MA-PO TOFU (SIMMERED TOFU WITH GROUND PORK)
I have long enjoyed stir-fried tofu creations like ma-po tofu, a classic dish from Sichuan. But I found making them difficult. This version is easy and quick.

Steps:
- Put oil in a deep 10-inch skillet or wok, preferably nonstick, and turn heat to medium-high. A minute later, add garlic, ginger and red pepper flakes, and cook just until they begin to sizzle, less than a minute. Add pork, and stir to break it up; cook, stirring occasionally, until it loses most of its pink color.
- Add scallions and stir; add stock. Cook for a minute or so, scraping bottom of pan with a wooden spoon if necessary to loosen any stuck bits of meat, then add tofu. Cook, stirring once or twice, until tofu is heated through, about 2 minutes.
- Stir in the soy sauce; taste, and add salt and red pepper flakes as necessary. Garnish with cilantro if you like, and serve.

My comfort food that my mom made it all the time. It's easy and tasty. My hubby loves it! If you want thicker sauce, add more cornstarch. Serve it on rice.

- Heat oil in a skillet over medium heat. Cook and stir green onion, garlic, and ginger in hot oil until fragrant, about 1 minute. Crumble ground pork into skillet, breaking it into small pieces with the back of a wooden spoon as you stir. Pour soy sauce over the pork mixture; cook and stir until the pork is completely browned, 5 to 7 minutes. Stir peas into the pork mixture; cook and stir until the peas are softened, 3 to 5 minutes. Fold tofu into the pork mixture; cook until the tofu is hot, about 3 minutes.
- Whisk water, oyster sauce, cornstarch, salt, and white pepper together in a bowl; stir gently into the pork and tofu mixture. Cook until the sauce thickens, about 5 minutes.

- Cook garlic in the olive oil over medium-high heat in a large saucepan until lightly browned and fragrant. Add the ground pork and brown, stirring frequently to break it up. Stir in the tofu, reduce the heat to medium, and cook to reheat, stirring occasionally, about three minutes. Season with black bean sauce, soy sauce, sherry, and green onions.

CHINESE STYLE VEGAN TOFU MINCED PORK
This Chinese style vegan minced pork is made from tofu thus pack full of plant protein ! Super flavorful yet comes together in 15 mins.

Steps:
- If using black fungus, soak them in hot water for 20 minutes to rehydrate them. Slice them thinly and set aside.
- In a bowl, mix together both of the soy sauce, maple syrup, garlic powder, onion powder, chili powder and sesame oil.
- Crumble your tofu using a fork or your hands into tiny pieces.
- Heat up some oil in a non-stick pan / skillet. Start by sauteing the black fungus for 3-4 minutes. Then, add in the tofu and cook for another 3-4 minutes, stirring every 30 seconds.
- Pour in the sauce made earlier and toss until the sauce is well incorporated.
- Garnish it with some chopped scallions and serve.

- Drain the tofu and place on towels or paper towels. To get rid excess water in the tofu, place another towel on top of the tofu, then place something flat and heavy (like a cutting board or a cast iron frying pan) on top. You can weigh the cutting board down by putting a couple of cans of soup on top. Let sit for 10 minutes.
- Heat a wok or large saute pan over medium-high heat. When hot, swirl in the cooking oil. Very carefully and slowly slide in the tofu slices in one layer. Fry for 1 minutes, then flip to fry the other side for 1 minute until both sides are browned. Remove the seared tofu to a clean plate.
- To the same wok, add in the ground meat. Saute until browned, about 2 minutes. Add in the garlic and the ginger and stir fry for 30 seconds.

- Prepare the ingredients. Soak the mushroom. First, soak the dry Chinese mushroom in some water for at least an hour. The dry mushroom will rehydrate and become soft so that you can cut it into small dice easily.
- Deep frying the tofu for extra flavor and texture. Remove the tofu carefully from the box. Place it in a deep-frying basket gently. Deep-fried it in the preheated oil for about five minutes or until it turns golden brown.
- Made the sauce. Saute the garlic and onion in vegetable oil over low heat until they turn aromatic. Since garlic browns faster than onion due to the higher content of water, you should saute the onion first and then add the chopped garlic after a minute.
- Plating and garnishing. Pour the hot sauce over the tofu. Garnish with some cut scallion and chili. You can view two videos I upload previously to show how to prepare both chili and scallion for garnishing.
