2 slices of white/whole wheat bread
Hot chips
Ketchup
Butter

Steps:

Butter your bread. Make sure you have a good layer of butter on each slice of bread - chip butties are well known for being sopping with butter! Only real butter will do; no cheating with margarine!
Add the chips. Place a heaping layer of hot chips on your bread. Chips (called french fries in the USA) are what give the chip butty its name. The chips should make up the main portion of the sandwich.
Add optional toppings. A chip butty should be enjoyed with a few dollops of ketchup or HP sauce; however, you can add an extra surge of flavour by adding cheese, sliced meats, tomato, or your favourite sauces. Salt & pepper would not be out of place on a chip butty, either.
Finished.

Once the fries are finished, sprinkle them with salt and the malt vinegar, and toss. Place about 3/4 C of the fries on each of 4 slices of the bread. Top each with about 2 Tbsp. of the shredded cheese, and some ketchup (if desired). Pop back in the oven for a couple minutes to melt the cheese. Top with the remaining slices of bread and enjoy!

Peel potatoes and straighten/square the edges with a knife (see video for reference). This will make the potato easier to slice and result in straight cut chips. Slice potato into 6-8 thick wedges (bear in mind they will shrink slightly in the oven).
Add to a pot of cold water with 2 tsp salt. Bring to a boil for around 5-8mins, or until parboiled. The edges should begin to fluff and you should only JUST be able to slice through the potato.
Drain (don't rinse) in a colander and shake about to rough the edges. Allow to steam dry for 10-15mins, preferably until they stop steaming.
Meanwhile pour enough oil to cover the base of a baking tray. I use 1/3cup/80ml in a 12"x15" tray for reference. Pop in the oven at 205C/400F until piping hot.
