Peanut Sauce:
1/2 cup peanut butter
1/2 cup water
2 tablespoons soy sauce
2 tablespoons sugar
Chinese Peanut Sauce Stir Fry
2 large chicken breasts, diced into cubes
2 tsp of olive oil
2 cloves garlic, minced
1/4 cup onion, diced
pinch of red pepper flakes
Cooked Spaghetti Noodles for serving
2 scallions, diced (0ptional)

Steps:

  • Peanut Sauce: Whisk the peanut butter, water, soy sauce, and sugar, in a small bowl until well combined. Set aside.
  • Peanut Sauce Stir Fry: In a nonstick skillet over medium heat add the olive oil. Add the onions and garlic to the pan and cook until heated through or soft; 2 to 3 minutes. Season with crushed red pepper flakes.
  • Add diced chicken to the pan and cook until the chicken is heated through. 4 to 6 minutes. The chicken is done when it is no longer pink in the middle. I usually take one chicken piece out and cut it to see if it is cooked.
  • Add the peanut sauce to the pan and continue cooking for another 2 to 3 minutes until everything is heated through.
  • If the sauce is too thick add small amounts of water until you like the consistency.
  • Serve with cooked noodles.
  • Serving Size: 3/4 cup of chicken with sauce

1 tablespoon cornstarch
1 tablespoon sugar

1 tablespoon vegetable oil
1 pound boneless skinless chicken thighs or breast halves, cut into 3/4-inch pieces
1 garlic clove, finely chopped
1 teaspoon grated gingerroot
1 medium red bell pepper, cut into 3/4-inch pieces
1/3 cup dry-roasted peanuts
2 medium green onions, sliced (2 tablespoons)

Steps:

  • Mix broth, cornstarch, sugar, soy sauce, vinegar and red pepper; set aside.
  • Heat wok or 12-inch skillet over high heat. Add oil; rotate wok to coat side. Add chicken, garlic and gingerroot; stir-fry about 3 minutes or until chicken is no longer pink in center. Add bell pepper; stir-fry 1 minute.
  • Add broth mixture to wok. Cook and stir about 1 minute or until sauce is thickened. Stir in peanuts. Sprinkle with onions.

1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
1 medium red bell pepper, chopped

2tbsp vegetable oil
8 skinless boneless chicken thighs, cut into chunks
1 onion, finely chopped
3 garlic cloves, crushed
2 red chillies, finely sliced (deseeded if you don't like it too hot)
2tsp fresh ginger, grated
2tbsp garam masala
100g smooth peanut butter
400ml coconut milk
400g can chopped tomatoes
coriander , ½ roughly chopped, ½ leaves picked
roasted peanuts, to serve
cooked basmati rice, to serve

Steps:

  • Heat 1 tbsp of the oil in a deep frying pan over a medium heat. Brown the chicken in batches, setting aside once golden. Fry the onion for 8 minutes until softened. Then add the garlic, chilli and ginger and fry in the other 1 tbsp oil for 1 min. Add the garam masala and fry for 1 min more.
  • Stir in the peanut butter, coconut milk and tomatoes, and bring to a simmer. Return the chicken to the pan and add the chopped coriander. Cook for 30 mins until the sauce thickens and the chicken is cooked through.
  • Serve with the remaining coriander, roasted peanuts and rice, if you like.

3 tablespoons shaoxing cooking wine or dry sherry

2 cups roasted peanuts (if peanuts are not roasted, see * below.)
5 garlic cloves, minced
1 1/2 inches gingerroot, minced
3 scallions, chopped
4 -5 boneless skinless chicken breast halves, cubed
3/4 cup soybean paste, sweetened (found in Asian markets)
1/3 cup sugar

Steps:

  • Fry garlic and ginger on medium-high heat until beginning to brown. Add green onion and let fry for half a minute.
  • Add chicken cubes and turn up the heat to high, stir-frying until opaque.
  • Turn heat back down to medium. Toss in peanuts and soybean paste, stirring to coat.
  • Sprinkle sugar over the mixture and stir for a minute or two longer.
  • Serve with rice.
  • *If your peanuts are not roasted, put them in an oven preheated at 350 for 15-20 minutes. Stir once before done. Take them out before completely roasted because they continue to cook once out of the oven.

Steps:

  • In medium bowl, mix Peanut Sauce ingredients. Cover; refrigerate until ready to serve.
  • Heat oven to 400°F. Spray large cookie sheet with cooking spray. In shallow bowl, beat egg. In large reasealable food-storage plastic bag, place bread crumbs and peanuts. Dip chicken into egg. Place in bread crumb bag; seal and shake to coat. Place chicken on cookie sheet.
  • Bake 15 to 20 minutes, turning once, until chicken is no longer pink in center and bread crumbs are golden brown. Serve with sauce.
