CHIPOTLE CHILI RECIPE

Chipotle Chili Recipe image

This chunky chipotle chili recipe is made with a mix of peppers, chili seasoning, and lots of chipotles in adobo sauce for the best rich and smoky flavor.

Provided by Mike Hultquist

Categories     Main Course

Number Of Ingredients 14

1 tablespoon olive oil
1.5 pound ground turkey or ground beef (I'm using a combination of both)
1 large onion chopped
1 jalapeno pepper (chopped)
1 poblano pepper (chopped)
1 hot chili pepper (chopped (for a spicier version - try a habanero or ghost pepper - optional for a nice and extra spicy chili))
4 cloves garlic chopped
2 cans red kidney beans
3 cans fire roasted tomatoes (42 ounces, or use equivalent fresh)
2 tablespoons chili powder
1 7- ounce can chipotles in adobo sauce (use half the can for a milder chipotle flavor)
1 teaspoon freshly ground cumin
1 teaspoon red chili flakes
Salt and pepper to taste

Steps:

  • Heat the oil in a large pot to medium-high heat and add the ground turkey (or beef), onion and peppers. Cook them down about 10 minutes, or until the meat is cooked through and the vegetables are softened.
  • Add the garlic and cook another minute, stirring.
  • If using fresh tomatoes, chop them and add them to the pot. Cook about 10 minutes to let them break down. If using canned fire roasted tomatoes, just add them to the pot and go to the next step.
  • Add the remaining ingredients and give it all a good stir.
  • Reduce the heat and cook the chili on low heat for at least 1 hour to let the flavors develop, stirring every now and then. Adjust for seasonings if you wish. Alternatively, you can transfer everything to a slow cooker or crock pot at this stage and cook on high for 1-2 hours, or on low for 3-4 hours, until the flavors develop to your preference.
  • Serve in bowls with your favorite fixin's.

A delicious one-pot of spicy braised beef is a great, stress-free way to fill up a hungry crowd

Provided by Good Food team

Categories     Dinner, Main course

Time 2h30m

Number Of Ingredients 13

up to 6 tbsp sunflower oil
4kg stewing beef
4 white onions, sliced
4 tbsp chipotle paste
8 garlic cloves, crushed
50g ginger, grated
1 tbsp ground cumin
2 tsp ground cinnamon
1 tbsp plain flour
2l beef stock
3 x 400g cans chopped tomatoes
1 tbsp dried oregano
5 x 400g cans pinto or kidney beans, drained

Steps:

  • Heat a small drizzle of the oil in an extra-large flameproof dish. Brown the meat in batches, adding a drop more oil, remove from the dish and set aside. Add 1 tbsp oil to the dish, then the onions, and cook for 7-10 mins or until caramelised.
  • Stir the chipotle paste, garlic, ginger, cumin, cinnamon and flour in with the onions and cook for a couple of mins. Gradually add the stock, stirring all the time, so it's fully mixed in with the other ingredients. Add the tomatoes and oregano, season and simmer for 10 mins.
  • Now tip in the beef, cover and simmer very gently for about 1 hr 45 mins until tender, removing the lid and adding the beans for the final 15 mins. If the sauce is thin, let it boil down for a further 5-10 mins with the lid off. Before serving, adjust the seasoning. Serve with the garlic bread and salsa.

CHIPOTLE CHILI CON CARNE

Chipotle Chili con Carne image

Chipotle Chili con Carne is a satisfying, stick-to-your-ribs chili featuring less beans, more beef, and a bit of bacon to top it all off.

Provided by Kelly Senyei

Time 4h15m

Number Of Ingredients 12

8 slices bacon, chopped
4 lbs boneless beef chuck, cut into 1 1/2-inch chunks
2 1/2 cups diced onions
2 red bell peppers, diced
8 garlic cloves, minced
2 Tablespoons unsweetened cocoa powder
2 1/2 teaspoons ground cumin
1 bay leaf
2 (28-oz.) cans diced tomatoes in liquid
2 Tablespoons chopped canned chipotle chiles in adobo
2 (15-oz.) cans kidney beans, rinsed and drained
Assorted toppings, such as shredded cheddar cheese, sour cream and scallions

Steps:

  • Cook the bacon in a large, heavy pot (such as a Dutch oven) over medium heat until browned. Transfer the bacon with a slotted spoon to a paper towel-lined plate and reserve all of the bacon drippings in the pot.
  • Season the beef chunks with salt and pepper. Increase the heat to medium-high and sauté the beef chunks, in 4 to 5 batches (so the pieces aren't overcrowded), in the bacon drippings for 5 minutes per batch until they're browned. Transfer the beef to a plate.
  • Pour off all but 3 tablespoons of fat from the pot (add vegetable oil if you don't have enough fat left), reduce the heat to medium, and then add the onions, peppers and garlic. Sauté the vegetables, stirring occasionally, until they begin to brown, 8 to 10 minutes.
  • Stir in the cocoa powder and cumin and sauté for 1 minute. Return the beef, along with any juices, to the pot. Stir in the bay leaf, diced tomatoes (with liquid) and chipotles in adobo. Bring the mixture to a simmer and cover the pot.
  • Simmer the mixture (covered), stirring occasionally, until the beef is very tender, about 3 hours.
  • Uncover the pot and increase the heat to a boil. Boil the chili, stirring frequently, for 10 minutes until it thickens slightly.
  • Stir in the kidney beans and season with salt and pepper. Simmer the chili for 5 minutes and then stir in the reserved bacon. Serve the chili with assorted toppings.

GROUND BEEF CHILI WITH CHIPOTLE

Ground Beef Chili with Chipotle image

A simple but flavorful ground beef chili recipe with slight heat from chipotle peppers and rich beefy flavor.

Provided by Mary Cressler | Vindulge

Categories     Entree

Number Of Ingredients 19

1/2 tablespoon extra virgin olive oil
3 slices thick-cut bacon, diced
1 pound ground beef
1 teaspoon kosher salt
1 teaspoon coarse black pepper
1 cup diced red onion (1/2 a medium red onion)
1 cup diced yellow pepper (1 large yellow pepper)
2 tablespoons diced jalapeños, ribs and seeds removed (1 large jalapeño)
1 15 ounce can diced tomatoes
1 15 ounce can tomato sauce
1 15 ounce can kidney beans, drained and rinsed
1 4 ounce can diced green chilis
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
1 whole diced chipotle in adobo sauce
1 tablespoon adobo sauce from chipotles
1 1/2 tablespoons chili powder
1/2 tablespoon paprika
salt and pepper to taste (to finish)

Steps:

  • Preheat a 3 quart dutch oven or large sauce pan over medium heat. Add olive oil and allow to heat up and slightly smoke.
  • Add bacon and stir frequently over medium heat until the bacon starts to get crispy, about 6 - 8 minutes.
  • After bacon is slightly crispy, add the ground beef, salt and pepper and stir over medium heat. It will sizzle at first and as you stir it will temper the heat. Continue cooking the beef, stirring in the bacon fat an additional 6 - 8 minutes or until browned. If the heat isn't high enough it won't brown. After it is browned, place the lid on the dutch oven and drain the excess liquid from the pot.
  • Slightly reduce the heat and add onions, yellow and jalapeño peppers. Stir for 5 - 7 minutes or until they soften.
  • Add the remaining ingredients, stir to incorporate, and let come to a simmer. Cover and simmer for an additional 30 minutes, stir occasionally. The chili will thicken as it simmers.
  • Add salt and pepper to taste, and add your favorite toppings.

  • Preheat a large frying pan over medium-high heat and add a drizzle of cooking oil. Once the pan is hot, begin frying the ground beef in batches; I recommend splitting the 2 pounds into three portions. Brown each batch for 5 to 7 minutes, breaking up the ground beef with a flat spatula until only small pieces remain. Season the ground beef with salt. Once browned, transfer the beef into a large braising pot.
  • Next, into the same frying pan, add the onion and bell pepper; add more oil if needed. Saute this mixture for 4 to 5 minutes, until the onions are tender. Next, add in the garlic and cook for 30 more seconds. Add the spices next: smoked paprika, ground cumin, ground coriander, and chipotle chili powder. Toss the spices with the onion mixture and cook for 1 minute.
  • Deglaze the pan with the wine (or broth), cooking until the wine is almost completely evaporated, about 1 minute. Add this mixture to the ground beef.
  • Add the remaining chili ingredients into the braising pot: beef broth, tomato paste, diced tomatoes, drained kidney beans, chipotle peppers, salt, sugar and ground black pepper. Stir to combine all the ingredients together.
