3/4 cup butter or 3/4 cup margarine, softened
3/4 cup sugar
1 large egg
2 teaspoons vanilla extract
2 1/4 cups flour
1/2 teaspoon salt
1 cup miniature semisweet chocolate chips
1 (12 ounce) package semisweet chocolate morsels
2 cups finely chopped walnuts

Steps:

  • Beat butter and sugar at medium speed with an electric mixer until light and fluffy. Add egg and vanilla, beating until blended. Add flour and salt, beating well. Stir in mini morsels.
  • Turn dough out onto a lightly floured surface. Shape dough into 2x1/2" logs(bout 1 heaping teaspoons each). Place logs on ungreased baking sheets.
  • Bake at 350*F. for 12 to 15 minutes or until lightly browned; remove to wire racks to cool.
  • Microwave chocolate morsels at High 4 minutes or until melted, stirring once.
  • Dip ends of cookies in melted chocolate. Roll ends in walnuts. Place on wax paper until set. Freeze up to 1 month, if desired. Enjoy!

1 cup butter or 1 cup margarine, softened & divided
1/4 cup sugar
1 large egg
1 1/2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1/2 teaspoon salt
2 cups miniature semisweet chocolate chips, divided
1 cup finely chopped walnuts or 1 cup pecans

Steps:

  • Beat 3/4 cup butter at medium speed with an electric mixer until creamy; gradually add sugar. Add egg and vanilla, mixing well.
  • Combine flour and salt; add to butter mixture, mixing until blended. Stir in 1 cup chocolate morsels.
  • Shape dough into 1 1/2- x 1/2-inch logs. Place on ungreased cookie sheets.
  • Bake at 350F for 12 to 15 minutes or until set. Remove to wire racks to cool.
  • Combine remaining 1 cup chocolate morsels and remaining 1/4 cup butter in a small heavy saucepan; cook over low heat, stirring often, until chocolate melts. Dip ends of cookies into mixture, and roll in chopped walnuts. Place on wax paper until chocolate is firm. Store in an airtight container; freeze up to 6 months, if desired.

2 cups all-purpose flour
1 teaspoon double-acting baking powder
1/4 teaspoon salt
1/2 cup unsweetened cocoa powder
1/2 cup walnuts
2/3 cup plus 2 tablespoons sugar
2/3 cup almond paste (about 7 ounces)
1 stick (1/2 cup) unsalted butter, softened
1 teaspoon vanilla
2 large egg whites

Steps:

  • In a bowl whisk together the flour, the baking powder, the salt, and the cocoa powder. In a food processor grind fine the walnuts with 2 tablespoons of the sugar, add the almond paste, and grind the mixture until it forms a paste. In the bowl of an electric mixer cream together the butter and the remaining 2/3 cup sugar, add the nut paste and the vanilla, and beat the mixture until it is combined well. Beat in the flour mixture at low speed until a dough is formed and beat in the egg whites until they are incorporated.
  • Working with half the dough at a time, roll out the dough 1/4 inch thick between sheets of plastic wrap, cut out diamond shapes with a 2-inch-wide cutter, and arrange them 1 1/2 inches apart on buttered baking sheets. Press ridges into the diamonds with the tines of a fork and bake the cookies in batches in the middle of preheated 350°F. oven for 10 minutes. Let the cookies cool on the sheets on a rack for 2 minutes, transfer them carefully with a spatula to racks, and let them cool completely. The cookies may be made 3 days in advance and kept in airtight containers.
