3 tablespoons low-sodium soy sauce
3 tablespoons Chinese sesame paste
2 tablespoons (or more, to taste) chile oil with fermented black beans or chile crisp
2 tablespoons toasted sesame oil
2 tablespoons brown sugar
¼ cup water
1 tablespoon cooking oil
1 garlic clove, minced
1 tablespoon minced fresh ginger
1 pound ground pork
Kosher salt
10 ounces fresh ramen noodles or 6 ounces dried ramen noodles, cooked according to package directions
¼ cup coarsely chopped roasted and salted peanuts
4 scallions, thinly sliced

Steps:

  • In a small bowl, stir together the soy sauce, sesame paste, chile oil or chile crisp, sesame oil, brown sugar, and water and mix well.
  • Heat the oil in a large skillet over medium-high heat. Add the garlic and ginger and stir once before stirring in the meat. Season with salt and cook, breaking up the meat with a spatula, until browned on the bottom, about 5 minutes. Continue to cook, stirring, until cooked through, about 2 more minutes. Remove from the heat.
  • Add the sauce mixture to the skillet with the meat and stir to combine. Add the noodles to the skillet and toss to coat well with the sauce.
  • Serve garnished with scallions and peanuts.

500 g (1lb) chicken breasts (cubed into bite-size pieces )
1 egg (beaten)
2 tbsp soy sauce
1 cup flour
½ cup cornstarch / cornflour
oil (for frying)
1 tbsp canola / vegetable oil
3 garlic cloves (crushed )
1/3 cup soy sauce
1/3 cup water
¼ cup brown sugar (You could add up to one third cup sugar if you prefer the sauce to be sweeter.)
2 tbsp rice vinegar / lemon juice
2 tsp sesame oil
2 tbsp sesame seeds
1 tbsp cornstarch / cornflour (mixed with 2 tbsp water )

Steps:

  • Place the chicken in a bowl then add the egg and soy sauce. Massage the egg and soy into the chicken well then allow to sit for a few minutes while you make the sauce.
  • To make the sauce, heat the oil in a large pan then cook for garlic for 30 seconds until fragrant.
  • Pour in the soy sauce, water, sugar, vinegar and sesame oil. Bring to a simmer then pour in the cornstarch slurry. Reduce the heat then simmer until the sauce is thick and glossy. Remove from the heat and set aside.
  • Heat enough oil to fry the chicken in a deep pan or pot. Place a wire rack over a sheetpan.
  • Combine the flour and cornstarch in a separate bowl then coat the chicken in the flour mixture, making sure each piece is completely covered.
  • Carefully add the chicken to the hot oil, cooking in batches to avoid over-crowding the pan, until the chicken is golden brown and crisp. Remove with a slotted spoon and allow to drain on the wire rack while you cook the remaining chicken.
  • Place the pan with the sauce back on the heat and bring to a simmer. Add the fried chicken and sesame seeds to the pan then toss to coat the chicken in the sauce. Season to taste with more soy, vinegar or sesame oil as necessary then serve over rice or noodles.

The 1lb thin spaghetti
The ½ cup of soy sauce
¼ cup sesame oil
1/3 cup sugar
3 green onions (thinly sliced)
¼ cup sesame seed Chinese chicken-
The ¼ cup of soy sauce
¼ cup teriyaki sauce
2 garlic cloves (minced)
¼ cup brown sugar
1 teaspoon fresh ginger (chopped)
4 boneless skinless chicken breasts (sliced into 1inch chunks)
sesame oil (for sautéing)

Steps:

  • In a large bowl mix together ¼ cup soy sauce, ¼ cup teriyaki sauce, garlic, ¼ cup brown sugar, and ginger. Mix well and make sure the sugar has dissolved. Add the chicken and coat the chicken with the sauce. Cover and place into the refrigerator for 2-3 hours.
  • To prepare sesame noodles-bring a large pot of lightly salted water to a boil. Cook noodles according to package directions. Drain and rinse the noodles. In a jar or sealable container add ½ cup soy sauce, ¼ cup sesame oil, and 1/3 cup sugar. Shake until well blended and the sugar has dissolved. Pour sauce over the pasta and toss to combine. Cover and set aside while the chicken is cooking.
  • Remove the chicken from the marinade and discard the marinade. Heat sesame oil in a large fry-pan or wok. Add the chicken and stir-fry in batches for about 10 minutes or until the chicken is fully cooked (the internal temperature has reached 165 degrees). Add more sesame oil as needed.
  • Remove the chicken from the pan and serve the chicken over the sesame noodles. Garnish with sesame seeds and sliced green onions.

  • Bring 2 quarts of water to a boil in a 4-quart pot. Have a large bowl of ice water ready. Add the noodles to the boiling water and stir. Cook until al dente, about 2 minutes. Drain and immediately transfer the noodles to the ice water to stop the cooking. Stir until cool; drain.
  • Transfer the noodles to a large bowl and toss with the sesame oil. Refrigerate, uncovered, until cold, at least 1 and up to 4 hours.

1/4 cup toasted sesame seeds
1/4 cup creamy peanut butter (Jif recommended)
2 medium garlic cloves, minced
fresh ginger, grated or minced (about 1 tbsp, I use the minced ginger that comes in a jar)
5 tablespoons soy sauce
2 tablespoons rice vinegar
1 teaspoon hot sauce (like Tabasco)
2 tablespoons light brown sugar
hot water
1 1/2 lbs boneless skinless chicken breasts
2 tablespoons salt, divided
1 lb fresh Chinese noodles or 1 lb spaghetti
2 tablespoons sesame oil
4 scallions or 4 green onions, sliced thin on diagonal
1 medium carrot, peeled and grated on large holes of box grater (about 2/3 cup) (optional)
1/2 cucumber, sliced on box grater and chopped into matchstick-sized pieces (optional)
crushed red pepper flakes (optional)

Steps:

  • First, make the shredded chicken. (As noted above, you can do this the day before and just take the shredded chicken out of the refrigerator before you begin the final preparations.) Boil 4 qts. of water with one tablespoon of salt. When the water reaches a boil, add the chicken and cook for about 20-25 minutes.
  • Pour out the water and allow the chicken to cool on a cutting board or in a bowl.
  • If you are unable to find toasted sesame seeds, toast the sesame seeds in a medium skillet over medium heat, stirring frequently, until golden and fragrant, about 10 minutes. Reserve 1 tablespoon sesame seeds in a small bowl.
  • In a blender or small food processor, puree the remaining 3 tablespoons sesame seeds, peanut butter, garlic, ginger, soy sauce, vinegar, hot sauce, and sugar until smooth, about 30 seconds. With the machine running, add hot water 1 tablespoon at a time until the sauce has the consistency of heavy cream, about 5 tablespoons; set the mixture aside (it can be left in the blender jar or food processor workbowl). If you wish, add the crushed red pepper for a little zing. (Start with 1/8 of a teaspoon and go from there.).
  • Bring 5 quarts water and the other tablespoon of salt to a boil in a stockpot over high heat. While you wait for the water to boil, you can shred your chicken.
  • Using 2 forks, shred the chicken into small, bite-sized pieces and set aside.
  • Add the noodles to the boiling water and cook them according to the directions on the package (about 4 minutes for fresh and 10 minutes for dried pasta).
  • Drain the noodles, return them to the pot, then rinse them again with cold running tap water until they are cool to the touch; drain them again.
  • In a large bowl, toss the noodles with the sesame oil until evenly coated. Add the shredded chicken, scallions, carrot, and sauce; toss to combine. Divide among individual bowls, sprinkle each bowl with a portion of reserved sesame seeds, and cucumber decoration and serve.

1 pound chicken tenderloins
2 tablespoons oil for cooking
2 stalks green onions - chopped, green and white parts separated, divided

5 cloves garlic, minced
1 (12 ounce) package frozen stir-fry vegetables
4 tablespoons oyster sauce
2 tablespoons sweet soy sauce (kecap manis)
2 tablespoons soy sauce

Steps:

  • Soak the udon noodles in warm water to separate.
  • Meanwhile, remove tendon from the tenderloins with a sharp knife. Place tenderloins in a food processor and pulse. You don't want big pieces, or ground chicken, but finely chopped.

Steps:

  • Game Plan: Make the sauce while the noodles cook.
