CREAMY COLE SLAW

Number Of Ingredients 10

1 head green cabbage, finely shredded
2 large carrots, finely shredded
3/4 cup best-quality mayonnaise
2 tablespoons sour cream
2 tablespoons grated Spanish onion
2 tablespoons sugar, or to taste
2 tablespoons white vinegar
1 tablespoon dry mustard
2 teaspoons celery salt
Salt and freshly ground pepper

Steps:

  • Combine the shredded cabbage and carrots in a large bowl. Whisk together the mayonnaise, sour cream, onion, sugar, vinegar, mustard, celery salt, salt, and pepper in a medium bowl, and then add to the cabbage mixture. Mix well to combine and taste for seasoning; add more salt, pepper, or sugar if desired.

1/3 cup fresh lime juice
1/2 teaspoon ground cumin
2 cloves garlic, chopped
Few dashes Bobby Flay's Hot Sauce, or your favorite
1/2 cup olive oil
3 carrots, peeled and shredded
1 medium head green cabbage, shredded
1 red bell pepper, julienned
1 red onion, thinly sliced
1/2 cup chopped fresh cilantro
Salt and pepper

Steps:

  • For the dressing: Place all ingredients in a blender and blend until smooth.
  • For the slaw: Combine all ingredients in a large bowl, toss with the dressing and season with salt and pepper, to taste.

1/4 cup champagne wine vinegar
1/4 cup fresh lime juice
2 tablespoons Dijon mustard
1 1/3 tablespoons chipotle pepper in adobo, pureed
4 garlic cloves, chopped
1 1/2 cups olive oil
1/2 head green cabbage, shredded
1/2 head red cabbage, shredded
1/2 red pepper, julienned
1 large carrot, julienned
1/4 red onion, sliced
1 jalapeno, julienned
1/4 fennel bulb, julienned (optional)
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons sugar
Four 6-ounce salmon fillets
Olive oil, as needed
Salt and pepper
1/2 cup barbecue sauce (any kind)

Steps:

  • To make chipotle vinaigrette, add first 5 ingredients into a food processor and puree until smooth. With the processor running, add the olive oil in a steady stream to emulsify the vinaigrette. Add salt and taste to adjust seasoning.
  • Toss all of the vegetables together. Add the salt, pepper, sugar and chipotle vinaigrette. Toss to combine.
  • Let cole slaw sit refrigerated overnight.
  • Preheat oven to 400 degrees F.
  • For the salmon: Season salmon with oil, salt and pepper. Brush with the barbecue sauce.
  • Place salmon on an oiled baking sheet. Bake for 8 to 10 minutes. Remove from oven and brush once more with barbecue sauce. Serve with chipotle cole slaw.

CLASSIC BURGERS WITH CHEESE, CHIPOTLE KETCHUP, HORSERADISH MUSTARD AND RUSSIAN DRESSING SLAW



Classic Burgers with Cheese, Chipotle Ketchup, Horseradish Mustard and Russian Dressing Slaw image

1/4 cup ketchup
1/4 cup mayonnaise
1 tablespoon red wine vinegar
1 teaspoon celery seeds
1 teaspoon hot smoked paprika
Kosher salt and freshly ground black pepper
1/2 head green cabbage, finely shredded
1 medium carrot, peeled and shredded
6 green onions, green and pale green parts only, thinly sliced
3 tablespoons grated Spanish onion
1 cup ketchup
2 tablespoons pureed chipotles in adobo
1 cup Dijon mustard
1/4 cup prepared horseradish, drained
1 1/2 pounds ground chuck (80 percent lean) or ground turkey (mix of white and dark meat)
Canola oil, for brushing
Kosher salt and freshly ground black pepper
8 slices American, cheddar, Monterey Jack, pepper Jack or Swiss
4 hamburger buns
8 ounces potato chips, optional

Steps:

  • For the slaw: Whisk together the ketchup, mayonnaise, vinegar, celery seeds, paprika and some salt and pepper.
  • Put the cabbage, carrot, green onions and Spanish onions in a large bowl; season with salt and pepper, toss to combine. Pour the dressing over the vegetables and toss again. Cover and refrigerate for at least 30 minutes and up to 8 hours.
  • For the ketchup: Whisk together the ketchup and chipotles in a small bowl.
  • For the mustard: In another small bowl, whisk together the mustard and horseradish.
  • For the burgers: Heat a gas or charcoal grill to high. Form the ground beef into four 3/4-inch-thick patties by tossing the meat from hand to hand and flattening gently. Make a well in the center of each patty with your thumb. Brush the patties with oil and season generously with salt and pepper.
  • Grill the burgers until slightly charred and crusty, about 3 minutes (5 minutes for turkey, which must be cooked through to serve). Flip and continue grilling until slightly charred and crusty on the other side, 4 to 5 minutes longer for medium doneness (another 5 minutes for turkey). During the last minute of cooking, top each burger with two slices of cheese; cover the grill and cook until the cheese has melted.
  • Transfer the burgers to a platter. If desired, toast the buns on the grill, flat-side down, for about 15 seconds, or until golden. Place the burgers on the bun bottoms. Top with some chipotle ketchup, horseradish mustard, Russian slaw dressing and a few potato chips, if using. Set the bun tops on top and serve immediately.

Adapted from one of Emeril's recipes, where he did an episode with "crazy tacos". We like to make this and serve it in the fish tacos. I don't use Emeril's fish taco recipe, though. Instead I serve with Recipe #232309. I've change the propotions a bit and added some extras like cilantro and carrots. I really like the onions. Update 6/6/07: I made this tonight and measured everything as I made it, so I've updated the amounts (usually I don't measure, but just eyeball it).

2 teaspoons chipotle chiles in adobo, finely chopped (use more if you like it really spicy)
1/2 cup mayonnaise (add more if you like it saucier. 1/2 cup makes just enough to lightly coat)
2 tablespoons honey
1/4 cup lime juice
4 cups green cabbage, shredded very thin
4 cups red cabbage, shredded very thin
1 cup red onion, sliced vertical very thin
1 cup green onion, finely chopped
1/2-1 cup carrot, shredded
1/4 cup fresh cilantro, chopped

Steps:

  • Make the dressing first. Combine the chipotle peppers, mayonnaise, honey and lime juice.
  • In another large bowl, combine the cabbages, onions and carrots. Drizzle the dressing over the top, sprinkle cilantro over the whole thing, and toss well to combine.
  • Season with salt and pepper as desired and chill until serving time.
