CRISPY CHEDDAR MASHED POTATO PUFFS



Crispy Cheddar Mashed Potato Puffs image

Battered, deep-fried mashed potato puffs with bacon and a cube of Cheddar inside. Serve with chive sour cream.

¾ cup sour cream, divided
1 teaspoon finely chopped chives or green onions
8 ounces Borden® Medium Cheddar Cheese Chunk, divided
2 medium russet potatoes, peeled and chopped
2 tablespoons Borden® Butter
⅛ teaspoon garlic powder
⅛ teaspoon seasoned salt
⅛ teaspoon dry mustard
¼ teaspoon salt
15 bacon strips, cooked crisp and crumbled
1 cup beer batter dry mix
Oil, as needed for frying

Steps:

  • MIX 1/2 cup sour cream and chopped chives together in a small bowl. Refrigerate.
  • Preheat oven to 400 degrees F. Shred 1/2 of cheese to make about 1 cup of shreds. Divide shreds into 8 piles, about 2-inches apart, on a silicone baking mat or parchment paper lined cookie sheet and bake about 5 minutes or until cheese melts and becomes crisp. Let cool 5 minutes and remove from baking sheet. Reduce oven temperature to 180 degrees F.
  • Cut the remaining 4 oz. cheese into 8 1/2-inch cubes. Form balls of mashed potato mixture, using an ice cream scoop. Make a small hole in center of each potato ball and fill with one cube Borden® Cheese. Cover with additional mashed potato so cheese is hidden inside. Refrigerate until ready to fry.
  • Heat oil in a large saucepan over medium-high heat to 375 degrees F. Prepare beer batter according to package directions; dip each mashed potato ball into batter, and deep-fry for about 5 minutes or until golden brown. Remove from oil, and drain on paper towel. Reheat oil to 375 degrees F between batches. Keep potato puffs warm in the holding oven.
  • Place potato puff on a plate; top with dollop of chive cream, a few chives and the Cheddar crisp. Serve immediately.

Steps:

  • Mix 3 tablespoons melted butter with a pinch of salt and cayenne. Lay out rounds of refrigerated biscuit dough on a parchment paper-lined baking sheet. Brush with the butter; top with shredded cheddar and chopped chives. Fold into half-moons and crimp to seal, then bake as the label directs. Brush with more butter.

Cream puffs are a family favorite, but I prefer them savory and not sweet, so this is my take on a unique appetizer that disappears quickly! Crab, chicken or other cooked meat could be used to replace ham.

1 carton (8 ounces) spreadable chive and onion cream cheese
1/2 cup mayonnaise
3 tablespoons 2% milk
1 cup cubed fully cooked ham
1 cup shredded cheddar cheese
3 tablespoons chopped sweet red pepper
1 tablespoon minced chives
1 tablespoon minced fresh parsley
1 garlic clove, minced
CREAM PUFFS:
1 cup water
1/2 cup butter, cubed
1/4 teaspoon seasoned salt
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1 cup all-purpose flour
4 large eggs
1 cup shredded cheddar cheese
1 tablespoon minced fresh parsley
1 tablespoon minced chives
Additional minced fresh parsley and chives

Steps:

  • In a small bowl, beat the cream cheese, mayonnaise and milk until blended. Stir in the ham, cheese, pepper, chives, parsley and garlic. Cover and refrigerate until ready to use., In a large saucepan, bring the water, butter, seasoned salt, garlic powder and onion powder to a boil. Add flour all at once and stir until a smooth ball forms., Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Stir in the cheese, parsley and chives., Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 400° for 20-25 minutes or until golden brown. Remove to wire racks. Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Cool puffs. , Just before serving, fill cream puffs with ham mixture. Sprinkle with additional parsley and chives.

Who says flapjacks should always be sweet? Rustle up a batch of these cheese and chive savoury flapjacks - they're ideal for picnics or as a snack to curb hunger

100g butter
250g porridge oats
2 carrots , grated
1 tbsp milled flaxseed
1 tbsp chia seeds
100g mature cheddar , grated
2 large eggs , beaten
small bunch of chives , snipped
2 tbsp mixed seeds (we used a mix of pumpkin, sunflower and sesame seeds)

Steps:

  • Melt the butter in a large pan, then add the oats, carrots, flaxseed, chia seeds and some seasoning. Leave to cool for about 10 mins. Heat the oven to 200C/180C fan/gas 6 and line a 20 x 20cm baking tin with baking parchment.
  • Stir the cheese, eggs and chives into the oat mix. Tip into the tin and scatter over the mixed seeds. Press down with the back of a spoon, making sure it fills the tin to the edges. Bake for 25-30 mins until golden. Leave to cool completely in the tin before cutting into bars.
