Italian cookies rolled in sesame seeds

4 cups all-purpose flour
1 cup white sugar
1 ½ cups shortening
¾ cup milk
.063 teaspoon anise oil
2 ounces sesame seeds

Steps:

  • Combine flour and sugar in a bowl. Cut in shortening with a pastry blender-or work with your hands - until mixture resembles coarse meal.
  • Add anise oil (optional) small amount for it is very strong, to 1/2 cup of the milk and add to flour mixture. Gradually add more of the milk mixing until dough holds together.
  • Pull off small portions of dough and roll between palms of the hands into a roll about finger size. Roll in sesame seeds. Seeds stick better if put in sugared water and taken out and put on a clean lintless cloth. Roll on cloth with seeds, then flatten out too about 1/4-inch thickness. Cut into 2 inch strips, place on ungreased baking sheet.
  • Bake at 350 degrees F (180 degrees C) for 20 to 25 minutes, or until golden brown. Remove, cool completely, then store in an airtight container.

1 1/4 cups sesame seeds, toasted
3/4 cup coconut
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup peanut oil
1 cup brown sugar
1 egg
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350@. Combine seeds & coconut. Toast 7 - 10 minutes or until light brown. Set aside.
  • Combine flour, baking powder, soda & salt. Set aside.
  • In another bowl- cream oil & brown sugar, add eggs & vanilla, beating well. Add seeds & coconut, mix well. Blend in dry ingredients.
  • Shape into 1" balls. Place on ungreased cookie sheet & flatten with a fork.
  • Bake at 350@ for 12 minutes.

5 large egg whites
1/2 cup powdered sugar
1/2 cup vegetable oil
1/3 cup all purpose flour
1 1/2 cup raw sesame seeds

Steps:

  • Beat the egg whites until they start to get bubbly. Add the powdered sugar and beat until the sugar is dissolved. Beat in the oil and flour and mix well. Stir in the sesame seeds. Let the mixture sit for 20 minutes.
  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Fill a zip top bag with batter and cut a ¼ inch hole in one corner. Squeeze out the batter onto the parchment to make circles, about an inch and a half apart. Bake for 15-18 minutes until golden. Cool and serve.

Greet Chinese New Year (or any holiday) with homemade hup toh soh (Chinese walnut cookies), and my recipe uses walnut and sesame seed for extra nuttiness.

280 gram (~ 2 cups) all-purpose flour
3/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
150 gram (~ 1 cup) walnut, toasted and coarsely chopped (I pulse for 2-3 seconds with my food processor)
50 gram (~ 1/3 cup) sesame seeds, toasted
175 gram (~ 12 tablespoons) unsalted butter, room temperature
90 gram (~ 1/2 cup) sugar
3 egg yolks
1 egg, lightly beaten (for egg wash)

Steps:

  • Preheat oven to 165 Celsius (325 Fahrenheit). Line two half-sheet pans with parchment paper and set aside.
  • Whisk together all-purpose flour, salt, baking powder, and baking soda. Then add the walnut and sesame seeds and mix well. Set aside.
  • In a mixing bowl, beat butter and sugar until light and fluffy, then add egg yolks and beat until well mixed. Then, lower the speed and gradually add the flour and walnut mixture and mix until it form a smooth cookie dough. NOTE: The texture of this cookie dough can be quite dry, and it is usually easier to work with hands at the very end to gather the dough.
  • Form round balls (each about 1 teaspoon, or 10 gram) from the cookie dough and arrange on the prepared half-sheet pans. You should get about 80 balls, and you can arrange them in a 5x8 cookies per half-sheet pan.
  • Use a fork and press each ball of cookie to create an indentation. Then brush the top of each cookie with the lightly beaten egg (egg wash).
  • Bake in the preheated oven for 25-30 minutes, or until golden brown.
  • Remove cookies from oven and rest in the baking sheets for 5 minutes, then transfer to a wire rack to cool completely. Store cookies in an airtight container.

These are very interesting cookies. This recipe was given to me from a friend, and ..unfortunately I dont know how many it makes because Ive never made them personally. I know it makes quite a few cookies, but Im really not sure and I havent been able to find out. Please ignore yield. If I figure out how many it makes i will let you know. If you figure it out, please...let me know so I can make the changes.. or you can even make the changes. Ive tried them before, however.. and they are delicious ;-) Prep time doesnt include the 6-8 hours chilling time.

1 1/2 cups pastry flour
1 pinch salt
1 teaspoon baking powder
1/2 cup superfine sugar
125 ml butter
1 large egg
1 teaspoon vanilla
sesame seeds, to decorate

Steps:

  • Combine the flour, baking powder and salt in a bowl.
  • In a larger bowl; beat the sugar, butter, egg and vanilla.
  • Add your dry ingredients to the wet mixture and form a smooth dough.
  • Roll your dough into a cylinder about 12-inches long.
  • Divide the dough into two and cover with wax paper.
  • Place both pieces of dough in the refrigerator for approximately 6-8 hours.
  • YOU MUST DO THIS STEP.
  • After refrigeration time is over, and you wish to make your cookies, preheat the oven to 350°F.
  • Cut your dough into rounds about 1/3 of an inch thickness.
  • Continue by pressing each round into a plate full of sesame seeds.
  • Place on a parchment-lined cookie sheet.
  • Bake for 10-12 minutes until golden brown.
  • Remove from oven and allow them to cool for a minute or two.
  • Transfer to wire rack to cool completely.
  • Store in air-tight containers.

2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon fine salt
1 1/2 sticks (6 ounces) unsalted butter, at room temperature
1 cup granulated sugar
1/3 cup light brown sugar
1/4 cup tahini (ground sesame paste)
1/2 teaspoon pure vanilla extract
1 large egg
1/2 cup sesame seeds, white, black or a combination of both

Steps:

  • Whisk the flour, baking powder and salt together in a medium bowl. Set aside.
  • Beat the butter and sugars in a large bowl using an electric mixer until well combined, about 3 minutes. Add the tahini, vanilla and egg and beat until light, about 3 minutes. Stir in the flour. Form the dough into two 12-inch logs that are 1 1/2 to 2 inches in diameter, wrap in plastic wrap and refrigerate until very firm, 4 hours and up to overnight.
  • Preheat the oven to 325 degrees F. Line two or three baking sheets with parchment paper.
  • Remove one log of dough from the refrigerator and slice into 1/4- inch-thick slices. Place the sesame seeds on a plate. Coat the cookies in sesame seeds by pressing them lightly into the seeds, and place them on the prepared baking sheets. Bake until lightly golden around the edges, about 12 minutes, rotating the baking sheets top to bottom and front to back halfway through cooking. Cool the cookies on the baking sheet for 10 minutes, and then transfer to a rack to cool completely. Repeat with the remaining log.
