Steps:
- In large saucepan, heat oil over medium heat; cook mushrooms and garlic for 2 minutes.
- Add stock and 2 cups water; bring to boil.
- Add noodles, sherry, lemon juice or rice vinegar, sesame oil and hot pepper sauce; reduce heat, cover and simmer for 3 minhtes.
- Stir in scallions.

Steps:
- Soak the mushrooms in 2-3 cups of hot water for 20-30 minutes (until plump), then remove the mushrooms from the water with a slotted spoon and reserve 1 cup of the liquid.
- Slice the fresh mushrooms and set aside.
- In a large saucepan, heat the chicken stock and bring to a boil.
- Add the green onions, soy sauces, oyster sauce, mushrooms, mushroom liquid, and the noodles. Return to a boil.
- Reduce the heat and cook according to noodle package instructions (just until tender).
- Serve hot.

- Heat the oil in a large saucepan and saute the onion and garlic until the onion is tender.
- Add the chicken and cook about 5 minutes.
- Stir in the mushrooms and cook for another minute.
- Add the stock and seasoning and bring to the boil.
- Reduce heat and simmer for 10 minutes.
- Stir in the noodles and simmer another 5 minutes until they are tender.
- Stir the green onions through the soup.

- Heat sesame oil in large pot. Add ginger, green onion, and cook until fragrant. Add bok choy and cook for 1 to 2 more minutes.
- In a separate pot, boil 6 cups of water and add bouillon cubes. Cook until cubes are fully dissolved. If desired, add soy sauce to taste. (Careful on the amount used. It could make dish very salty!).
- Pour broth into the larger pot with other vegetables and add rice noodles (amount of noodles used is contingent on the amount of noodles you like in your soup.) Simmer for 10 minutes.
- Add red pepper flakes for spice. Garnish with chopped green onions.

Steps:
- Place bean threads in a bowl; pour enough boiling water over bean threads to cover.
- Let stand for 10 minues; drain.
- Use scissors to cut bean threads into 2 inch lengths; set aside.
- Meanwhile, in a large saucepan coook the garlic and ginger in 1 tablespoon hot cooking oil over medium heat for 15 seconds.
- Add the broccoli.
- Cover and cook for 3 to 4 minutes or until crisp-tender, stirring once or twice.
- Remove mixture from saucepan; set aside.
- Add remaining cooking oil to saucepan.
- Add the pork; cook and stir for 2 to 3 minutes or until brown.
- Carefully add chicken broth, red pepper, and sesame oil.
- Bring to boiling; reduce heat.
- Stir in bean threads and vegetable mixture; heat through.
