¼ cup milk
1 egg
1 ½ teaspoons baking powder
1 pinch salt
2 tablespoons white sugar
½ teaspoon ground cinnamon
1 apple - peeled, cored, and chopped
½ cup confectioners' sugar
1 tablespoon milk
½ teaspoon caramel extract (such as Watkins™)
¼ teaspoon ground cinnamon

  • Peel, core and cut apples into quarters and cut each quarter lengthwise in half. Coat apple segments thoroughly in two tablespoons of cornflour, shaking off excess. Sieve refined flour, remaining cornflour and baking powder into a bowl.
  • Gradually stir in one and quarter cup of water to make a smooth batter. Heat sufficient oil in a wok, dip the apple segments into the batter and deep fry for about a minute or until golden brown, turning them occasionally.
  • Drain on an absorbent paper and keep warm. Heat butter in a pan with two tablespoons of water and sugar. Continue cooking until sugar melts and turns light golden brown.
  • Remove from heat and dip the fried apple pieces in the hot caramel. Sprinkle sesame seeds and dip in iced water to harden the crust. Remove immediately and serve.
