CHINESE STIR FRIED NOODLES GUIDE
A guide to make-your-own stir fried noodles using my Real All Purpose Chinese Stir Fry Sauce which can be made ahead and stored in the fridge for weeks! The measurements are for a single serving, but note that the recipe for the Sauce (separate post) makes a decent size batch for 12 servings.

Steps:
- Prepare the protein by slicing them against the grain into 1/4" / 0.5cm slices or 2/3" / 2cm cubes.
- Heat oil in wok over high heat. When oil is hot, add Base Flavouring of choice and stir fry for about 10 seconds - don't let them burn!
- Add ingredients in order of length of time to cook, starting with those that take the longest but do not add leafy greens. Start with onion and proteins (together), followed by broccoli and other vegetables in "floret" form, followed by carrots, stems of leafy greens, zucchini, eggplant, beans and other firm vegetables, and lastly cabbage and snow peas and other vegetables that take little time to cook. DO NOT add bean sprouts or leafy greens - you will add them in the next step.
- Remove from heat, add leafy greens (leafy part of bok choy, spinach etc) and bean sprouts (if using), the noodles (use your fingers to break them up), the Sauce, water and Extra Flavours (optional).
- Return to heat, gently toss for 1 minute to heat through the noodles and for the sauce to thicken. If the water evaporates too quickly, add a bit more.
- Serve immediately.

Steps:
- Bring a medium sized saucepan of water to a boil.
- Add noodles and cook 3 minutes for dried or 1 minutes for fresh.
- Drain.
- Mix oyster sauce, vinegar, and sugar together.
- Spray a wok or skillet with vegetable oil and heat.
- Add zucchini and garlic.
- Stir fry for 3 minutes.
- Add drained noodles and continue to stir fry until noodles begin to crisp.
- Pour oyster sauce mixture into the middle of wok, and toss well; making sure all of the noodles are coated with sauce.
- Spoon onto a serving platter or individual plates and sprinkle with chopped cilantro.

- Wash the zucchini and shred with a tool. Make sure that they are similar in size.
- Add chopped green onion, eggs, sesame oil, salt and Chinese five spicy powder in. Mix well.
- Add around 1 cup of all-purpose flour in. Mix in one direction until there is no dry flour left any more. Set aside for around 15 minutes.
- Brush some oil on the surface of your pan. Heat it up. Scoop some mixture to the pan to fry until golden brown.
- Transfer out and serve directly or with the dip.

CHINESE CRISPY CAKE NOODLES
Chinese Cake Noodles is an addictive dish with crispy noodles smothered in a thick savory sauce with fried local vegetables. It has been on the menus of many local Chinese restaurants and is always a must have when eating with the ohana.

- Bring a large pot of water to a boil. Add in the noodles and let it cook until they are tender. About 7-10 minutes. Drain and rinse the noodles. Set aside to completely drain any remaining water.
- Stir fry the vegetables and meat. Heat a wok or pan over high heat. Add in 4 tablespoons of oil and let it heat until smoke becomes barely visible. Add in the toughest ingredients first to the tenderest. Stir fry them in one minute increments. Fry the onions, carrots, zucchini, bell peppers, mushrooms, and baby bok choy.
- If you have meat, remove the vegetables from the wok, and fry the meat until it has been thoroughly cooked through. Add in oil if needed. Set aside the wok.
- To make the broth, in a medium sized pot add in the chicken broth, oyster sauce, soy sauce (shoyu), sugar, white pepper, and sesame oil. Mix it well. Bring it to a boil.
- Make the slurry in the meantime by combining the water and cornstarch. Mix until all of the cornstarch has dissolved.
- After the broth starts to boil, add in the slurry and constantly stir it until has begun to thicken. Bring the heat to a simmer and cook for another 5 minutes.
- Combine the sauce with all of the stir fry ingredients. Bring it to a simmer and set aside.
- Heat a nonstick pan over medium high heat. Add in the remaining 4 tablespoons of oil. Layer on and inch of the cooked noodles. Fry it until is crispy brown on one side. Once it is brown, carefully flip the noodles to the other side. Add in more oil if necessary. Fry until it is crispy brown on one side. Set aside the noodles on a plate lined with paper towel. Repeat the same procedure until all of the noodles have been fried.
- Cut the noodles into squares. Plate the noodles and pour on the sauce and stir fry. Serve it hot and enjoy this onolicious Cake Noodles!
