Time 50m

Yield 4 serving(s)

Number Of Ingredients 9

4 center-cut pork chops
salt and pepper
2 tablespoons vegetable oil
1 (15 ounce) peaches in light syrup, reserve juice
4 tablespoons peach preserves (or apricot)
3 tablespoons light soy sauce
1 teaspoon brown sugar
1/2 teaspoon ginger
1 teaspoon dry mustard

Steps:

  • Drain peaches and save 1/2 cup of juice. Cut peach slices into smaller pieces and set aside.
  • Salt and pepper pork chops on each side. In large skillet, fry pork chops in vegetable oil until brown. Remove chops from skillet.
  • In same skillet, pour 1/2 cup of reserved peach juice, preserves, soy sauce, brown sugar, ginger and dry mustard. Stir until mixed. Stir in cut peach slices.
  • Place pork chops back into skillet, having chops on bottom and simmer on very lowest heat for 35 minutes covered with a lid. Sauce will thicken as it simmers.
  • Serve with sauce and peaches on top of chops. Great with rice as a side dish!

PEACH-CHILI PORK CHOPS

Peach-Chili Pork Chops image

I found this recipe in my Good Housekeeping cookbook when I was looking for recipes I could use for blade pork chops, which are fairly inexpensive at my grocery store. This recipe will work with any cut of pork chop; thin chops shouldn't be used, however. I'd never made chops with this type of sauce, but I'm glad I tried it -- it's delicious!

Time 1h20m

Yield 4-6 serving(s)

Number Of Ingredients 8

4 -6 pork chops, any cut, including blade cut or 4 -6 shoulder steaks, all cut 3/4 to 1-inch thick
1/2 small onion, thinly sliced (optional)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup chicken broth
16 ounces can cling peach halves, separating syrup from peaches
1/4 cup chili sauce (I prefer Heinz brand)
2 tablespoons lemon juice

Steps:

  • Pour a small amount of olive or vegetable oil into a 10 or 12-inch skillet. If using onions, cook them over low heat until tender and set aside. Brown pork chops on both sides in same pan. Sprinkle chops with salt and pepper. Put onions back in pan.
  • Add chicken broth, syrup from the can of peaches, 1/4 cup chili sauce and the lemon juice.
  • Reduce heat to low. Cover and simmer for one hour. Skim fat from pan liquid. Place chops on a plate and cover. Meanwhile, increase heat to high and boil down the sauce to desired thickness. Add peach halves to sauce; pour sauce over pork chops and serve.
  • (I don't add the peach halves to the sauce. I just serve them separately as fruit in a small dish for each person.).

PORK CHOPS WITH A RIESLING PEACH SAUCE

Pork Chops with a Riesling Peach Sauce image

Boneless pork chops are covered with peaches cooked in white wine.

Provided by CupcakeSparkles11

Time 40m

Yield 4

Number Of Ingredients 8

1 tablespoon olive oil
salt and black pepper to taste
4 boneless pork chops
1 cup Riesling wine
3 under ripe peaches, pitted, and cut into 12 wedges each
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 tablespoon brown sugar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil.
  • Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper. Brown the pork chops in the hot oil until golden brown on both sides, about 3 minutes per side. Place the pork chops on the prepared baking sheet and bake in the preheated oven until the pork is no longer pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • While the pork chops are baking, pour the Riesling wine into the skillet, and bring to a simmer, using a wooden spoon to scrape up all of the browned bits of pork. Simmer until the wine has reduced to half its original volume then add the peaches and sprinkle in the cinnamon, nutmeg, and brown sugar. Reduce the heat to medium, and cook until the peaches are tender but not mushy, about 15 minutes. Spoon the peach sauce over the pork chops to serve.

I got this recipe 10 or 15 years ago on the back of Shake n' Bake for Pork. It has been a family favorite ever since. The sauce is the best part. It is simple to make and has great flavoring. I serve it with Rice and a green vegetable.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 12

1/3 cup peach jam
2 tablespoons ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
2 tablespoons apple cider vinegar
2 tablespoons cold unsalted butter, cut into small pieces
12 ounces green beans, trimmed
Kosher salt and freshly ground pepper
1 1/2 cups instant flour, such as Wondra
1 teaspoon baking powder
1 large egg white
Vegetable oil, for frying
4 1/4-inch-thick boneless pork loin chops (about 1 pound), trimmed

Steps:

  • Cook the jam, ketchup, 1 tablespoon Worcestershire sauce and 3 tablespoons water in a large skillet over medium-high heat, whisking, until thickened, about 5 minutes. Whisk in the vinegar, then the butter, a few pieces at a time; whisk in a few tablespoons water if the sauce is too thick. Remove from the heat and cover. Put the green beans in a microwave-safe bowl; sprinkle with water and season with salt and pepper. Cover with plastic wrap, pierce the plastic and microwave until tender, 8 to 10 minutes. Whisk 1 cup flour, the baking powder, 1/2 cup water, the egg white and the remaining 1 teaspoon Worcestershire sauce in a bowl; add a few more tablespoons water, if needed. Put the remaining 1/2 cup flour in a shallow dish. Heat 1/4 inch vegetable oil in a large skillet over medium-high heat until it reaches 375 degrees F on a deep-fry thermometer. Dredge the pork chops in the flour, then dip in the batter. Fry until golden, 3 to 4 minutes per side. Drain on paper towels. Serve with the peach sauce and green beans.

  • Season pork chops liberally with salt and pepper on both sides. Place flour in a shallow dish. Working with one pork chop at a time, dredge lightly in flour, shaking off excess; transfer to a tray.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the butter. When the butter is foamy, add the pork chops to the skillet, working in batches, if necessary, so that you don’t overcrowd the pan. Cook until nicely browned on each side and the meat reaches an internal temperature of 140-145° F, about 6-9 minutes per side for thick-cut chops or about 2-3 minutes per side for thin chops. Remove pork chops to a plate and tent loosely with foil to keep warm.
  • Do not clean out the skillet, but add remaining 1 tablespoon of olive oil to the pan. Add onion and cook over medium-high heat until soft, about 3-5 minutes. Stir in garlic, rosemary, thyme, basil and ginger; cook for about 30 more seconds.
