- Place ham in a greased 3-qt. slow cooker. In a large bowl, combine water, ketchup, brown sugar, Worcestershire sauce, vinegar and mustard; pour over ham and stir well. Cover and cook on low until heated through, 4-5 hours. Serve on buns.

- In a large saucepan, combine the first 8 ingredients; if desired, stir in liquid smoke. Bring to a boil over medium-high heat. PITTSBURGH HAM BARBECUES
I grew up on these delicious, sweet, and tangy barbecue sandwiches made from chipped deli ham. This dish is a staple in Western Pennsylvania, although each family seems to have its own way of making them! It's a terrific last-minute meal. Chipped chopped ham is a pressed ham loaf sold at deli counters in the Pittsburgh area which is always chipped. If you can get Islay's Chipped Ham, that is the original and still the best for these sandwiches. Otherwise, just get any deli ham and have it chipped or shaved paper thin. Enjoy!

- Preheat an oven to 275 degrees F (135 degrees C).
- Melt the butter in a large skillet over medium-high heat; cook and stir the onions in the butter until translucent, about 5 minutes. Stir the ketchup, vinegar, water, brown sugar, mustard, and Worcestershire sauce into the skillet with the onions; simmer about 10 minutes. - If making your own BBQ sauce, prepare that first. In medium to large sauce pan on medium heat, melt 1 TBSP unsalted butter. Sprinkle on 1 TBSP all purpose flour and cook, stirring constantly, for one minute. Add 1/2 cup water, 1/4 cup white vinegar, 1 cup ketchup, 3 TBSP brown sugar, and 1 TBSP Worcestershire sauce to flour mixture and stir constantly on medium heat until mixture thickens. It should still be somewhat thin, but thicker than water. At this point, you can take off heat and store in refrigerator until ready to use it, add in the ham (if making this dish in a pan vs a slow cooker), or add it to the slow cooker.
- If preparing chipped ham in a pan, add the ham to the BBQ sauce and stir to combine. Continue to heat until heated through.
- If preparing chipped ham in a slow cooker, combine the homemade BBQ sauce or the jarred BBQ sauce with the ham. Heat on LOW for about 1 1/2 hours, or HIGH for about an hour, stirring occasionally until heated through. (May heat quicker depending on whether the BBQ sauce is hot or not when combining).
- Serve on warm, on buns.
