white chocolate, lemon juice and vanilla extract. Fold in gently until fully combined.
- Smooth on top of the biscuit base and flatten the top with the back of a spoon or a palette knife if you have one.
- Chill for 2 hours or even better, over night.
- Use my knife tip (in recipe notes) to remove the cheesecake from the tin. Pipe the remaining whipped cream and decorate with grated chocolate and chocolate chunks.

Steps:
- Lighty oil a 18cm/7inch sandwich tin.
- In a saucepan heat the butter 100g/4oz of chocolate and golden syrup, stir until melted.
- Remove from heat and stir in the biscuit crumbs and 3/4 of the nuts.
- Press warm mixture into tin, melt remaining chocolate, then spoon on top and sprinkle over remaining nuts.
- Chll at least an hour before serving.
