Provided by Lindsay D. Mattison

Categories     side dish

Time 25m

Number Of Ingredients 8

1 cups long-grain white rice, rinsed
2 cups water
1 bay leaf
1 tablespoon rice bran oil (or olive oil)
3/4 teaspoon kosher salt
2 tablespoons finely chopped cilantro
1 tsp fresh lime juice
1 tsp fresh lemon juice

Steps:

  • Place the rice in a fine mesh strainer and rinse it with cold water for a minute or two, until the water runs clear. Drain the rice well.

  • If you're using the stovetop, place the rinsed rice, water, and bay leaf in a medium-sized saucepan. Bring the mixture to a boil before reducing it to a simmer. Cover the rice and cook, covered, for 12 to 15 minutes, until the rice has absorbed all the water.
  • When the rice is finished cooking, add the remaining 2 teaspoons of rice bran oil to the pot without stirring. Replace the cover and let the rice rest for 10 minutes.
  • Add the salt, cilantro, lime juice, and lemon juice and stir the rice using a fork. Add additional salt, if desired.

CHIPOTLE COPYCAT LIME RICE RECIPE

Chipotle Copycat Lime Rice Recipe image

This is a copycat recipe I found for this amazing rice, it works perfectly with a nice savory pulled pork that I use for making burritos. But it really is good enough to have on it's own. *edit* I will have to revisit this recipe soon and come up with more precise measurements and possibly using more generic rice.

CHIPOTLE CHICKEN AND RICE

Chipotle Chicken and Rice image

The chipotle chiles in this stovetop casserole lend an earthy, subtle heat to the dish. This make-ahead meal is perfect for dinner on a cool fall night.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Thighs

Time 1h15m

Number Of Ingredients 11

2 tablespoons vegetable oil
8 boneless, skinless chicken thighs (about 2 pounds total)
Coarse salt and ground pepper
1 medium red onion, thinly sliced lengthwise
3 garlic cloves, coarsely chopped
1/2 teaspoon ground cumin
2 canned chipotle chiles in adobo, minced
2 large tomatoes, diced large
1 cup long-grain white rice
Lime wedges, for serving
Chopped cilantro leaves, for serving (optional)

Steps:

  • In a large Dutch oven or heavy pot, heat oil over medium-high. Season chicken on both sides with 1 teaspoon salt and 1/8 teaspoon pepper. Working in batches, brown chicken on both sides, about 6 minutes total; transfer to a plate.
  • Reduce heat to medium. Add onion and saute until soft, about 5 minutes, scraping up any browned bits from bottom of pot (if necessary, add a bit of water to release browned bits).
  • Add garlic, cumin, and chiles; cook until garlic is soft and fragrant, 2 minutes. Add tomatoes and 1 teaspoon salt and cook until tomatoes begin to break down and release their juices, 3 minutes. Stir in 1 cup water and return chicken and any accumulated juices to pot. Cover, reduce to a simmer, and cook 25 minutes.
  • Remove several pieces of chicken and stir in rice, making sure it is completely submerged in liquid. Replace chicken, cover, and cook until rice is tender and liquid has been absorbed, 25 to 30 minutes more. Serve with lime wedges and cilantro if desired.

MEXICAN FRIED RICE WITH CHIPOTLE AND TURMERIC

Mexican Fried Rice with Chipotle and Turmeric image

Mexican Fried Rice with a subtle sweet and smoky flavor of chipotle and the beautiful color of turmeric, gives the ultimate quick and easy lunch or side dish!

Provided by Stine Mari | Ginger with Spice

Categories     Lunch

Time 15m

Number Of Ingredients 12

2 eggs
1 carrot, cut into matchsticks
1 small yellow onion, finely chopped
1/4 cup red bell pepper, 50g. semi finely chopped
1/2 cup frozen peas, 75g
2 cups leftover cold cooked rice, 500ml
1 tablespoon turmeric
1 tablespoon chipotle paste
1 teaspoon cumin
2 teaspoon garlic powder, divided
2 tablespoon soy sauce
salt and pepper, to taste, I used 1/4 teaspoon pepper and 1/2 teaspoon salt

Steps:

  • Mix eggs with 1/2 teaspoon garlic powder, salt and pepper. In a skillet on medium high heat, pour the eggs into the pan with a little oil. Make scrambled eggs by folding the eggs with a spatula, and set aside.
  • In the same pan fry carrot matchsticks, onion and bell pepper with chipotle paste and the rest of the spices. Fry for a couple of minutes, until vegetables reach your desired softness. I like to cook them for about 5 minutes. Add in rice and frozen peas*. Give it a good mix and then add in eggs. Pour over soy sauce. Taste and adjust seasoning with salt and pepper.
  • I like to serve this with avocado and a dollop of sour cream. Adding some crunchy tortilla chips and shredded Mexican cheese are also high on my list!

CHIPOTLE CILANTRO LIME RICE (COPYCAT)

Chipotle Cilantro Lime Rice (Copycat) image

Learn the secrets to making Chipotle Cilantro Lime Rice in the comfort of your own kitchen. This copycat recipe starts with getting the right type of rice and cooking it in a non-traditional way. This rice is soft and fluffy with just the right amount of chew and no stickiness.

Provided by Meggan Hill

Categories     Side Dish

Time 25m

Number Of Ingredients 7

2 cups basmati rice (unrinsed, or any long-grain white rice, rinsed (see notes))
1 bay leaf
Salt
teaspoon olive oil (or rice bran oil, optional)
2 tablespoons fresh cilantro (minced (or omit or sub parsley))
2 tablespoons fresh lime juice (from 1-2 limes)
2 tablespoons fresh lemon juice (from 1-2 lemons)

Steps:

  • Bring 8 cups water to a boil in a large pot. Add rice, bay leaf, and salt to taste (I like 2 teaspoons). Stir and return to a boil. Boil uncovered for 10 to 12 minutes (for me it's always 12, but some readers have reported mushy rice after 12 minutes, so keep an eye on yours).
  • Remove bay leaf. Using a fine mesh strainer, drain rice and rinse with hot water. Pour into a large bowl.
  • Stir in cilantro, lime juice, and lemon juice. Season to taste with salt (I like an additional 1/4 teaspoon). Serve hot or at room temperature.
  • Bring 4 cups water to a boil in a large pot. Add rice, bay leaf, oil if using, and salt to taste (I like 2 teaspoons). Stir and return to a boil. Reduce heat to low, cover, and cook for 15 minutes.
  • Remove bay leaf. Stir in cilantro, lime juice, and lemon juice. Season to taste with salt (I like an additional 1/4 teaspoon). Serve hot or at room temperature.
  • Add rinsed rice (see notes), water (according to manufacturer's instructions, see notes), bay leaf, salt (I like 1 teaspoon), and oil if using. Close rice cooker, plug in, and turn on. Cook according to manufacturer's instructions.
  • When the rice is finished, remove bay leaf. Stir in cilantro, lime juice, and lemon juice. Add more salt to taste (I like 1/4 teaspoon). Serve hot or at room temperature.
  • Follow the instructions above using the following times: 40 minutes for Basmati on the stove top, 45 minutes for long-grain on the stove top, and 60 - 70 minutes for a rice cooker (or according to manufacturer's instructions). 2 cups brown rice makes 16 servings, 1/2 cup each (higher yield than white rice).
