CHINESE-STYLE ORANGE CHICKEN WINGS



Chinese-style Orange Chicken Wings image

A Chinese-style orange sauce is applied to grilled wings, which results in chicken that has a bright citrus flavor with hearty helpings of sweetness, spice, and savoriness.

For the Sauce
1/3 cup freshly squeezed orange juice
1/4 cup dark brown sugar
3 tablespoons chicken stock
2 tablespoons Shaoxing wine
2 tablespoons rice vinegar
1 tablespoon dark soy sauce
1 tablespoon cornstarch
2 teaspoons grated orange zest
1 teaspoon sesame oil
2 teaspoons canola or vegetable oil
1 tablespoon thinly sliced scallion, white and light green parts only
2 teaspoons finely minced garlic (about 2 medium cloves)
2 teaspoons finely minced fresh ginger
1/2 teaspoon crushed red pepper
For the Wings
1 tablespoon baking powder
2 teaspoons kosher salt
1 teaspoon white pepper
3 pounds chicken wings, cut into drumettes and flats
3 tablespoons finely sliced scallion greens, for garnish

Steps:

  • To make the sauce: In a medium bowl, whisk together orange juice, brown sugar, chicken stock, wine, vinegar, soy sauce, cornstarch, and sesame oil until sugar and cornstarch has dissolved.
  • Place canola oil, minced scallions, garlic, ginger, and crushed red pepper in a small saucepan over medium heat. Cook, stirring occasionally, until fragrant and vegetables have softened, but not browned, about 3 minutes. Add in sauce mixture and bring to a boil, stirring occasionally. Cook until sauce thickens, about 1 minute. Remove and let cool. Transfer to airtight container and store refrigerator until ready to use.
  • To make the wings: In a small bowl, mix together baking powder, salt, and white pepper. Place wings in a large bowl and sprinkle in baking powder mixture, tossing to evenly coat. Arrange wings in a single layer on wire rack set inside a baking sheet lined with aluminum foil, leaving a little space between each wing. Place baking sheet with wings in refrigerator for 8 hours to overnight.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place the wings skin side up over the cool side of the grill, cover, and cook until skins are crisp and browned, about 45 minutes.
  • Transfer wings to a large bowl. Add in sauce and toss to thoroughly coat wings. Transfer wings to a platter, garnish with scallion slices, and serve immediately.

For the orange sauce:
Zest from 1 orange
1/4 cup orange juice
1/4 cup soy sauce
1/4 cup water
1/3 cup rice vinegar
1 tablespoon cornstarch
1 tablespoon sesame oil
1/2 cup sugar
For the chicken:
1 1/2 pounds boneless skinless chicken thighs
2 large eggs
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup cornstarch
1/2 cup all-purpose flour
2 cups vegetable oil, for frying
2 cloves garlic, chopped
1 large shallot, chopped
To garnish and serve:
Sliced scallions, garnish
Sesame seeds, garnish
Cooked white rice , to serve

Steps:

  • Make the orange sauce: Whisk together sauce ingredients in a medium bowl. Set aside.
  • Prep the chicken: Cut chicken into about 1-inch cubes. Whisk eggs with salt and black pepper in a bowl and add chicken. Stir together. In a separate bowl, whisk together flour and cornstarch. Remove chicken from eggs with a slotted spoon or tongs, letting excess egg drain off, then transfer to cornstarch mixture and coat well.
  • Fry the chicken: Add oil to a large 10- to 12-inch skillet. Heat over medium-high heat until it reaches 350 ̊F. If you don't have a thermometer, you can also test the temperature by sprinkling in some flour and it should fizzle immediately. Once oil is hot, fry the chicken in two batches. The oil might not completely cover the chicken-that's okay. Cook for 3-4 minutes. Flip the chicken pieces and cook until the chicken is cooked through, about 3 to 4 more minutes. Total cook time is about 6-8 minutes. Remove fried chicken cubes and transfer to a plate lined with paper towels, so the chicken can drain. Repeat until all the chicken is cooked.
  • Simmer the chicken in the sauce: Once chicken is done, pour out hot oil and wipe pan clean. Add a fresh tablespoon of oil along with chopped garlic and shallot. Cook for a minute and then add the sauce. Simmer the sauce until it starts to thicken. Once the sauce is lightly bubbling, add fried chicken and toss together to coat. The sauce should continue to thicken and stick to the chicken. Let simmer for a minute or two more. Serve orange chicken over cooked white rice, garnished with sesame seeds and fresh scallions. LEFTOVERS! The orange chicken keeps well in the fridge for 5 days. Reheat in a skillet with a splash of water over low heat. Freeze the orange chicken for up to 3 months, but be sure to thaw it before reheating so the chicken doesn't clump together.

2 cups soy sauce
2 cups brown sugar
2 tablespoons garlic powder
5 pounds chicken wings, split and tips discarded

Steps:

  • Stir the soy sauce, brown sugar, and garlic powder together in a saucepan over medium heat; cook and stir until the sugar melts completely. Remove from heat and allow to cool.
  • Place the chicken wings in a large bowl. Pour the soy sauce mixture over the wings and toss to coat evenly. Cover the bowl with plastic wrap. Allow chicken to marinate in refrigerator overnight or 8 hours.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Pour the chicken wings and marinade into a 9x13-inch baking dish. Cover the baking dish with aluminum foil.
  • Bake in the preheated oven until thoroughly hot, about 45 minutes. Remove the aluminum foil from the baking dish and continue baking uncovered another 15 minutes. Serve hot.

1 (3 pound) bag chicken wings, tips removed
1 cup low-sugar orange marmalade
4 teaspoons Chinese five-spice powder
1 tablespoon sesame oil
1 tablespoon avocado oil
1 tablespoon grated fresh ginger
1 tablespoon sambal oelek, or to taste
2 cloves garlic, minced
1 ½ teaspoons salt
½ teaspoon ground white pepper
1 tablespoon snipped fresh chives
1 tablespoon sesame seeds

Steps:

  • Place an oven rack in the center of the oven and another oven rack about 6 inches from the heat source. Preheat the oven to 400 degrees F (200 degrees C). Line a sheet pan with aluminum foil.
  • Blot chicken wing pieces with a paper towel and place in a gallon-sized resealable bag.
  • Combine orange marmalade, five-spice powder, sesame oil, avocado oil, ginger, sambal oelek, garlic, salt, and white pepper in a blender; blend until smooth. Add marinade to chicken wings in the bag, squeeze out all the air, and seal. Squish chicken wings around in the sealed bag until well coated with marinade.
  • Place coated chicken wings in a single layer on the prepared sheet pan.
  • Bake in the preheated oven on the center rack for 30 minutes. Flip and bake an additional 30 minutes. Remove from the oven.
  • Preheat the oven's broiler. Broil chicken wings until they sizzle and turn a deep brown color, watching carefully so they don't burn, 3 to 5 minutes. Remove from the oven. Sprinkle with chives and sesame seeds.

1 1/2 cups fresh squeezed orange juice, divided (reserve 1/2 cup)
2 tablespoons soy sauce, divided (reserve 1 teaspoon soy sauce)
2 tablespoons green onions, chopped
2 tablespoons fresh garlic, minced
1 lb chicken wings, tips removed
2 tablespoons brown sugar
salt and pepper, to taste

Steps:

  • TO MAKE ONE PORTION OF SAUCE: Combine 1 cup of fresh squeezed orange juice, 1 tablespoon of soy sauce, the green onions, and garlic in a zip-lock plastic bag. Add the chicken wings and coat evenly with the mixture. Seal and marinate in the refrigerator for four hours.
  • Combine remaining 1/2 cup of orange juice, 1 tablespoon soy sauce and brown sugar in a small saucepan to make the glaze. Heat the mixture to boiling, and cook till liquid is reduced by half and is the consistency of syrup; set aside.
  • When ready to cook the wings, pre-heat the oven to 350°F and place on a baking pan, season with salt and pepper. NOTE: if you wish you may line the baking pan with tinfoil for easy clean-up.
  • Brush the wings with the soy glaze, and bake for 30 minutes, brushing with the glaze every ten minutes till done. Take out of the oven and serve right away.
