INSTANT POT CHINESE FIVE SPICE BEEF AND VEGETABLE STEW
A hearty beef and vegetable stew featuring the robust savory flavour of Chinese five spice. Quick and easy to prepare with the Instant Pot!

Steps:
- In a large ziploc bag, add the stewing beef, flour, and Chinese five spice then seal and shake the bag until the beef is well coated.
- Using the "saute" function on the Instant Pot, add one tablespoon of olive oil and brown beef on all sides (you may need to do this in batches). Remove the beef and set aside.
- Pour another tablespoon of olive oil into the Instant Pot and add the onion, stirring until soft and brown, about 4-5 minutes. Add in the garlic and stir for another 30 seconds, until the garlic starts to brown.
- Add red wine to deglaze* (see first note), stirring and scraping the bottom of the pot to remove/dissolve the brown bits and allowing the wine to be absorbed into the onions. Press "cancel" to turn off the Instant Pot.
- Add back in the beef as well as the potatoes, carrots, celery, beans, beef broth, tomato paste, Worcestershire sauce, and salt and pepper to taste. Give the ingredients a good stir to distribute the ingredients throughout the vessel** (see second note). Place a bay leaf on top.
- Seal the Instant Pot and cook at high pressure ("manual"/"pressure cook" function) for 25 minutes. After the stew is ready, allow natural pressure release for at least 15 minutes before quick pressure release to completely depressurize (until floating valve drops).
- Open the Instant Pot, remove the bay leaf and give the stew a stir. Taste for additional salt and pepper and top with fresh basil if you like. Best served hot.

- Put oil in large pot or Dutch oven over medium-high heat. When oil is hot, add veal and sprinkle with salt and pepper. Cook, turning as necessary, until well browned on all sides. Transfer veal to plate and set aside.
- Add onions, carrots and radishes. Cook, stirring occasionally, until lightly browned, 5 to 10 minutes. Add garlic and ginger and cook for another minute. Season with salt and pepper.
- Add soy sauce and wine, stock or water. Bring to a boil, return veal to pot and reduce heat to low. Cover and simmer, stirring once or twice, until veal is tender, 45 minutes to 1 hour.
- Stir in the bok choy, cover and cook until the leaves are wilted but stems still have some crunch, about 5 minutes.
- Stir in snow peas and simmer until they turn bright green, about 3 minutes. Garnish with cilantro, drizzle with sesame oil and serve.

- Peel onion and garlic and dice both. Peel potatoes and carrots, cut potatoes into bite size pieces and carrot into slices. Rinse veal and pat dry. Heat oil in a pan and fry veal on all sides until browned. Add prepared vegetables to the pan, mix, sauté briefly and season with paprika, salt, pepper and cumin. Add broth, bring to a boil and simmer partially covered for about 1.5 hours. Stir occasionally and add more broth as needed.
- Meanwhile, rinse bell pepper, cut in half, remove seeds and ribs and chop. Rinse tomatoes, blanch in a pot of hot water, peel, quarter, remove seeds and cut into pieces. Trim mushrooms and cut in half or into quarters depending on the size. Add mushrooms, bell pepper, tomatoes and cream during the last 20 minutes of the cooking time.
- Serve garnished with parsley and seasoned with lemon juice, salt and pepper.

- Preheat oven to 325°F.
- In a bowl or resealable bag toss flour and half the salt and pepper with veal until completely coated. In large Dutch oven, heat oil over medium-high heat. Brown veal on all sides, about 5 minutes. Using tongs, transfer veal to plate. Stir in onion, celery and leeks, cookin until vegetables are tender and starting to brown, about 8 minutes.
- Stir in garlic, remaining salt and pepper, bay leaves, thyme and rosemary. Deglaze pan with wine, scraping up any brown bits from the bottom of the pan. Stir in broth and return veal to pan. Bring to a simmer.

- *Staranise comes in the form of an eight point star.
- ,each point having an anise seed in it.
- Most of them are broken up so use a total of eight points, more or less, to taste.
- **Theorange (or tangerine) peel has a slightly bitter taste that I like better with beef but this is personal taste.
- It comes in plastic bags and has a long shelf life.
- Start by browning the meat in a few T of oil.
- Do it in batches so it gets well caramelized.
- When the last of the meat is well browned, remove it all to a bowl.
- (Add more oil as needed).
- Add the onion, garlic, ginger, anise, orange peel and chiles to the wok (or pot); keep cooking, stirring frequently, until the onion starts to brown.
- Stir in the meat along with the sauce, bring it to a full boil, stir well and reduce heat to simmer.
- Cover the pot and simmer for 1 hour (pork) or 2 hours (beef).
- Adjust seasonings, add the vegetables and simmer, covered for another half hour.
- Before serving, remove all the pieces of ginger, star anise, orange peel, chile, etc.
- Serve with steamed rice or boiled noodles.

- On medium-high heat, heat 1 tablespoon of olive oil in a medium pot.
- Add sliced onions and cook until onions begin to soften. Stir occasionally for approximately 10 minutes.
- While onions are cooking, cube veal into 1 inch pieces.
- Remove cooked onions from pot and place in a bowl.
- Add 2 tablespoons of olive oil in pot. Heat for one minute.
- Add cubed veal pieces and brown evenly.
- Sprinkle flour over browned veal pieces and toss until well coated (in the pot). Cook for 1-2 minutes. (Colour of stew will depend on how long you brown the flour with the veal)

- Add potato cubes and cook for another 10 minutes or until almost done.
- Add sweet potato cubes and sliced carrots and cook for 5 minutes or until done.
- Add frozen peas a few minutes before serving.

- Add 2 teaspoons of vegetable oil to a Dutch oven and heat over medium-high heat. Once heated, add half of the beef and brown on all sides. Remove the beef from the pan and brown the other half of the beef with the remaining oil.
- Add ½ cup of green onions, ginger, aniseed, and garlic to the pot and sauté for 30 seconds.
- Stir in 1 can of broth and use a wooden spoon to scrape the bottom of the pan to loosen browned bits. Return the beef to the pan.

- Add 8 cups of spinach. Cover the pot and cook for 3 minutes until wilted. Discard the cinnamon sticks.
- Serve immediately over Chinese noodles.
