SPICY GREEN BEANS AND PORK, ASIAN STYLE
My favorite side dish to order in Chinese restaurants. A chef gave me the ingredients and the tip of blistering the green beans. After some trial and error, I came up with this. My family and friends now demand that it be on the menu for gatherings - even if it doesn't go with the course! Can be made in advance. The amount of heat is determined by the amount of chili garlic sauce used.

Steps:
- Heat 2 cups of vegetable oil in a large wok or deep sided skillet to 375 degrees F (190 degrees C). Carefully add the beans to the hot oil, and fry, stirring occasionally, until the beans are blistered, 3 to 5 minutes. Dip the beans out of the oil with a strainer, and quickly rinse them in cold water.
- Remove the oil from the wok, but do not wipe the pan. Heat 1 tablespoon of vegetable oil in the wok over medium heat, and stir in the garlic, ginger, and green onion. Cook and stir until fragrant, about 30 seconds, and stir in the ground pork. Cook and stir the pork, breaking it up as it cooks, until no longer pink, about 4 minutes. Stir in the chili garlic sauce, chicken broth, and soy sauce, and bring to a boil.
- Mix the cornstarch with the water in a small bowl, stir into the pork mixture, and let simmer until the sauce thickens, 1 to 2 minutes. Gently stir the green beans into the pork sauce, heat through, and serve.

I modified this recipe to be less oily. It is almost as good as take-out Chinese green beans. It tastes wonderful with ham and a baked yam.

'CHINESE BUFFET' GREEN BEANS
Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

SPICY GARLIC GREEN BEANS
This is a great dish we have at a local chinese restaurant that I came home and played with. They're an excellent side dish. I store some thai peppers in oil that I use in place of the olive oil but regular olive oil is fine. This recipe is great if you cube up a chicken breast into 1/2" cubes and add it also.

- While the green beans cook, fill a large bowl with ice water and set aside. Next whisk together your sauce by combining soy sauce, sweet chili sauce and Sriracha. I added an extra half TBSP of Sriracha to my sauce, making it about 1.5 total and found it perfectly spicy without going overboard. Feel free to add as much as you'd like to increase the heat, or adjust as desired based on your spice preference.
- Empty pan into a colander to drain and add beans to your ice water to halt the cooking process, then drain once cool. This takes about a minute.
- Reduce burner to medium heat and add your sesame oil to the pan. Sauté minced garlic for 30 seconds, or until fragrant and simmering, then return your green beans to the pan. Mix well to coat the green beans with the oil and garlic. Add your sauce and allow to simmer for a couple minutes, uncovered, to thicken the sauce. One desired tenderness is reached they're ready to eat! Stir so the Sriracha glaze coats the green beans and dive in!
