Easy Chinese Vegetables image

This is out of a new cookbook I picked up at an Antique store...called "The Essential Asian Cookbook"...

Number Of Ingredients 7

1 lb bok choy
2 teaspoons peanut oil
1/2 teaspoon garlic, finely chopped
1 tablespoon oyster sauce
1/2 teaspoon sugar
2 tablespoons water
1 teaspoon sesame oil

Steps:

  • Bring a large pan of water to boil.
  • Wash the bok choy and remove any tough stems.
  • Chop the bok choy into 3 equal portions.
  • Add the bok choy to the pan of boiling water.
  • Cover for 1 to 2 minutes or until just tender but still crisp.
  • Use tongs to remove the bok choy from the pan, drain well and place on a heated serving platter.
  • Heat the peanut oil in s small pan and cook the garlic briefly.
  • Add the oyster sauce, sugar, water and sesame oil and bring to a boil.
  • Pour over the bok choy and toss to coat.
  • Serve immediately.

8 ounces spaghetti or 8 ounces fettuccine pasta
2 tablespoons dark sesame oil
6 tablespoons peanut butter
1/4 cup water
9 tablespoons soy sauce
6 tablespoons tahini (sesame paste)
1/2 cup sesame oil
2 tablespoons sherry wine
4 teaspoons rice wine vinegar
1/4 cup honey
4 cloves garlic, minced
2 teaspoons minced fresh ginger
1 -2 tablespoon hot sauce
1/2 cup hot water
1 carrot, peeled (optional)
1/2 medium firm cucumber, peeled,seeded,and julienned (optional)
2 green onions, thinly sliced (optional)

Steps:

  • Cook noodles in a large pot of boiling water over medium heat.
  • Cook until barely tender and still firm.
  • Drain immediately and rinse with cold water until cold.
  • Drain well and toss noodles with (2 Tbsp) dark sesame oil so they don't stick together.
  • FOR DRESSING: combine all ingredients except hot water in a blender and blend until smooth.
  • Thin with hot water to consistency of whipping cream.
  • For garnish, peel flesh of carrot in short shavings about 4" long.
  • Just before serving, toss noodles with sauce.
  • Garnish with cucumber, green onion, and carrot.
  • Serve cold.

1/3 cup chunky natural-style peanut butter
3 tablespoons soy sauce or 3 tablespoons tamari
1 tablespoon brown sugar
1 (8 ounce) package uncooked chinese noodles or 1 (8 ounce) package angel hair pasta
3/4 cup water or 3/4 cup vegetable broth
1 cup carrot, cut into matchsticks
2 -3 garlic cloves, minced
1 1/4 cups fresh shiitake mushrooms, sliced
1 cup snow pea pods, cut diagonally into 1-inch pieces
1/2 cup sliced scallion
1/4 teaspoon crushed red pepper flakes

Steps:

  • In a small bowl, combine peanut butter, soy or tamari, and brown sugar. Set aside.
  • Prepare noodles according to packaged directions. Drain and set aside.
  • In a medium nonstick skillet; heat water or broth over medium high heat.
  • Add carrots and garlic; cook, stirring for 2 minutes.
  • Add mushrooms, pea pods, scallions, and red pepper flakes.
  • Saute until tender-crisp, about 2 minutes.
  • Stir in peanut sacue.
  • Cook until smooth and bubbly.
  • Pour over hot noodles.
