MUSHROOM NOODLE SOUP
There's just something about a hot bowl of Noodle Soup when you're not feeling well. So I created the ULTIMATE comfort food - my Mushroom Noodle Soup.

Steps:
- Dice onion and add to a large soup pan/dutch oven. Saute in a splash of water or veg broth.
- Add sliced carrots and celery and saute until softened.
- Add garlic, thyme, sage, and pepper and stir until aromatic - about 3o seconds.
- Add sliced mushrooms and simmer until softened and they have released their liquid
- Add veg broth, poultry seasoning, salt, and bay leaf. Cover and increase heat to simmer.
- Let soup simmer, covered, for 30 minutes
- Remove 1/2 cup of soup broth and set aside.
- Add pasta and cook until al dente - about 10 minutes. Remove from heat.
- Add miso to the 1/2 cup soup broth and whisk until dissolved, stir into soup.
- Add salt and/or pepper to taste and serve.
ASIAN MUSHROOM SOUP
Steps:
- Heat the oil in a large saucepan over medium heat and cook the garlic and ginger until browned. Combine the broth, soy sauce, and fish sauce, if using, to the saucepan and bring to a simmer. Add the remaining ingredients except the snow peas, scallions, and sesame oil. Simmer for 20 minutes, and then add the snow peas. Cook for just a few minutes longer, until the snow peas have softened but are still bright green. Add the scallions to the saucepan, remove from heat, and ladle into serving bowls. Drizzle a bit of sesame oil over the top of each serving.

- In a large pot, combine broth, soy sauce, ginger, garlic, mushrooms, cabbage, carrots and chicken. Cover. Bring to a boil; simmer until mushrooms are soft, about 5 minutes. Stir in noodles, green onions and spinach; simmer until greens are wilted, about 2 minutes. Season.

CHINESE MUSHROOM NOODLE SOUP

Steps:
- Soak the mushrooms in 2-3 cups of hot water for 20-30 minutes (until plump), then remove the mushrooms from the water with a slotted spoon and reserve 1 cup of the liquid.
- Slice the fresh mushrooms and set aside.
- In a large saucepan, heat the chicken stock and bring to a boil.
- Add the green onions, soy sauces, oyster sauce, mushrooms, mushroom liquid, and the noodles. Return to a boil.
- Reduce the heat and cook according to noodle package instructions (just until tender).
- Serve hot.

HAMBURGER CASSEROLE WITH CRUNCHY CHINESE NOODLES
Steps:
- Preheat oven to 350 degrees F. Brown ground beef, onion, & celery. Drain meat mixture and pour in a 2-quart casserole dish.
- Add cans of mushroom & chicken soups. Add cooked rice, and 1/2 of the can of crunchy Chinese noodles. Stir until the soups and rice and meat mixture are fully stirred. Pour the remaining can of crunchy Chinese noodles over top of mixture and spread evenly.
- Cover and bake for 15 minutes. Uncover and bake an additional 10-15 minutes or until bubbly.
