8 oz (225 g) red jalapeno peppers
2 heads garlic
1 teaspoon salt
1 teaspoon sugar
1/3 cup white distilled vinegar
1 tablespoon water ((plus 1 teaspoon water to make the cornstarch slurry))
1 teaspoon cornstarch

Steps:

  • Combine the peppers, garlic, salt, sugar, vinegar, and water in a blender. Blend on medium until chunky. Remove 1/4 of the blended mixture.
  • Turn the blender to high and liquify the remaining contents of the blender.
  • Strain the liquified mixture so that you are left with just the juices.
  • Add the strained juice and reserved chunky bits to a pot.
  • Meanwhile, add the cornstarch to a small bowl with 1 teaspoon water, stir to mix well to make a slurry.
  • Heat the pot over medium-high heat. Once warm, add the cornstarch slurry and bring to a boil.
  • After reaching a boil, remove from heat and allow to cool completely. The chili garlic sauce is ready to serve.
  • To store, transfer the chili garlic sauce to a clean mason jar and seal it. Store in the fridge for up to 1 month.

2 tablespoons minced garlic
1 tablespoon minced ginger
1 teaspoon finely chopped fresh green chiles
2/3 cup low sodium soy sauce
1/2 cup chicken broth
1/3 cup rice wine vinegar
1/4 cup light brown sugar
1 tablespoon sesame oil
1 tablespoon red pepper flakes
1/4 cup water
2 tablespoons cornstarch

Steps:

  • Heat the vegetable oil in a medium saucepan over high heat. Add the garlic, ginger, and chilis. Cook, stirring constantly until fragrant, about 15 seconds.
  • Stir in the soy sauce, chicken broth, vinegar, brown sugar, sesame oil, red pepper flakes. Bring to a boil then reduce heat to medium and cook for 1 minute.

Steps:

  • In a small bowl, stir together the honey, soy sauce, rice vinegar, 1/4 cup water, and cornstarch.
  • Put the oil in a medium saucepan over medium heat. Let it warm up for about 30 seconds, then add the garlic and cook until fragrant and just starting to color, 15-30 seconds.
  • Add the red pepper flakes and cook until fragrant and the garlic is lightly browned, 15-30 seconds more.

Steps:

  • Add all ingredients for the sauce into a medium-sized bowl and stir with a whisk. Set aside.
  • Next, heat vegetable oil in a saucepan or skillet over medium heat. Add fresh garlic and ginger and sauté for 30-60 seconds, stirring frequently.
  • Whisk the sauce again, then pour it into the saucepan. Bring to a boil and let simmer for a few minutes until thickened, stirring frequently.
  • Use the sauce immediately, for example, in a stir-fry or as a dip for vegan dumplings or summer rolls. Or let it cool completely and pour the sauce into a clean jar.

1 tablespoon sambal oelek ((use more or less according to taste))
OR 1-2 teaspoons dried red chili flakes ((these are very hot, start with less and add more if desired))
1 1/2 teaspoons finely minced garlic
1 teaspoon finely minced ginger
1 teaspoon tamari or soy sauce ((use tamari for gluten free))
2 teaspoons cornstarch dissolved in 1 tablespoon water ((the sauce will thicken more once cooled))
1-2 drops natural red food coloring ((optional))

Steps:

  • Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly. Once the sugar is dissolved stir in the cornstarch mixture, stirring continually until thickened, about 1 minute. Let the sauce cool completely, pour into an airtight jar and store in the refrigerator. Will keep for up to a week. Makes about 1 cup.

  • In a heavy based pan dissolve the sugar in the vinegar over a low heat until it is clear and there is no trace of sugar grains.
  • Add the honey, chopped chilli and garlic and heat gently for about 20 mins.
  • Turn off the heat, cover, and leave for the chilli and garlic flavours to be absorbed. The sauce can be left for as long as you like, up to 24 hrs or so, the longer you leave it the more chilli and garlic flavour you get, don't stress about it you really can't get it wrong!
  • Reheat the mixture (to get it runny again) season to taste and pass through a fine sieve, discard the chilli and garlic and serve the sauce just warm in a dipping dish. It should be a lovely golden orange colour.
  • Serve with anything crispy and golden for dipping!
  • Personally I serve it with everything.
