CHIPOTLE SWEET POTATOES
Spicy, sweet and smoky, this side dish is perfect alongside grilled pork tenderloin. It's also a great change to your Thanksgiving dinner. Again, it's SPICY! This can be made ahead and stored in 200 degree oven until the rest of the meal is ready. For those of you who like less spicy, remove the seeds of the chipotle or cut down to one pepper and one tablespoon of adobo sauce. You can always add more later.

- 5. Transfer to a ceramic or enameled cast iron fondue pot. Drizzle remaining 1 1/2 Tbsp. crème fraiche on top and sprinkle with the cilantro. Regulate heat under pot, if possible so that fondue remains warm, not hot. Makes about 4 cups or 10 to 12 appetizer servings.
SWEET POTATOES WITH MAPLE AND CHIPOTLES
This is a Bobby Flay recipe ginned up specifically for Thanksgiving in response to a request from The Times back in 2003. Mr. Flay came through in spades: The sweetness of the potatoes is amplified by maple syrup, then taken in a completely different direction by the addition of fiery chipotle sauce. Sour cream knits the dish together perfectly.
