CHINESE DUMPLINGS
This is an authentic recipe given to me from a friend from Malaysia. It is her Grandfather's recipe who had a store. You'll probably want to double (or triple) the recipe; they are that good. The first four ingredients are for the dough. You can use wonton wrappers instead, just roll them out a little thinner.

Steps:
- For Dough:.
- Place flour in a bowl and make a well.
- Crack eggs in a separate bowl and lightly whisk.
- Add eggs, oil, and half the water and mix together to make a dough.
- Add more water as needed. The dough should not be sticky (similar to pasta dough).
- Knead dough on a floured surface for about 10 minutes.
- Cover and set dough aside to rest for 1/2 hour.
- For filling:.
- Mix the rest of the ingredients in a bowl to combine. Do not overwork the meat.
- Cover filling and put in the refrigerator for 1/2 hour for flavors to blend.
- To assemble:.
- Roll out dough into sheets, as thin as you can but won't break. I use a pasta roller, it makes it so much easier.
- Use a large round cookie cutter (about the size of a tuna can or a little larger) to cut out the rounds.
- Fill 1 round with 1 tablespoon of the meat mixture and dampen the edges of the round with water and then seal.
- Do the rest of the rounds.
- To cook:.
- Steam the dumplings for 12 minutes.
- You can serve them as is or you can then:.
- Stir-fry them in a little peanut oil just until they get a little crispy.
- Serve them with your favorite dipping sauces.
- Enjoy.
- If you're not going to eat them right away, after you steam them let them cool off and place them in a zip top bag and refrigerate for up to 3 days.

- 1. MAKING THE DOUGH: Pour the flour into a mound on a clean work surface. Make a deep, wide well in the center and pour in the cold water. Stir with your fingers staying in the center at first and being careful that the water doesn't breach the wall.
- 2. Little by little using your hand and a bench knife mix in flour from the sides until the dough starts to come together.
- 3. Alternatively put the flour in a medium bowl, make a well add the water and stir with a spoon and then with your hands
- 4. If dough remains in shreds sprinkle in additinal water one teaspoon at a time until it begins to stick together. DON'T add too much water or the dough will be difficult to work
- 5. Knead the dough 5 minutes to form a smooth firm elastic ball. ( If you began the dough in a bowl lightly dust a clean dry surface with flour before kneading ). The dough should not be sticky and should bonce back when pressed with finger tips.
- 6. Divide in half with a bench knife and roll into two 6 inch logs. Sprinkle each log evenly with flour. Cover with a clean towel and let rest at least 30 minutes at room temperature before rolling and filling.
HOW TO MAKE CHINESE DUMPLINGS (JIAOZI)
How to make Chinese dumplings from scratch, with pork and chive as filling

- Mix a small pinch of salt with flour, dig a hole in center and then stir the water in. Mix the flour with water with chop-stickers during the process so you can adjust the water amount if necessary. Then knead the dough for 8-10 minutes with a stand mixer or by hand until the dough is almost smooth. Cover and rest for 15 minutes. Then re-knead the dough for 2-3 minutes so we can get a very smooth dough. Cover and continue resting for 1 hour.
- When the dough becomes soft and smooth, cut into halves and knead each half into a round ball. Take one half and dig a small hole in center. Then shape it to a large circle round. Cut so we will end up a long log. Shape the log around 3cm in diameter. Divide the long log into small dumpling dough pieces (each around 10g). Dust each of them so they will not stick together. Press one down and then roll it into a wrapper around 10cm in diameter. You can refer to the video for the technique.
- Get your assistants here and begin to wrap the dumpling at the fastest speed, because the wrappers will get dried out soon and become harder to seal together.
- In a mixing bowl, add ground pork, a small pinch of salt, egg, light soy sauce, white pepper, oyster sauce grated ginger and salt. Then place the green onion on top and drizzle hot oil on green onions. This helps to improve the aroma of the green onion.
- Stir the filling in one direction for 2-3 minutes until getting a paste texture and the filling becomes quite sticky. Set aside for 1 hour or cover with plastic wrapper and overnight.
- Finely chop chives and mix with 2 tablespoons of sesame oil or other vegetable oil. Mix chive with pork before wrapping.
- Brush 1 tablespoon of oil in a pan (nonstick pan recommended for beginners), place the dumplings in. Pleats side up.
- Heat over medium fire until one side becomes browned. Swirl around 1/2 cup of water and then cover the lid immediately. Continue heating until all of the water is evaporated.
- Slow down your heat and heat until the bottom becomes crispy and golden brown.
- Heat a large pot of water to a boiling, add a small pinch of salt. Then cook the dumplings in batches. Slightly move the dumplings with a large ladle or scoop so they will not sticky to the bottom. Then the water begins to boil again, add around 1/4 cup of cold water. Repeat once. When the dumplings become transparent and expand because of the air inside. Transfer out.

- Dig a small hole in the center of the ball. Shape it to a large circle round. Cut so we will end up a long log.
- Shape the log around 3cm in diameter. Divide the long log into small dumpling dough pieces (each around 10g). Dust each of them so they will not stick together.
- Before rolling out your dumpling wrappers, dust your working surface again. Take one piece of dough and press it to a round disc. Rotate the wrapper when moving your rolling pin. Repeat the process, rotate the wrapper-roll and rotate the wrapper-roll. The wrappers will have thicker center and thinner edges naturally. You can refer to this video for the process.
- This process might be quite difficult at the very beginning. Just keep trying. You will end up with perfect homemade dumpling wrappers.

PORK CHINESE DUMPLINGS
For the making of about 60 Chinese dumplings.

- For the dough:
- In a large bowl, combine the flour, 2 teaspoons of salt and the warm water (not boiling) and mix until smooth.
- Roll out dough on a floured surface and knead until smooth. Knead for about 10 minutes.
- Return the dough to the bowl, cover with a cloth and let it rest for 1 hour in a cool, dry place.
- For the filling:
- In the meantime, work on the filling.
- Chop the spring onion, garlic and ginger finely, then do the same with the cabbage and grate the carrots.
- Transfer everything to a pan with olive oil and let it cook for about 10 min, adding salt & pepper and 1 tbsp of soy sauce. And let cool.
- In the meantime in a bowl with the minced pork add 2 tbsp of soy sauce, salt & pepper and mix until smooth.
- Finally add the vegetables to the pork and mix well, until the mixture is smooth. To make Chinese dumplings:
- There are several ways to work the dough, I'll show you my method.
- Take the dough and cut it into 4 equal parts.
- Form a ball, and roll it out on a floured surface with the help of a rolling pin, making a sheet about 2 mm thick.
- Help yourself with a round shape or with a glass to cut small disks.
- With the rolling pin, thin only the edges of the disc of dough while you rotate it with the other hand. This way it will be thicker in the center, where the filling is placed, and thinner at the edges, which will be attached during the closing.
- At this point you can form the dumplings. Add about 1 tablespoon of filling in the center of your discs.
- Close them with your finger, fold half of the wrapper over the filling and, using your fingers, crimp the edges to seal. Repeat with the remaining fillings and wrappers.
- Your Chinese dumplings are ready to cook!

HOMEMADE DUMPLING WRAPPERS (饺子皮)

- Add water to the flour gradually. Gently mix with a pair of chopsticks / spatular until no more loose flour can be seen. Then combine and knead with your hand. Leave to rest covered for 10-15 minutes then knead it into a smooth dough (see note 2).
- Cover and rest the dough again for 30-60 minutes until it becomes soft (Chinese cooks would say "as soft as an earlobe").
- Make a loop with the dough then divide it into four parts. Roll one part (cover the rest to prevent them from drying out) into a rope then cut into 7-8 equal sections.
- Press each piece into a small disc with the palm of your hand. Then use a rolling pin to flatten it into a thin disc. Dust with flour if the dough sticks (Please refer to the video below).
- Use the fresh wrappers immediately. If you wish to freeze them for later, sprinkle extra flour in between each wrapper. Pile them up then place into an air-tight plastic bag (squeeze out the air as much as possible). Defrost in the fridge then use them straightaway.

XIAO LONG BAO RECIPE (SOUP DUMPLINGS)
Steps:
- Gather the ingredients.
- Bruise the scallion stalk by pounding it with the flat side of your knife.
- In a small pot over medium-high heat, bring 1 cup of low-sodium chicken broth, dried shiitake mushroom, ginger slice, and scallion to a simmer. Simmer for 5 minutes, submerging the mushroom occasionally.
- Mix 3 packets of plain gelatin with the remaining 3/4 cup chicken stock in a heat-safe bowl.
- Remove solids from simmering broth and pour it into the bloomed gelatin, whisking to incorporate thoroughly. Pour into a sheet tray and refrigerate until set, about 45 minutes. While setting, prepare the dough and mince.
- Gather the ingredients.
- Heat 1/2 cup of water to 195 F in a small saucepan. If you don't have a thermometer, it should be steaming and on the verge of simmering with small bubbles rising to the top.
- Meanwhile, place the 3 1/2 cups of flour and salt in a large mixing bowl and stir to combine. Add the 1/2 cup of 195 F water and stir with a wooden spoon.
- Once the initial portion of water has been absorbed, add the room temperature water. Knead until all the flour has been incorporated. If the dough is too dry, add more water, 1 teaspoon at a time.
- Add oil and knead again until a smooth dough ball has formed, 3 to 5 minutes. The dough should be soft but not sticky.
- Cover bowl of dough with plastic wrap and rest for 30 minutes.
- Gather the ingredients.
- While the dough is resting, prepare the mince. Place the meat in a large bowl and add the scallion, garlic, ginger, Shaoxing wine, sesame oil, and dark soy sauce. Mix until uniformly combined.
- Add the salt, sugar, and white pepper, and mix vigorously, kneading and crushing the mince through your fingers.
- Your mince will be ready when the texture is paste-like, and it leaves a film on the walls of the bowl. Set aside and retrieve the aspic.
- Take your jellied aspic and cut it into about 4 sections. Julienne the sections , and then brunoise the julienne to achieve small cubes. A rough chop followed by a mince is acceptable as well.
- Add your aspic to the mince in 3 to 4 portions, mixing to incorporate. Cover with plastic wrap and refrigerate until dough is ready for use.
- Using a bench scraper or knife, divide the dough ball into 4 even pieces. Take one quarter section (cover the remaining sections with a kitchen towel), and using both hands, grasp it by its midsection. Gently massage it with an outward motion to elongate the section into a cylinder.
- Place the cylinder of dough on your work surface. Starting from the midsection and working your way outwards, roll the cylinder into a uniform, 1-inch-diameter rope.
- Prepare your dumpling skin by cutting 3/4-inch portions off of the rope using your first piece as a guide for the remaining ones. Each piece should weigh about 15 grams.
- Flatten each piece by applying firm pressure with the palm of your hand.
- Use your rolling pin to roll each piece into a 3 1/2-inch diameter disc, aiming for a thinner edge and thicker center. Lightly dust the work surface with flour if the dough starts to stick. Proceed to fill and fold the dumpling skins as described below and then repeat cutting/rolling out the dumpling skins and filling/folding them, one section of dough at a time.
- Place a dumpling skin in the palm of your hand and add a tablespoon of the filling into the skin. Depress the filling into the skin with your spoon, cupping your hand so that the filling is married to the dumpling skin. Repeat with remaining dumpling skins.
- To form the Xiao Long Bao, place your prepared dumpling skin in the palm of your left hand. With your right thumb and middle finger, grasp the edge of the dumpling skin at about 2 o'clock (if it were a clock).
- With your left thumb gently depressing the filling, twist your left wrist in a clockwise motion. This will create a pleat for your right hand to seal. Continue pleating all the way around the top of the dumpling.
- As you reach the end of the pleating, you can release the grasp of your left thumb, while continuing to twist and seal the pleats with your right hand. It won't be pretty at first, but as you practice the concept described above, it will become natural.
- Don't worry about the look-the important part is the seal, so just be sure to pinch any gaps shut. At this point, you can freeze your dumplings on a parchment-lined sheet tray if not cooking right away.
- Bring your steamer to a full boil. Place dumplings in your steamer basket. To prevent your dumplings from sticking to your steamer, cut a piece of parchment paper to size and perforate with a fork. You can also use a leaf of napa cabbage, or a light coating of oil.
- Cook for 6 minutes at a full steam (8 minutes if steaming from frozen). Rest for 2 minutes before consuming. Serve steamed Xiao Long Bao with a dipping sauce of Chinkiang vinegar (Chinese black vinegar) and a pinch of raw ginger julienne.
