EASY CLASSIC CHINESE BEEF STIR FRY



Easy Classic Chinese Beef Stir Fry image

Made with a classic Chinese stir fry sauce, this is a great recipe to use up whatever leftover greens you have in the fridge! Instead of making this Sauce, you can use my All Purpose Stir Fry Sauce (see Note 1) If using economical beef, consider tenderising it the Chinese way ("velveting", simple, highly effective, see Note 5!)

3 tsp cornstarch / corn flour*
2 tbsp + 1/3 cup water (, separated)
2 tbsp soy sauce ((Note 2)*)
1 tbsp oyster sauce*
2 tbsp Chinese cooking wine OR Mirin ((Note 3)*)
1 tsp white sugar*
1/2 tsp sesame oil ((optional)*)
Dash of black pepper*
2 tbsp peanut oil
1 garlic clove (, crushed)
7 oz / 200 g beef (, good quality, thinly sliced (Note 4))
1/2 small onion (, sliced (yellow, brown or white))
1/2 red bell pepper / capsicum (, sliced)
1 small carrot (, halved lengthwise and sliced thinly on the diagonal)
3 baby pak choy / bok choy (, quartered lengthwise)
2 stems scallion / shallots (, cut into 1.5"/3cm pieces)
Steamed white rice
Sesame seeds ((optional))
Fresh cilantro / coriander ((optional))

Steps:

  • Combine the cornstarch and 2 tbsp of water in a small bowl, mix until smooth.
  • Mix in remaining Sauce ingredients EXCEPT the 1/3 cup water.
  • Place the beef and 2 tbsp of Sauce in a bowl and mix gently. Set aside for 15 minutes.
  • Add 1/3 cup water into the remaining Sauce. Set aside.
  • Heat oil in wok over high heat. Add garlic and cook for 15 seconds.
  • Add onion and cook for 1 minute.
  • Add the beef and cook until it changes colour from red to light brown but not cooked through.
  • Add bell pepper and carrots and stir fry for 30 seconds.
  • Add Sauce and cook for 30 seconds.
  • Add pak choy and scallions/shallots and cook for a further 1 minute until the Sauce is thickened.
  • Remove from heat immediately.
  • Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice! Garnish with sesame seeds and cilantro, if using.

Toss up a whole mix of flavors with this fragrant Chinese Beef Fried Rice. When done right, your rice will obtain the distinct "wok-hey" flavor, a charred taste that's almost like umami to the taste buds. The medium-high heat of the wok is necessary to drive out the moisture of your rice grains. If you can use overnight rice for this dish, it will be even better. Pair it with a herbal soup or Chinese tea to counter balance the oiliness of this dish.

400 g beef fillet (from the tenderloin tail cut into bite-sized pieces)
¼ tsp salt
1 tbsp water
1 tsp dark soy sauce (mushroom flavored preferred)
1 tsp cornstarch
1 tsp oil
1 tbsp hot water
¼ tsp sugar
½ tsp sesame oil
1½ tbsp regular or light soy sauce
2 tsp dark soy sauce
fresh ground white pepper
5 cups cooked short grain rice (preferably leftover rice)
3 tbsp canola oil (divided)
2 eggs (beaten)
1 medium onion (diced)
3/4 cup peas
2 spring onions (finely chopped)
1 cup cooked peas
4 tbsp chili flakes (crushed)
2 tsp five spice powder
3 tbsp toasted sesame seeds
1 tsp ground sichuan peppercorn
1 whole star anise
2 bay leaves
1 cup vegetable oil
1 piece ginger (thinly sliced)
1 tsp salt

Steps:

  • Marinate beef. First, combine the beef, salt, water, dark soy sauce, cornstarch, and oil in a bowl and stir until well-incorporated. Set aside.
  • Make rice sauce. Next, combine the hot water, sugar, sesame oil, soy sauces and white pepper in a small bowl. This is the sauce that you'll be adding to the rice, and it's much easier to have it combined and ready to go before you start cooking.
  • Scramble eggs. Heat your wok over medium high heat, add 1 tbsp of oil, eggs, and scramble them until just cooked. You can start scooping them up when they look like they are almost done and set aside.
  • Cook beef. Heat the wok until just smoking and spread 1 tablespoon oil around your wok. Add the marinated beef in one layer, and let it sear for 20 seconds. Next, stir fry the beef until about 70% done. Transfer the beef back to the marinade bowl, and set aside.
  • Cook rice. With the wok over medium high heat, add the last tbsp of oil, and sauté the onions until translucent for about 2 minutes. Add the rice, using a metal spatula to flatten out and break up any large clumps.
  • Add in meat and eggs. Once the rice is warmed through, add the sauce mixture. The rice should be completely hot by now. Next, add the beef and any juices from the bowl you set aside earlier, and stir fry for another minute. Add the eggs, breaking up any large clumps, peas, and the scallions. Continue stir-frying for another 30 seconds. At this point, taste the rice to see if it needs a little more salt, soy sauce, or white pepper and season accordingly.
  • Make chilli oil. To make the oil, combine all the spices in a bowl. Heat the oil till smoking and add the ginger pieces to infuse the oil. Pour the oil over the spices and mix well.

Steps:

  • Pour ¼ cup soy sauce, 1 tablespoon sesame oil, 1 tablespoon of garlic, the brown sugar, water, and cornstarch over the sliced flank steak. Mix well, then let marinate in the refrigerator for at least 1 hour.
  • In a wok or deep skillet, cook the beef and marinade thoroughly, then set aside.
  • In the same pan, heat the oil over medium heat. Sauté the onion, remaining tablespoon of garlic, and broccoli until the onion is translucent. Push the cooked vegetables to the side of the pan.
  • Beat the eggs and pour into the empty half of the pan. Scramble the eggs and mix with the rest of the vegetables.
  • Add the rice, remaining 3 tablespoons of soy sauce, remaining tablespoon of sesame oil, pepper, and the cooked beef. Mix well and let the rice cook until slightly crispy.
  • Serve garnished with scallions.

10 ounces flank steak ((285g, cut into bite-sized pieces))
¼ teaspoon salt
1 tablespoon water
1/8 teaspoon baking soda ((optional, but good for tougher cuts of meat))
1 teaspoon dark soy sauce ((mushroom flavored preferred))
1 teaspoon cornstarch
1 teaspoon oil
1 tablespoon hot water
¼ teaspoon sugar
½ teaspoon sesame oil
1½ tablespoons soy sauce
2 teaspoons dark soy sauce
½ teaspoon MSG ((totally optional!))
Fresh ground white pepper
5 cups cooked rice
3 tablespoons canola oil ((divided))
2 eggs ((beaten))
1 medium onion ((diced))
3/4 cup peas
1 scallion ((chopped))
1 tablespoon Shaoxing wine

Steps:

  • First, combine the beef, salt, water, baking soda, dark soy sauce, cornstarch, and oil in a bowl and stir until well-incorporated. Set aside. (We added a bit of water to marinate the beef, which generally is a no-no for beef...but for this fried rice dish, it keeps the small morsels of beef juicy and tender!)
  • Next, combine the hot water, sugar, sesame oil, soy sauces, MSG (if using), and white pepper in a small bowl. This is the sauce that you'll be adding to the rice, and it's much easier to have it combined and ready to go before you start cooking.
  • Take your cooked rice and fluff it with a fork or with your hands (you can rinse your hands in cold water if the rice starts sticking to them). If you are using cold leftover rice, try to break up the clumps as best as possible.
  • Heat your wok over medium high heat, add 1 tablespoon of oil and the eggs, and scramble them until just cooked. You can start scooping them up when they look like they are almost done. Transfer them back into the same bowl you mixed them in and set aside. They will continue to cook in the bowl and you will cook them again in the rice.
  • Heat the wok until just smoking and spread 1 tablespoon oil around your wok. Add the marinated beef in one layer, and let sear for 20 seconds. Next, stir fry the beef until about 70% done. Transfer the beef back to the marinade bowl, and set aside.
  • With the wok over medium high heat, add the last tablespoon of oil, and sauté the onions until translucent, about 2 minutes. Add the rice, using a metal spatula to flatten out and break up any large clumps. If the rice is cold from the refrigerator, continue stir-frying until the rice is warmed up, about 5 minutes. Also, sprinkling a little water on large clumps of rice will help break them up more easily.
  • Once the rice is warmed through, add the sauce mixture. Stir the rice with a scooping motion until the grains are evenly coated with sauce. The rice should be completely hot by now. Next, add the beef and any juices from the bowl you set aside earlier, and stir fry for another minute.
  • Add the eggs, breaking up any large clumps, peas, and the scallions. Continue stir-frying for another 30 seconds. Push the rice into the middle of the wok to let the perimeter of the wok heat up. After about 20 seconds, pour 1 tablespoon of Shaoxing wine around the perimeter of the wok. Stir-fry for another 20 seconds. Adding the wine using this method gives the dish a little extra wok hei! At this point, taste the rice to see if it needs a little more salt, soy sauce, or white pepper and season accordingly.
  • Serve immediately, and, if you're like us, don't forget some homemade chili oil!

This Chinese fried rice has the flavor those other recipes are missing. Tastes like takeout. I want to dedicate this dish to Bergy, whose recipe "AM & B's Indonesian Mehoon" has inspired this dish. Make sure you season your rice with salt before it cooks. Add some butter to the cooking water, as well. Other seasonings should be added before you cook, as well, so it has time to get inside the rice. If you like sesame flavor, add 1 tsp. of it after you add the green onions, but do not use it as a cooking oil because it easily burns.

3/4 cup finely chopped onion
2 1/2 tablespoons oil
1 egg, lightly beaten (or more eggs if you like)
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or 8 ounces chicken, chopped
1/2 cup finely chopped carrot (very small)
1/2 cup frozen peas, thawed
4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped

Steps:

  • Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
  • Allow wok to cool slightly.
  • Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
  • Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.
  • Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
  • Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
  • Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.
  • Set out additional soy sauce on the table, if desired.

  • Fry the beef strips in a wok for three minutes. Once cooked, place in a dish to the side and begin cooking instructions.
  • Heat oil in a wok, on high heat until hot.
  • Pour beaten egg into wok, stirring constantly. When egg has cooked a little into a scramble (about a minute or two) add frozen peas, sliced fried beef strips and stir for a minute.

2 Tbsp soy sauce
1/2 tsp sugar
1 Tbsp vegetable oil
2 eggs, well beaten
1/2 lb ground beef
2 scallions, chopped
1 tsp fresh ginger, minced
1 clove garlic, minced
2 c cooked rice, cold

Steps:

  • 1. Combine soy sauce, sugar and salt and pepper to taste in a small bowl and set aside.
  • 2. Heat oil in a heavy nonstick skillet over medium high heat. Cook eggs about 45 seconds, stirring constantly, until eggs are just set. Transfer eggs to a bowl and set aside.
  • 3. Add ground beef and next 3 ingredients to same pan over medium heat. Sauté about 3 minutes, stirring often to break up meat, until browned.
  • 4. Stir in ginger and garlic and cook 1 minute. Discard excess fat.
  • 5. Increase heat to high and add rice. Stir-fry about 1 minute, until heated through.

1/2 cup leftover broccoli from Crispy Orange Beef with Broccoli, recipe follows
1/2 cup bean sprouts
1/2 cup leftover beef, from Crispy Orange Beef with Broccoli
2 cups leftover cooked rice from Crispy Orange Beef with Broccoli
3 tablespoons soy sauce
Freshly ground black pepper
1 scallion, thinly sliced
3 cups white rice
1 1/4 pounds beef chuck steak
1/2 cup canola oil
1/4 cup cornstarch
3/4 cup orange marmalade
1 tablespoon chopped garlic
2 tablespoons white vinegar
1 tablespoon peeled and chopped ginger
2 tablespoons soy sauce
1/2 cup orange juice
1 head broccoli, cut into florets, stems sliced into 1/4-inch rounds

Steps:

  • In a large wok or skillet over medium heat add 1 tablespoon of canola oil. Whisk the egg yolks in a small bowl and pour them into the hot pan. Cook until set, about 1 minute. Remove them from the pan to a plate and set aside.
  • Return the pan to the stove over high heat and add the remaining 1 tablespoon of oil. Add the broccoli and bean sprouts, and stir-fry until heated through, about 1 minute. Stir in the beef, rice and soy sauce. Season with pepper, to taste, and add the cooked egg. Toss and cook the mixture until hot, about 2 minutes.   • Thinly slice the chuck steak, about 1/4-inch thick, across the grain. Cut the slices into 3-inch long strips.
  • Heat the oil in a wok or large skillet over high heat. Toss the beef in the cornstarch and shake off excess. Fry the beef in 2 batches in the hot oil, turning once, until crispy and golden, about 2 minutes on each side. Remove the beef from the pan and set aside on paper towel lined plate. Carefully drain the oil from the wok or skillet.
  • In a medium bowl add the marmalade, garlic, vinegar, ginger, soy sauce and orange juice and whisk until well combined. Add to the wok, over high heat, and cook for 2 minutes. Stir in the broccoli, reserving about 1 1/2 cups for round 2 recipe, Wonton Soup and online round 2 recipe, Beef Fried Rice. Cook the broccoli until slightly tender and the sauce is thick, about 3 to 5 minutes. Stir in the beef, then transfer to a serving platter. Serve immediately with the white rice.
