This is my adaptation of a Cuban-style marinade recipe for pork - I use it for chicken and think you'll agree that the results are moist, tender, and delicious.

¼ cup orange juice
¼ cup lime juice
2 tablespoons olive oil
¼ cup chopped fresh cilantro
½ teaspoon garlic powder
¼ teaspoon ground chipotle powder
salt and freshly ground pepper
2 skinless, boneless chicken breast halves

Steps:

  • Whisk together the orange juice, lime juice, olive oil, cilantro, garlic powder, chipotle powder, and salt and pepper in a bowl. Pour marinade into a resealable plastic bag; add the chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 4 hours.
  • Preheat an outdoor grill for high heat.
  • Lightly oil the grill grate, and then arrange chicken on grill. Cook the chicken breasts until no longer pink in the center and the juices run clear, about 8 minutes per side.

This easy Chipotle Chicken Marinade combines some of my favorite Mexican flavors, chipotles in adobo sauce and fresh lime! Add some staple spices and you have a delightful flavor combined and ready to really take a simple piece of chicken to fiesta-worthy heights!

2 Tbsp adobo sauce ((with chopped chipotle peppers))
2 Tbsp olive oil ((extra virgin))
1 Tbsp lime juice
1/2 tsp cumin
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp each, salt & pepper

Steps:

  • Combine adobo sauce, olive oil, lime juice, cumin, onion powder, garlic powder, salt, and pepper in a small mixing bowl. Stir together.
  • Pour marinade in a Ziplock bag.
  • Add the chicken and press out any air in the bag and seal.
  • Massage the marinade into the chicken through the bag.
  • Refrigerate for at least 4 hours before use. A 24-hour marinade will yield the best results for marinade flavor.

  • Add chipotle peppers, olive oil, honey, garlic, cumin, salt, pepper, lime juice, and cilantro into a blender (or food processor) and blend.
  • After you blend the ingredients, the marinade will be thick, so add 2-3 tablespoons of water until it’s a consistency where you can pour it into a bag or container. It’s not supposed to be thin, so just enough water to help it along out of the blender or food processor.
  • Take the chicken and, using a meat mallet, pound them to ½ inch thickness. This helps the chicken to cook faster and more even. Then place the chicken into a Ziploc bag or glass meal prep containers and pour the chipotle marinade over the top. Let the chicken marinate for at least an hour, 2-3 if possible, and overnight is preferred. This marinade will cover about 4 chicken breasts, possibly five, depending on the size. If you have any leftover marinade, store the rest in a small Ziploc bag or mason jar in the refrigerator or freezer.
  • Cook on a hot clean grill over medium high heat for 5-7 minutes on each side or until the internal temperature reaches 165º.

Baste again, cover and cook on low for 10 minutes (and discard any remaining marinade). Transfer to plate, cover loosely with foil to keep warm until serving.
  • Slice to top salads or in tacos or keep whole and serve with a side dish or in a sandwich. Spoon reserved marinade over at time of serving.
