Meet the Cook: For birthday parties or outdoor barbecues, this is a hit. At times, I substitute strawberry or Neapolitan for the vanilla ice cream...either works fine, too. My children used to love eating out at Mexican restaurants just so they could order fried ice cream for dessert. When I came upon this recipe, I copied it down quickly! -Darlene Brenden, Salem, Oregon

1 quart vanilla ice cream
1/4 cup heavy whipping cream
2 teaspoons vanilla extract
2 cups sweetened shredded coconut, finely chopped
2 cups finely crushed cornflakes
1/2 teaspoon ground cinnamon
CARAMEL SAUCE:
1 cup sugar
1/2 cup butter, cubed
1/2 cup evaporated milk
Oil for deep-fat frying

Steps:

  • Using a 1/2-cup ice cream scoop, place eight scoops of ice cream on a baking sheet. Cover and freeze for 2 hours or until firm. In a bowl, combine whipping cream and vanilla. In another bowl, combine coconut, cornflakes and cinnamon. , Remove scoops of ice cream from freezer; wearing plastic gloves, shape the ice cream into balls. Dip balls into cream mixture, then roll in coconut mixture, making sure to coat entire surface. Place coated balls on a baking sheet. Cover and freeze at least 3 hours or until firm. , For caramel sauce, heat sugar in a heavy saucepan over medium heat until partially melted and golden, stirring occasionally. Add butter. Gradually add milk, stirring constantly. Cook and stir for 8 minutes or until sauce is thick and golden; keep warm. , Heat oil in an electric skillet or deep-fat fryer to 375°. Fry ice cream balls until golden, about 30 seconds. Drain on paper towels. Serve immediately with caramel sauce.

1 cup superfine sugar
1 ¼ cups heavy cream
4 bananas, peeled and halved lengthwise

Steps:

  • Melt butter in a large, heavy skillet over medium heat. Stir in sugar and cook, stirring, until sugar is melted and light brown. Slowly stir in the cream (mixture will bubble up).
  • Let mixture boil 1 minute, then reduce heat to low. Place the bananas in the pan and cook until heated through, about 2 minutes. Serve hot.

10 slice bread (white or brown)
½ cup maida
¼ cup corn flour
1 cup water
1 cup breadcrumbs (panko)
oil (for deep frying)

Steps:

  • firstly, scoop large-sized ice cream. you can take any flavour of ice cream, however, i have used vanilla ice cream.
  • using a cling wrap try to shape to a round shape.
  • freeze for at least 5 hours or until it turns firm.
  • after 5 hours, you can wrap it with bread. for that trim the sides of bread.
  • flatten slightly using a rolling pin.
  • now brush the sides of the bread with water. this helps to seal tight.
  • now place the ice cream ball in the centre.
  • and cover with another bread slice and seal the sides. you can brush more water if it is difficult to seal.
  • now shape to a round shape and wrap in a cling wrap.
  • freeze for at least 5 hours so that the ice cream and bread are frozen.
  • now to prepare the slurry, in a small bowl take ½ cup maida, ¼ cup cornflour and 1 cup water.
  • prepare a smooth lump-free batter by mixing well.
  • now take the bread-rolled ice cream and dip it in the slurry.
  • immediately roll into the breadcrumbs making sure to coat uniformly. you can double coat the breadcrumbs to get extra crispiness for pakoda.
  • freeze for 5 hours again to set completely. this is the final freezing stage.
  • after 5 hours of freezing, deep fry in hot oil. make sure to use a deep vessel as the whole ice cream ball must be dipped in completely.
  • fry for just 30 seconds and make sure it turns golden brown. over frying will melt the icecream from inside.
  • finally, enjoy fried ice cream with chocolate sauce.

1 madeira cake
4 scoops vanilla ice cream
2 eggs
1 cup dry breadcrumbs
canola oil (for deep frying)
2/3 cup cream
3/4 cup brown sugar
50 g butter
1 teaspoon vanilla extract

Steps:

  • To make caramel sauce:.
  • Combine cream, sugar, butter and vanilla extract in a saucepan.
  • Cook stirring for 5 minutes until sugar dissolves.
  • Bring to boil, reduce heat and simmer for 5 minutes until sauce thickens.
  • To make ice-cream:.
  • Cut cake into 8 1cm slices.
  • Lay 1 slice cake in your hand.
  • Top with scoop of ice cream.
  • Place second piece of cake over top of ice cream and using your hands mould cake to form a ball around ice cream.
  • Transfer to a tray and place in freezer immediately. Repeat with all ice cream and cake.
  • Allow balls to stand in freezer for at least 1 hour.
  • Beat eggs in shallow bowl.
  • Place breadcrumbs onto a plate.
  • Working with one ball at a a time, roll in egg then coat with breadcrumbs and refreeze.
  • Freeze for at least 2 more hours or overnight.
  • Remove balls from freezer, stand 5 minutes.
  • Pour oil into saucepan. Heat and it is ready when a piece of bread dropped in turns brown within 15 seconds.
  • Lower 2 ice cream balls in at a time into the oil.
  • Cook for 1 minute until golden and drain on paper towel.
  • Serve immediately drizzled with caramel sauce.

This recipe comes from the Australian Women's Weekly Chinese cooking class cookbook. It does work best if you have a deep freeze that you can put the balls into for a couple of days once they have been coated twice.

2 pt vanilla ice cream
all purpose flour
2 eggs
1/4 c milk
bread crumbs, dry
oil for deep-frying (clean)
CARAMEL SAUCE
3 oz butter
1 c brown sugar, firmly packed
1/2 c water
3 Tbsp grand marnier or conintreau
1 Tbsp cornstarch
1/2 c heavy cream

Steps:

  • 1. It is important when making these ice-cream balls to have everything as cold as possible. Ice-cream must be very hard and should be a good quality full cream ice-cream. Put a cookie sheet into freezer before starting to make the ice-cream balls, so it too is very cold. remove ice-cream container from freezer, scoop ice-cream into balls with ice-cream scoop, put on to prepared tray, return to freezer until hard.
  • 2. Working very quickly, coat one or two ice-cream balls lightly in flour, dip in combined beaten eggs and milk, then coat firmly with bread crumbs. Place immediately on tray in freezer; repeat with remaining ice-cream balls working as above. Freeze the ice-cream until very hard, then repeat egg & bread crumbing to give firm coating. They can now be left for several days until you wish to serve them.
  • 3. To fry, place ice-cream balls, two at a time into deep hot oil, fry for 30 seconds or until golden brown, place on absorbent paper. Serve immediately with hot Caramel Sauce.
  • 4. CARAMEL SAUCE: Put butter & sugar into pan, stir over heat until butter has melted, add combined remaining ingredients, stir over low heat until sugar dissolves, increase heat, bring to boil. Reduce heat, simmer three minutes, stirring constantly.
