STIR-FRIED CHICKEN WITH BROCCOLI, WATER CHESTNUTS AND PEPPERS



Stir-Fried Chicken with Broccoli, Water Chestnuts and Peppers image

3 tablespoons peanut oil
2 teaspoons minced garlic
2 teaspoons minced ginger
2 teaspoons minced green onion bottoms
1 1/2 pounds boneless, skinless chicken breasts, diced into 1-inch cubes
1 cup julienned red bell peppers
1/2 cup water chestnuts
3 cups blanched broccoli florets
1/4 cup soy sauce
2 teaspoons toasted sesame oil
3/4 cup chicken stock
4 teaspoons cornstarch slurry
Salt and pepper
Steamed rice, for serving

Steps:

  • Set a wok over high heat and add the peanut oil. Be sure to swirl the wok to get the oil to coat most of the pan. Once the oil smokes, quickly add the garlic, ginger, green onions and chicken to the wok. Saute, stirring continuously until the chicken in lightly browned, about 2 to 3 minutes. Add the red peppers and saute for another 1 minute. Add the water chestnuts and broccoli and saute for another minute. Add the soy sauce and sesame oil and reduce for 30 seconds. Add the chicken stock, slurry and season with salt and pepper. Use a paddle to toss the ingredients and be sure that the stock comes to a boil. Cook at a boil for 2 to 3 minutes, before serving over steamed rice.

2 (5 ounce) cans water chestnuts, drained whole
1/4 cup sugar
1 tablespoon brown sugar
1/4 teaspoon ginger
1/2 cup soy sauce
15 slices bacon
toothpick

Steps:

  • Mix sugars, ginger and soy sauce. Cut water chestnuts in half. Soak chestnuts in mixture for thirty minutes.
  • Cut bacon strips in half and wrap each chestnut with a piece of bacon.
  • Secure with toothpick.
  • Bake at 375 for 15-20 minutes in a baking dish.

Chinese style water chestnut cake--a traditional and yummy dim sum dessert

125 g water chestnut flour
5 fresh water chestnut ( , or you can use canned one too)
2 slabs of sugar pieces ( , around 190g, this can be replaced by brown sugar or white sugar)
700 ml water ( , 150ml for soaking + 550ml for sugar water)

Steps:

  • Soak the flour with 150ml water and stir until smooth. Set aside for 10 minutes. Then re-stir. You can strain the mixture if necessary.
  • In a deep plan, add the remaining water and the sugar pieces, heat over slow fire until the sugar is completely dissolved. Bring to boil and add minced fresh water chestnut in. Stop fire until the content begin to boil again.
  • After the sugar water boils, stir the sugar water slowly to the square pan for soaking the flour in first step immediately. During the process, keep stirring the flour water to avoid settling to the bottom. After adding the boiling sugar water, the batter will become really thick. Shake it slightly to trowel.
  • Set up the steamer and wok and then steam the batter for around 20 minutes. To check whether the batter is completely done, insert a toothpick in and see whether it is clean after pulling out.
  • Cook down completely and then cut it into thick slices. In summer days, it can be directly served cold after stored in fridge. And in winter days, pan-frying the cake with a small amount of oil and serve hot.

1 lb boneless chicken breast, skin removed
3 tablespoons cornstarch
1 tablespoon egg white, slightly beaten
1/2 teaspoon salt
1 1/2 cups low sodium chicken broth
2 1/2 tablespoons low sodium soy sauce
1 tablespoon sugar
1/4 cup peanut oil
1 (6 ounce) package frozen pea pods, thawed
1 teaspoon fresh gingerroot, minced
2 garlic cloves, minced
3 small tomatoes, quartered
1 (8 ounce) can sliced water chestnuts

Steps:

  • Cut chicken into bite-sized pieces. In medium bowl, combine chicken, 1 Tbsp cornstarch, egg white, and salt. Stir to coat. Refrigerate 15 minutes.
  • Meanwhile, in small bowl combine chicken broth, soy sauce, 2 Tbsp cornstarch, and sugar. Mix well and set aside.
  • Heat 2 Tbsp Peanut oil in wok or large skillet over medium high heat. Add chicken and stir-fry until no longer pink; remove and set aside.
  • Saute ginger and garlic in remaining oil for 1 minute. Add peapods and stir-fry until crisp-tender.
  • Add chicken and cornstarch mixture back into skillet. Cook, stirring constantly, until mixture thickens.
  • Serve immediately with rice or noodles.

Ingredients: 600 ml water 100 gm water chestnut flour (Pan Tang Guangzhou 廣州泮塘特產) 2 tsp / about 6 gm cornflour / corn starch 2 tsp oil 50 gm white sugar 50 gm brown sugar slab (冰片糖), finely chopped 8 water chestnuts, fresh, frozen or canned, roughly chopped
600 ml water
100 gm water chestnut flour (Pan Tang Guangzhou 廣州泮塘特產)
2 tsp / about 6 gm cornflour / corn starch
2 tsp oil
50 gm white sugar
50 gm brown sugar slab (冰片糖), finely chopped
8 water chestnuts, fresh, frozen or canned, roughly chopped

Steps:

  • Method: Grease the pan with a little of oil in order to help remove the cake from it at ease. Dissolve the water chestnut flour with 300 ml of water and cornflour completely. Drain through a fine sieve. Stir in 2 teaspoons of oil. Set aside. Put the other 300 ml of water, together with white sugar, chopped brown sugar into a deep pot. Cook until the sugar dissolves completely. Bring it to boil. Add the water chestnuts. Reduce the heat to low. Stir in the dissolved water chestnut flour mixture. Immediately stir to combine well into a thick but smooth batter. Make sure not to let the batter stick to the bottom. Pour the batter into the greased pan. Use a teaspoon, wet with some water, to level the surface. Cover with foil and steam in a wok or steamer, for about 30 to 35 minutes, or until the cake turns translucent, or an inserted needle comes out clean. Remove from the wok and let cool a bit. Remove the cake from pan and slice into pieces. Serve warm immediately. Or pan fry slices before serving. The leftover can be kept in fridge, covered, for up to a week or so.

Water chestnuts have contributed immensely to chinese cuisine, and it is an integral part of traditional chinese cooking. These crunchy, sweet chestnuts are actually vegetables that grow in marshes. This recipe calls for blanched chestnuts that are cooked in schezuan sauce and served like a sizzler. Buy fresh water chestnuts as far as possible and chop of the top and peel the skin before cooking. The cooked chestnuts taste wonderful in sizzling hot schezuan gravy and have an unmatchable taste - the sweet and crisp chestnut is a great contrast to the spicy thick sauce, making every bite delicious.

1/2 cup finely chopped spring onions whites

a few cabbage leaves
2 tbsp finely chopped spring onion greens

Steps:

  • MethodBoil a vesselful of water along with the salt in a deep pan. Add the water chestnuts and blanch them on a medium flame for 2 to 3 minutes. Drain and keep aside.Heat the oil in a wok / kadhai on a high flame till it smokes.Add the garlic and spring onion whites and sauté on a high flame for a minute.Add the water chestnuts, schezuan sauce, water, salt and sugar, mix well and cook on a medium flame for 2 minutes.Heat a sizzler plate on an open flame till it is red hot, place it on the wooden tray and arrange a few cabbage leaves on it.Arrange the water chestnuts over it and serve immediately with garnished with spring onion greens.

  • Fill a saucepan or small pot with water and bring to a boil. Put in pork ribs or meat and blanch for a minute or so to remove impurities. Discard the water and wash the meat clear of all grit.
  • Put all the ingredients into a slow cooker. Pour in chicken stock or water until just enough to immerse all the ingredients. Cook on Auto or High setting for at least 3 hours. If cooking in a deep pot, bring all the ingredients in stock or water to a boil, then lower heat and let simmer for at least 2 hours, or until meat is fall-off-the-bone tender.
  • When serving, scoop a little of each ingredient – meat, carrot and water chestnuts – into individual serving bowls and fill with soup. Alternatively, you may scoop all the ingredients into a large soup dish and fill with soup. Serve hot.
