GRILLED MINI TURKEY MEATLOAVES
These mini meatloaves are prepared using lean meat that is turkey. Ground turkey seasoned with Southwestern flavors, made into mini sized meatloaves and grilled to perfection.

Steps:
- In a medium mixing bowl add all ingredients listed under turkey meatloaves and mix well
- Divide the mixture into 16-18 equal parts. Shape each part into small 3/4" thick meatloaf.
- Heat the grill or grill pan. Lightly brush the grill with oil.
- Cook the prepared mini meatloaves on preheated grill for 4-5 min on medium heat. Flip the meatloaves and cook further for additional 4-5 min or until well done
- To prepare avocado yogurt sauce, add avocado, greek yogurt, garlic, parsley, and salt in a blender or food processor and blend until it gets to a smooth consistency.
- Serve these mini meatloaves with the avocado yogurt sauce

- 1. Preheat oven to 400 degrees F. Spray 12 regular muffin cups with cooking spray.
- 2. Mix turkey, Egg Beaters, bread crumbs, drained tomatoes plus 1/4 cup reserved liquid and taco seasoning in medium bowl. Form into 12 balls (1/4 cup each) and place in muffin cups. Top each with 1 teaspoon cheese.
- 3. Bake 18 to 20 minutes or until browned and cooked through (170 degrees F).

We swap out the usual ketchup glaze for BBQ sauce that's laced with smoky chipotle powder and tangy orange juice. - • Adjust rack to top position (top and middle positions for 4 servings) and preheat oven to 425 degrees. Wash and dry all produce. • Cut potatoes into ½-inch-thick wedges. Trim green beans if necessary. Trim and thinly slice scallions, separating whites from greens; mince whites. Halve orange.
- • Toss potatoes on one side of a lightly oiled baking sheet with a large drizzle of oil, salt, and pepper. (For 4 servings, spread potatoes out across entire sheet.) • Roast on top rack for 10 minutes (you'll add more to the sheet then).
- • Meanwhile, in a large bowl, combine panko with 2 tsp water (4 tsp for 4 servings) until water has absorbed. Add turkey*, BBQ Seasoning, scallion whites, ¾ tsp salt (1½ tsp for 4), and a pinch of pepper. • Form into two 1-inch-tall loaves (four loaves for 4). TIP: Wet your hands (or drizzle with oil) first to prevent sticking. • In a small bowl, combine BBQ sauce, a big squeeze of orange juice, and chipotle powder to taste. Taste and season with salt; add more orange juice and chipotle powder if desired.
- • Once potatoes have roasted 10 minutes, remove sheet from oven. Carefully add green beans to empty side; using tongs, toss with a drizzle of oil, salt, and pepper. (For 4 servings, leave potatoes roasting; add meatloaves and green beans to a second, lightly oiled sheet. Roast on middle rack.) • Place meatloaves on same side of sheet as green beans. • Roast on top rack for 15 minutes (you'll glaze the meatloaves then).
- • Once meatloaves and green beans have roasted 15 minutes, remove sheet from oven. • Push potatoes together so they're overlapping; sprinkle with Monterey Jack. • Brush tops of meatloaves with 1 TBSP glaze each (save the rest for serving). • Return to oven until meatloaves are cooked through, glaze is tacky, cheese has melted, and beans are tender, 2-3 minutes more.
- • Divide meatloaves, potatoes, and green beans between plates. Drizzle meatloaves with any remaining glaze from bowl. Garnish with scallion greens and serve.

- Preheat the oven to 375 degrees F. Brush a muffin pan (with 6 jumbo or 12 medium cups) with EVOO.
- For the BBQ sauce: Combine the ketchup, chipotle puree, maple syrup, brown sugar, vinegar, Worcestershire sauce, garlic and pepper to taste in a small pot. Heat until the mixture starts to bubble, then reduce the heat to low and simmer until thickened, about 20 minutes, stirring occasionally.
- For the meatloaves: Pulse the stuffing cubes in a food processor until crumbs form. Transfer to a bowl and moisten with chicken stock.
- Combine the turkey, poultry seasoning, cumin and some salt and pepper in a large bowl. Add the moistened breadcrumbs, bell pepper, cilantro, scallions, eggs and cheese and mix gently to combine. Fill the muffin cups with the meatloaf mixture, mounding it a bit in the centers. Top with BBQ sauce. Place the pan on a baking sheet and bake for 40 minutes.
- For the mashed sweet potatoes: While the meatloaves are cooking, peel and cube the sweet potatoes. Place in a pot and cover with water. Bring to a boil and cook until tender, then drain. Mash with the chicken stock, thyme, orange juice and salt and pepper to taste.
- Serve the meatloaves with the mashed sweet potatoes.
