I found this recipe on Sargentocheese.com. My family loved this recipe and can't wait for me to make it again. It's very easy prep, bake, and clean up. Hope you enjoy it as much as my family did.

4 boneless skinless chicken breasts
1 3/4 cups shredded sargento chefstyle chipotle cheddar cheese, divided
1 (2 ounce) jar chopped pimiento, drained or 1/4 cup chopped drained bottled roasted red pepper
2 tablespoons chopped fresh cilantro or 2 tablespoons green onion tops
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic salt

Steps:

  • Using a sharp, thin knife, cut a parallel slit in the side of each chicken breast, forming a pocket, taking care not to cut through top or bottom of chicken. (Or, ask your meat retailer to do this for you at time of purchase.)
  • Combine 1 cup cheese, pimientos and cilantro; stuff into pockets of chicken. Place chicken on a foil-lined baking sheet. Combine chili powder, cumin and garlic salt; rub mixture over both sides of chicken. Coat chicken lightly with cooking spray or brush with canola oil.
  • Bake in a preheated 400°F oven 20 minutes or until chicken is cooked through. Sprinkle remaining cheese over chicken. Continue baking 2 to 3 minutes or until cheese has melted.

Woah, That's a Long Name...stuffed Chicken Breasts image

So, I was going to call this what it is: "Pomegranate-chipotle herbed cheese-stuffed chicken breasts." I thought that was pretty long, but I guess the name I gave it wasn't much shorter.... Oh well. I'm a fan of many of the Lisa Lillien (a.k.a. Hungry Girl) ideas and techniques, and I often try to mimic them, using products that she recommends, in my own recipes. This is one of those. I purchased the pomegranate-chipotle sauce (which won't enter correctly in the recipe...) from Tastefully Simple, but I have seen raspberry-chipotle marinade and cherry-chipotle jam and stuff in the supermarket, and I'm sure something like that would work fine as a substitute.

3 ounces Laughing Cow light swiss cheese, unwrapped (4 wedges)
1/2 teaspoon dried chives
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
3/4 teaspoon garlic, minced
2 (5 ounce) boneless skinless chicken breasts
6 tablespoons pomegranates, chipotle sauce (Tastefully simple sells it, or use a similar-type sauce or marinade)

Steps:

  • Preheat the oven to 400 degrees F.
  • In a small bowl, combine the 4 wedges of cheese, chives, oregano, parsley, basil, and garlic (I find that using the back of a fork is easiest).
  • If your cheese wedges are straight from the refrigerator, it helps to microwave them for 10 seconds or so, to soften them up, for easier mixing.
  • Set the small bowl aside.
  • Place a chicken breast between two sheets of plastic wrap on a clean, dry surface.
  • Using a meat mallet, pound the chicken to about 1/4-inch thick. Repeat with the other chicken breast.
  • Line a baking sheet with aluminum foil, and spray it lightly with cooking spray.
  • Spread half of the cheese mixture on each chicken breast, and roll them up like a crescent roll.
  • Secure with two toothpicks, if necessary.
  • Bake at 400 degrees F for 20-25 minutes or until chicken is cooked in the center.
  • Take chicken out of the oven once it is done, remove toothpicks (if you used them), and pour 3 Tablespoons sauce or marinade over each chicken "roll" to serve.

I love this recipe because it's very simple to prepare and cook and is a hit at the dinner table. From my experience the best kind of bacon is to use the "center cut" type, it's more meat than fat and very tasty.

5 -6 boneless skinless chicken breasts
2 lbs of center cut bacon
1 (15 ounce) can chipotle chiles in adobo
1 cup sour cream
1/2 cup milk
2 chicken bouillon cubes

Steps:

  • Pre-heat oven to 350°F.
  • Wrap chicken breast in a slice or two of bacon depending on size of breast vs. size of bacon.
  • Place wrapped chicken breast onto a non-stick oven safe baking sheet/dish.
  • Cook until completely done, usually takes about an hour, hour and a half.
  • When chicken breast lack about 20 mins from being done, you can start preparing the chipotle sauce.
  • Combine chipotle peppers in adobo sauce, (you may only want to use a couple of them as these little guys can be quite potent, add to taste), with sour cream and milk, blend in the blender until there are little to no chunks left of the peppers.
  • Once you have this blended together add to a small sauce pan and simmer on low to medium heat and add the 2 cube of chicken bullion for flavor.
  • Add salt and pepper as desired.
  • To Serve: Place chicken on plate and pour chipotle sauce on top. Also works greats as an appetizer at parties, cut chicken into small bite size pieces and serve sauce in a bowl.
