Beef Logs image

Great alternative to those packaged store bought beef sticks. Plan ahead takes three days, but worth it.

Yield 4 logs

Number Of Ingredients 6

5 lbs ground beef
2 1/2 teaspoons garlic salt
2 1/2 teaspoons whole mustard seeds
2 1/2 teaspoons course ground pepper
2 1/2 teaspoons liquid smoke
4 tablespoons tender quick

Steps:

  • Mix all ingredients well and refrigerate for 72 hours.
  • Knead 5 minutes each day.
  • Day 3-Make into 4 logs place on cooling rack and place cooling rack on cookie sheet.
  • Bake@ 160 for 9 hours (yes, 9), turning after 4 hours.
  • When done, blot with paper towels.
  • Great served with cheese and crackers.

My mom used to make this recipe. It can also be made with 3/4 pound browned, drained hamburger. We called it SOS: Same Ole Stuff. Great comfort food! Either recipe is easy to make and tastes great with a cold beer. Serve over toast.

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups warm milk
1 (8 ounce) jar dried beef
1 pinch cayenne pepper

Steps:

  • In a medium saucepan over low heat, melt butter. Whisk in flour all at once to form a roux. Whisk in milk, a little at a time, increase heat to medium-high, and cook, stirring, until thickened. Bring to a boil, stir in beef and cayenne, heat through and serve over toast.

This delicious appetizer is near and dear to our family. It is a symbol of our family's Christmas and New Year's celebrations. My mom made this cheese ball for more than 30 years. -Molly Sumner, Creve Coeur, Missouri

5 packages (2 ounces each) thinly sliced dried beef
12 ounces cream cheese, softened
1/3 cup finely chopped sweet onion
4 drops Worcestershire sauce
Ritz crackers and Assorted fresh vegetables

Steps:

  • Place beef in a food processor; pulse until finely chopped. In a large bowl, beat cream cheese until smooth. Stir in 2/3 cup beef and the onion and Worcestershire sauce. Refrigerate, covered, at least 1 hour., Place remaining beef in a small shallow bowl. Shape cheese mixture into a ball; roll in beef to coat evenly. Wrap; refrigerate at least 1 hour. Serve with crackers and vegetables.

1 tablespoon milk
2 (2 1/2-ounce) packages chipped, dried beef

Steps:

  • In a medium mixing bowl, blend cream cheese, horseradish and milk together with an electric mixer until smooth. Spread a thin layer on beef slices roll into logs. Refrigerate before serving.
