This is a meal that my mother used to make a lot for us kids when we were growing up. You can find the dried beef in the grocery store with the pre-packaged lunch meats. It goes a long way on a cold day!

Steps:
- Melt butter in a medium saucepan. Blend in flour, salt and pepper. Stir in milk. cook over medium heat until mixture boils and thickens, stirring constantly. Reduce the heat.
- Tear beef into shreds and add to cream sauce. Heat through.
- Serve over toast.

- Place strips in a small bowl and cover with warm water.
- Soak the strips for 30 minutes, drain, discard the water.

- Chop your chipped beef roughly and set it aside. If you are sensitive to salt, rinse the beef.
- Melt butter in a small saucepan over medium heat. Whisk in the flour and cook the roux for a minute. Whisk in the milk gradually and season with ground nutmeg, ground onion powder, ground garlic powder, a few drops of Worcestershire sauce, and a squirt of mustard.
