Chinese Chicken Salad image

The BEST Chinese Chicken Salad! It is easy, quick, and refreshing loaded with crisp, vibrant veggies, crunchy wonton strips and nuts all doused in dynamite tangy Sesame Ginger Dressing! This Salad stores beautifully for make ahead/portable lunches and stress free dinners!

Number Of Ingredients 27

3 cups shredded cooked chicken
1 small head Napa cabbage (thinly shredded (about 6 cups, approx. 1 pound))
1/2 small red cabbage (thinly shredded (approx. 3 cups))
1 cup matchstick. thinly julienned, or finely shredded carrots
3 oz. snow peas, ends trimmed and julienned ((approx. 1 cup))
1 red bell pepper (julienned then halved)
1-2 11 oz. can(s) mandarin oranges in water (drained)
1/3 cup loosely packed cilantro, chopped
1/3 cup chopped green onions
1/2 cup craisins (optional but recommended)
2/3 cup sliced almonds or chopped peanuts (more or less to taste )
1 1/2 cups wonton strips or chow Mein noodles (more or less to taste )
2 tablespoons sesame seeds or sunflower seeds (more or less to taste )

Asian pear
1/3 cup rice vinegar
1/4 cup low sodium soy sauce
2 tablespoons Asian sweet chili sauce
1 1/2 tablespoons sesame oil
2 tablespoons sugar
1/2-1 teaspoon sriracha optional
1 1/2 teaspoons minced garlic
1 1/2 teaspoons freshly grated ginger
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons peanut oil or canola oil

Steps:

  • Add all of the dressing ingredients to a mason jar with a tight fitting lid or a small bowl. Shake jar or whisk dressing vigorously. Remove 3 tablespoons dressing to a bowl with the chicken. Stir until evenly coated. Let chicken marinate while you prep the vegetables. Refrigerate the remaining dressing.
  • Add all salad ingredients to a large bowl except for wonton strips IF you are expecting leftovers. Whisk/shake salad dressing and drizzle desired amount of dressing over salad and toss until well combined. Add wontons strips to individual servings if expecting leftovers.

RICE NOODLES WITH SHRIMP & SNOW PEAS



Rice Noodles with Shrimp & Snow Peas image

8 ounces (225g) dry thin rice noodles
2 TBS olive oil
1 pound (450g) shrimp, shelled and deveined
1/2 small yellow onion (sliced)
6 ounces (170g) snow peas
1 1/2 cups (125g) mung bean sprouts
1 TBS hoisin sauce
1 TBS chili garlic sauce
1 TBS low-sodium soy sauce
1 green onion (sliced)
1/2 tsp garlic powder
1 tsp red pepper flakes (optional)

Steps:

  • Soak the noodles in boiling hot water for 5 to 10 minutes.
  • Heat a tablespoon of olive oil in a sauté pan over medium-high heat. Add the shrimp and let it cook for 5 to 7 minutes, or until the shrimp curls and turns orange. Pour the cooked shrimp on a plate, and wipe the pan down with a towel.
  • Heat another tablespoon of olive oil in the pan. Add the onions. When they start to turn translucent, add the snow peas. Cover the pan with a lid for 2 to 3 minutes. If it looks like the pan is very dry, add a few tablespoons of water. Uncover the pan and add the mung beans sprouts and stir for another minute or two.
  • Add the noodles, sauces, green onion, and garlic powder. Stir everything for another two minutes. Mix in the shrimp and red pepper flakes. Serve immediately.

I first made this for one of our backyard BBQ get togethers. I got the recipe in a book called Fare For Friends. There was'nt any left so I assumed everyone enjoyed it!

1 cup converted rice (uncooked)
1 cup frozen peas, thawed,uncooked
1 cup celery, finely chopped
1/2 Spanish onion, diced
1 cup shrimp, cooked or canned
4 ounces chow mein noodles
1/4 cup oil
2 tablespoons vinegar
1 1/2 teaspoons soya sauce
1/2 teaspoon curry powder
1/2 teaspoon salt
1 1/2 teaspoons sugar
1/2 teaspoon celery seeds or 1/2 teaspoon salt

Steps:

  • Cook rice; chill.
  • Add next 4 ingredients.
  • Put dressing in a jar and shake well.
  • Just before serving, add dressing a few spoonfuls at a time until salad appears moist enough.
  • Add noodles and toss.

2 cups snow peas
1 cup chopped broccoli
1 cup cherry tomatoes, halved
1 cup diced yellow bell pepper
3/4 cup diced red onion
4 cups cooked rice
1/4 cup soy sauce
1/2 cup minced fresh coriander or 1/2 cup minced fresh parsley
2 1/2 tablespoons chinese black vinegar or 1 1/2 teaspoons Worcestershire sauce
1 teaspoon sugar
1 teaspoon toasted sesame seed oil

Steps:

  • Steam the snow peas and broccoli until tender 3-5 minutes and blanch.
  • Put the salad ingredients in a large bowl and toss gently.
  • Whisk all the ingredients for the dressing together.
  • Pour over rice/vegetables.
  • serve at room temperature.

2 cups (8 oz.) snow peas, trimmed
2 scallions (white and green parts), thinly sliced
4 radishes, trimmed and cut into thin strips (about 1/2 cup)
1/4 cup rice vinegar
2 tsp. granulated sugar
1 Tbs. walnut or canola oil

Steps:

  • Put the snow peas in a microwave-safe bowl with 1 Tbs. water. Cover tightly and microwave for 1 minute. Drain and let cool. Cut the snow peas on the diagonal into 1/2-inch diamond shapes, discarding the end pieces.
  • In a medium serving bowl, combine the snow peas, scallions, and radishes. In a small bowl, whisk together the vinegar, sugar, and oil until the sugar dissolves. Pour over the salad and serve.

2 teaspoons cornstarch
1 teaspoon sugar
1/2 teaspoon kosher salt
1/2 pound Chinese sausage,* sliced on the diagonal 1/4 inch thick
3 garlic cloves, minced
1/4 cup finely minced peeled fresh ginger
1 lb sugar snap peas, trimmed
3/4 cup plus 2 tablespoons water
2 bunches scallions (white and pale green parts only), cut into 3/4-inch pieces
Accompaniment: steamed rice
*Available from Chinese markets and by mail order from Uwajimaya (800-889-1928).

Steps:

  • Stir together soy sauce, Sherry, cornstarch, sugar, and salt.
  • Heat a wok or deep heavy skillet over high heat until hot but not smoking, then stir-fry sausage 2 minutes. Transfer with a slotted spoon to a plate.
  • Add garlic and ginger to fat remaining in wok and stir-fry until fragrant, about 30 seconds.
  • Add peas and stir-fry 1 minute. Return sausage to wok, then add water and boil, stirring occasionally, until peas are crisp-tender, 1 to 2 minutes.
  • Stir sauce again and add to peas along with scallions. Boil, stirring, until sauce is thickened and no longer cloudy, about 2 minutes. Season with pepper.

8 dried shiitake mushrooms
4 ounces snow peas or sugar snap peas, stringed
4 baby bok choy, cut crosswise into 1/2-inch strips
1 bunch green onions, cut diagonally into 1-inch lengths
3/4 pound fresh thin Chinese egg noodles, or 1/2 pound dried vermicelli
1 cup bean sprouts
1/2 cup cilantro, coarsely chopped
For Soy-Orange Dressing:
1 teaspoon minced garlic
2 teaspoons minced fresh ginger
1 teaspoon sugar
1/4 cup orange juice
2 teaspoons sherry vinegar or rice wine vinegar
2 tablespoons soy sauce
3 tablespoons Asian sesame oil
1 tablespoon peanut oil
2 tablespoons sesame seeds (for garnish)

Steps:

  • FOR SALAD: Soak mushrooms in boiling water until softened, about 30 minutes. Remove stems and cut caps into thin strips. Cook snow peas, bok choy, and green onions in large pot of boiling water 1 minute. Drain and cool under cold water. If using fresh Chinese noodles, cook for 1 minute in another large pot of boiling water. If using dried vermicelli cook as directed on the package. Drain noodles and cool under cold running water. Combine noodles, mushrooms, cooked vegetables, bean sprouts and cilantro in large bowl. FOR DRESSING: Whisk all ingredients except oils in another large bowl. Gradually whisk in the oils until blended. Toss salad with enough dressing to coat well. Sprinkle with sesame seeds and serve. DO-AHEAD TIP: Can be made up to 1 day ahead.
