- Preheat oven to 325°. Grease and flour four 5-3/4x3x2-in. loaf pans., In a large bowl, beat eggs, sugar, water, amaretto, oil and melted butter until well blended. In another bowl, whisk flour, baking powder and salt; gradually beat into egg mixture. Stir in almonds., Transfer to prepared pans. Bake 35-40 minutes or until a toothpick inserted in center comes out clean. , Meanwhile, for glaze, combine sugar, water and butter in a small saucepan; bring to a boil. Cook and stir 3 minutes. Remove from heat; stir in amaretto., Remove cakes from oven; cool in pans on a wire rack 5 minutes. Pour glaze over cakes while in pans; let stand until glaze is absorbed, about 30 minutes. Remove cakes from pans. Store cooled cakes, covered, in refrigerator.

EASY AMARETTO CHOCOLATE TRUFFLES RECIPE
Amaretto Chocolate Truffles are so indulgent and make a fantastic holiday gift! These melt-in-your-mouth chocolate confections are spiked with amaretto liqueur and almond extract, so their busting with almond flavor. Use milk chocolate, dark chocolate, or a combination of both!

- Place chopped chocolate in a medium-sized heatproof bowl and set aside.
- In a small saucepan over medium heat, bring the cream to a boil. Once it begins to boil, remove cream from heat.
- Pour the cream over the chopped chocolate and allow the mixture to sit, untouched, for a minute. Whisk smooth. Stir in the almond extract, amaretto, and butter and vigorously whisk until smooth and shiny.
- Set aside and cool to room temperature. Tightly cover the bowl with plastic wrap and refrigerate for 2 hours, or until firm enough to scoop.
- Before you begin rolling your truffles, make sure you have enough room in your refrigerator for both baking sheets; the truffles must chill again before being dipped in the chocolate coating.
- Line two large baking sheets with parchment paper and set them aside.
- Scoop out about 3 teaspoons of the truffle filling and quickly roll it between your hands to form a ball. Transfer to the prepared baking sheet, and repeat with all truffles. Refrigerate the rolled truffles for at least 20 minutes before dipping in the chocolate.
- In the meantime, you can temper your chocolate.
- Fill a medium pot one-third full with water and bring it to a low simmer over medium heat. Place a heatproof bowl that will fit on top of the pan snugly, but will not touch the simmering water, on top of the pan. Reduce the heat to low and place two-thirds of the chocolate into the bowl. Place a candy thermometer into the chocolate and let it melt, stirring frequently with a silicone spatula. *Do not let the temperature of the chocolate exceed 120°F.
- Once the chocolate has fully melted, remove the bowl from heat, but keep the pot of simmering water on the burner. Wipe the bottom of the bowl to remove any condensation.
- Stir in the remaining chocolate, a little bit at a time, allowing what you've added to completely melt before adding more.
- Set aside and allow the chocolate to cool to 82°F. Once the chocolate has reached 82°F, place it back over the simmering water and reheat to a temperature between 88°F and 91°F. Remove the bowl from heat once you have reached the correct temperature. The chocolate should be smooth and glossy, with no streaks.
- Using a fork or candy dipper, dip each truffle in the chocolate, allowing excess chocolate to drip back into the bowl before transferring it back to the parchment paper line baked sheet. Top each truffle with a sprinkle of chopped almonds.
- Set aside and allow the chocolate to set before serving, about 1 hour. Store in an airtight container, at room temperature, for up to 1 week.

- Preheat oven to 325°F (163°C). Generously grease a 10-inch (12-cup) bundt pan, being sure to coat all of the nooks and crannies. I suggest using a non-stick baking spray that has flour in it, or greasing the pan with shortening or butter, then dusting it with flour. Set pan aside until needed.
- In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt; whisk well to combine then set aside until needed.
- In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, beat the butter and cream cheese on medium speed until smooth and creamy, about 1 minute. Gradually add in the sugar, then increase the speed to medium-high and continue beating until light and fluffy, about 3 minutes. Beat in the amaretto and almond extract.
- Reduce the speed to medium-low, then add in the eggs, one at a time, beating well after each addition and scraping down the sides of the bowl as needed. Reduce the speed to low and add in the flour mixture, mixing just until combined. Turn mixer off.
- Scrape the batter into the prepared pan.
- Bake for 25 minutes, then reduce the oven temperature to 300 degrees (F) and continue baking for 40 to 45 minutes, or until the cake is golden brown AND a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan, set on a wire rack, for 20 minutes. Then invert the cake onto the rack and cool completely.
- In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, beat the cream cheese and butter on medium-speed until completely smooth. Reduce the speed to low and gradually add in the confectioners' sugar, beating until all of the sugar is completely combined. Add in the salt, amaretto, and almond extract and beat smooth. Beat in the heavy cream. Once all of the ingredients have been incorporated, increase the speed to medium-high and beat for two minutes.
- Spread frosting on the top and sides of the cooled cake. Top with sliced almonds. Slice and serve, or store in an airtight container in the fridge, for up to 3 days.

- Coat a ten-inch tube pan with solid vegetable shortening then either flour or sugar. I use granulated sugar because it doesn't leave white areas on the cake. Alternately, you can use Wilton Cake Release.
- Preheat oven to 350 degrees.
- Sift flour, salt, and baking powder together.
- Cream butter, shortening, and sugar with an electric mixer until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Mix in Amaretto.

- Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 10 inch non-stick Bundt pan.
- In a large bowl, combine cake mix, eggs, pudding mix, 1/2 cup of cold water, oil, 1/2 cup amaretto and 1/4 teaspoon almond extract. Blend well for approximately 3 minutes.
- Pour batter into prepared 10 inch Bundt pan. Bake at 350 degrees F (175 degrees C) for 45 minutes to an hour, or until a toothpick inserted into the center of the cake comes out clean.
- Remove cake from oven, and use an ice pick or skewer to make as many holes as possible into the cake. Apply glaze while cake is still warm. Slowly and patiently drizzle glaze over cake, including the edges and center of Bundt pan. Allow cake to cool in the pan for at least 2 hours.
- To make the glaze: Combine butter, sugar, 1/4 cup water, and 1/2 cup amaretto in a saucepan. Bring to a boil, and continue to boil for 10 minutes, stirring constantly.
- Topping: Lightly toast slivered almonds in the oven. This will take 5 to 10 minutes. Stir frequently and be careful not to burn. Heat 1/4 cup of the prepared frosting in the microwave for 10 seconds, to soften. Place the cake on serving dish and use a spoon to drizzle the softened frosting over the cake. Scatter toasted almonds over cake before frosting cools.

- 1. Preheat oven to 325. Grease and flour loaf pans. I used a 5.2x9x2.75, you can use 4 of the 5 3/4x3x2 loaf pans, I didn't have this size.
- 2. In a large bowl, beat eggs, sugar, water, amaretto, oil and melted butter until well blended. In another bowl, whisk flour, baking powder and salt; gradually beat into egg mixture, stir in almonds. Transfer to prepared pan. Bake for 1hr15min. for the larger loaf pan and if you use the small loaf pans 30 to 40 minutes.
- 3. Make the glaze, combine sugar, water and butter in a small saucepan; bring to a boil and cook and stir 3 minutes. Remove from heat; stir in amaretto. Remove cake from oven let sit at least 5 minutes and pour glaze over the cake while still in the pan. Let stand until glaze is absorbed at least 30 minutes. You don't have to use all of the glaze, especially on the 1 large loaf. Remove cake from pan. This cake freezes well also.

Whomever you serve this to will think you SLAVED but this is so easy and delicious!! This is an incredibly moist, intensely chocolate cake, perfect for chocoholics. - Preheat oven to 350°F Spray three 9-inch-diameter cake pans with 1 1/2-inch-high sides with nonstick spray. Then line the bottoms with parchment paper.

- 1. Day Before: Pour the cherries into a medium sized bowl with a lid and add 1/4 to 1/2 a bottle of amaretto, stir gently not to break the cherries but bled the amaretto in well. Place them into the refrigerator for 6- 24 hours: Longer is better!
- 2. The Cake: Pre-heat your oven to 350 degrees F. Spray 3- 9" Round pans with baking spray and set them aside.
- 3. In a large mixing bowl, beat together the sugar, eggs, butter, vanilla, and amaretto until it is light and fluffy. In a separate bowl blend together flour, cocoa, salt, baking soda and espresso; mix together well.
- 4. Add the dry ingredients and buttermilk alternately to the creamed mixture until everything is well incorporated. Pour the batter evenly into the 3 prepared pans and bake for 26-30 minutes or until a toothpick inserted into the center of each cake comes out clean.
- 5. Remove the cakes from the oven and let them cool for at least 15 minutes before removing for the pans. Note: If you add more amaretto, just use a little less buttermilk to balance the moisture.
- 6. The Icing: break the chocolate into pieces and place it into a glass bowl. Microwave for one minute intervals, stirring between until it is all melted (usually 3x does the trick) set the chocolate aside. Cut the butter into 48 tablespoon pieces, place in a bowl and set aside so that it can become room temperature. Note: because you are using two butters you may have to soften them up a little more by placing them in the microwave for about 15 seconds.
- 7. In a large mixing bowl combine the sugar, egg whites,cream of tartar and salt. Carefully combine them but do not beat them. Place the mixing bowl over a pan of boiling water for 5 minutes or until the egg & sugar mixture is warm not hot to the touch. Place the mixing bowl on to the mixer and whisk on high until the meringue holds a stiff peak.
- 8. Turn the mixer down to medium and begin to add the butter one piece at a time scraping down the sides often. Note:make sure each piece is well blended before adding another or you will end up with huge clumps of butter in your icing.
- 9. Add in the chocolate, vanilla, espresso powder and amaretto and beat for another minute or until everything is mixed in well, scrape the sides to get all of the chocolate and butter off the sides of the bowl.
- 10. To assemble the cake, place a dollop of icing and place your first layer bottom down onto the dollop, lightly frost the layer and add 2 layers of boarder: I usually use a piping bag to do this; I refer to it as the great wall. Spoon the cherries evenly into the pocket you have formed; fill the whole space but do not use too much liquid. Place the second cake layer, bottom down over the cherries like a cap and very gently press down to seal the cherries into the pocket you have created. Frost the entire cake. Using a pastry bag with a star tip, add a ring of stars close together to form a pool on top of the cake, spoon in the rest of the cherries making sure you do not put too much liquid. Decorate the sides with sliced almonds or dried cake crumbs....be creative. Enjoy!
- 11. Notes: The smallest bottle of amaretto available is 750ml, or a nip, use about a 1/4 to 1/2 a bottle to soak the cherries depending on how many cans you use. cover the cherries and gently stir them to be sure the amaretto is mixed in well.
