FIVE SPICE DUCK SALAD

Five spice duck salad image

This beautiful duck salad has got it all going on - crunch, spice, juicy fruit and tasty crispy duck

Provided by Jamie Oliver

Categories     Healthy meals     Dinner for two     Light meals     Mains

Time 20m

Yield 2

Number Of Ingredients 10

1 large duck breast
1 teaspoon Chinese five spice powder
1 pomegranate, halved
3 spring onions, trimmed and sliced
1 sprig fresh coriander, leaves picked
a few sprigs watercress
½ ripe mango, peeled and cut into chunks
½ lime, juice of
sesame oil, to drizzle
1 little gem lettuce

Steps:

  • This exotic duck salad has got it all going on - crunch, spice, juicy fruit and tasty crispy duck.
  • Season the duck breast and dust with Chinese five spice powder. Put in a medium-hot frying pan and fry very gently for 5 minutes, turning halfway, until lots of fat has come out of the skin and the skin is golden brown. Take out of the pan and slice thinly - the duck will still be raw in the middle but don't worry! Discard the fat from the pan and put the sliced duck back in. Stir fry for a few minutes, until cooked through and crispy. Set aside.
  • Mix the pomegranate seeds, spring onions, coriander, watercress, mango and crispy duck together. Dress with the lime juice and a drizzle of sesame oil. Season to taste.
  • Separate the lettuce leaves and arrange on plates. Top with the dressed salad to serve.

CHINESE ROAST DUCK

Chinese roast duck image

John Torode's whole crispy duck with maltose marinade makes for an impressive centrepiece. The cavity is stuffed with star anise, spring onion and ginger.

Provided by John Torode

Categories     Dinner, Main course

Time 1h50m

Yield Serves 4 with leftovers

Number Of Ingredients 14

2 ducks
140g caster sugar
6 star anise seeds
large piece ginger, sliced
small bunch spring onions, roughly chopped
2 tbsp malt syrup or maltose (available in most Chinese supermarkets)
3 tbsp red wine vinegar
2 ducks
140g caster sugar
6 star anise seeds
large piece ginger, sliced
small bunch spring onions, roughly chopped
2 tbsp malt syrup or maltose (available in most Chinese supermarkets)
3 tbsp red wine vinegar

Steps:

  • The day before, soak 4 wooden skewers in water for 20 mins. Wash the ducks inside and out with cold water, drain and pat dry with kitchen paper. Mix together the sugar, star anise, ginger, spring onions and a few good pinches of salt, then use this to fill the cavities. Close the cavities with wooden skewers and set aside.
  • In a small bowl, mix the maltose and 2 tbsp of the vinegar. Add the remaining vinegar to a jug of boiling water and pour over the ducks. (The boiling water opens up the pores, while the vinegar helps to strip some of the waxiness from the skin, so it will be more receptive to the maltose, which adds sweetness and a lacquered caramel colour.) Smear the maltose mixture over the ducks, then place them in a large plastic container and put in the fridge overnight, uncovered.
  • To cook, heat oven to 220C/200C fan/ gas 7. (Fan ovens are particularly effective for roasting duck.) Put a little water in the bottom of a large roasting tin, place the ducks on a rack over the top and cover with foil. Roast for about 45 mins. Take off the foil and roast for another 45 mins - the duck must be well done, there is no such thing as a rare Chinese roast duck! Take the duck out of the oven and let it rest for a good 20 mins before carving.

CHINESE DUCK LEGS RECIPE - BRAISED DUCK LEGS CHINESE BBQ STYLE
2017-11-13 If you are making this recipe with store-bought duck legs, you can actually skip the braising step and simply roast your legs in this sauce. But that rarely works with wild waterfowl. For wild ducks and geese, you thin the Chinese barbecue sauce with water, and use that to braise the meat, leaving the skin above the level of the liquid. This keeps the meat moist and, …
