¼ cup distilled white vinegar
¼ cup brown sugar
1 teaspoon garlic powder

Steps:

  • Put chicken breast halves in a slow cooker.
  • Whisk barbeque sauce, vinegar, brown sugar, garlic powder, and red pepper flakes together in a bowl until the sugar dissolves; pour over the chicken.
  • Cook on Low for 4 to 6 hours.

The marinade for this chicken is based on the famous Chinese BBQ Pork (Char Siu), a very popular recipe on my blog! It's sweet, savoury, sticky, laced with Chinese Five Spice. Add your own touch like ginger and chilli for a kick! The red food colouring is optional - it gives the chicken the reddish tinge that Char Siu is known for. Recipe VIDEO below, MARINATING TIME: 3 - 24 hrs.

2 garlic cloves (, minced)
2 tsp brown sugar
1 1/2 tbsp honey
1 1/2 tbsp hoisin sauce
2 tsp oyster sauce
1 ½ tbsp light soy sauce ((or all purpose))
1/2 tsp Chinese five spice powder (Note 1)
1/2 tsp sesame oil ((not critical))
Few drops red food colouring (, optional)
750 g / 1.5lb chicken thigh fillets (, skinless boneless (or breast))
1 tbsp vegetable oil
10 - 12 bamboo skewers (, soaked in water for 1 hour (optional))
Green onions / scallions (, finely sliced, for garnish (optional))

Steps:

  • Place Marinade ingredients in a ziplock bag or bowl and mix to combine.
  • Add chicken and mix to coat. Marinade for 3 - 24 hours.
  • Optional: Cut chicken into bite size or large pieces and thread onto skewers. Use 1 skewer for small pieces, 2 for large, like pictured in post.
  • Heat half the oil in a heavy based skillet over medium high heat, or BBQ on medium (if using grill side, brush oil on bars).
  • Remove chicken from marinade (RESERVE for basting) and place in the skillet - cook in 2 batches, don't crowd the pan. Cook for 4 minutes then turn.
  • Use the Marinade to baste the cooked side of the chicken. After 3 minutes, turn the chicken over so the basted side is now cooking again - cook for 1 minute.
  • Baste the chicken, then turn again and cook for 45 sec - 1 min.
  • Transfer chicken to a plate, cover loosely with foil and rest for 5 minutes.
  • Serve, garnished with green onions / scallions if using!

2 tablespoons vegetable oil
6 chopped green onions ((green and light part))
1/3 cup grated ginger ((with any juice))
2 minced garlic cloves
¼ cup brown sugar
1 cup ketchup
½ cup water
2/3 cup hoisin sauce
¼ cup rice vinegar ((I used seasoned, but unseasoned is also ok))
2 tablespoons soy sauce
6 boneless chicken breasts
1 1/4 teaspoons garlic powder
salt and pepper to season chicken breast

Steps:

  • In a medium pot over medium heat warm oil and add in green onions.
  • Cook onions until softened and slightly brown, about 6 minutes.
  • Add in garlic and ginger, then cook an additional 30 seconds before adding remaining sauce ingredients.
  • Bring sauce to a simmer and lower heat to medium low.
  • Simmer for 5 minutes. Remove pot from heat and let cool to thicken.
  • Preheat oven to 375 degrees Fahrenheit.
  • Season chicken breasts with salt, pepper, and garlic powder. Place on a greased baking sheet.
  • Bake for 30 minutes.
  • After 30 minutes, remove pan from oven and generously brush ginger barbecue sauce over chicken before returning to the oven for 10 more minutes or until chicken is juices run clear and barbecue sauce is sticky.
  • Internal temperature of the chicken should be 165º Fahrenheit.
  • Slice and serve over rice, veggies or on a salad.
  • Top the chicken with sesame seeds and green onions if desired.

Steps:

  • Preheat the oven to 375 degrees Fahrenheit.
  • Bend the wings and tuck the tips under the large joint to form a triangle.
  • Season the chicken wings on both sides with salt and pepper.
  • Set wings in a single layer in a large roasting or baking pan. Use two pans if you have to.
  • Bake the chicken wings, turning once, until browned, about 45 minutes.
  • Remove the wings from the oven.
  • Pour off all the fat from the pan. If necessary, blot the wings with paper towels.
  • Return the wings to the pan.
  • Pour the barbecue sauce over the chicken wings and return to the oven.
  • Bake for 10 minutes.
  • Turn the wings over and bake 10 minutes longer.

5 -6 minced fresh garlic cloves
1 piece fresh ginger, minced
1 cup hoisin sauce
1/2 cup sherry wine
1/2 cup soy sauce (low-sodium works too-)
1/2 cup sugar
1/2 teaspoon Chinese five spice powder
3 teaspoons red food coloring

Steps:

  • Mix all ingredients in a bowl,( or a jar with a tight fitting lid), until the sugar is dissolved. Refrigerate until you are ready to use it.
  • *You can set aside some for use as a dipping sauce, but you must first bring it to a full rolling boil, over med. heat, then reduce the heat to low, and simmer until it is thick, and slightly reduced.
  • **When you are ready to cook, marinate meat for 4-24 hours, turning once every two hours. You then grill or broil the meat until it is cooked through,(and slightly charred- this adds to the flavor!).

1 cup ketchup
1/4 cup apple cider vinegar
1/4 cup brown sugar, packed
1 tablespoon molasses
1 tablespoon Worcestershire sauce
1 teaspoon ground mustard
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon ground black pepper
4 boneless, skinless chicken breasts
2 tablespoons chopped fresh parsley leaves

Steps:

  • WHISK together ketchup, vinegar, brown sugar, molasses, Worcestershire, mustard, garlic powder, onion powder, pepper and 1/4 cup water. Reserve 1/3 cup and set aside. COMBINE ketchup mixture and chicken in a gallon size slider bag or large bowl; marinate for at least 1 hour to overnight, turning the bag occasionally. Drain the chicken from the marinade. PREHEAT grill to medium high heat. MAKE drainage holes in a sheet of Reynolds Wrap® Non-Stick Foil with a grilling fork. Place foil sheet on grill grate with non-stick (dull) side facing up. PLACE chicken on foil and cook, flipping once and basting with reserved 1/3 cup marinade until cooked through, about 10-12 minutes on each side. SERVE immediately, garnished with parsley, if desired.

CHAR SIU (CHINESE BBQ PORK)

Char siu, or Chinese BBQ Pork, is a delicious Cantonese roast meat. Make authentic Chinatown char siu at home with our restaurant-quality recipe!

3 pounds boneless pork shoulder/pork butt ((select a piece with some good fat on it))
¼ cup granulated white sugar
2 teaspoons salt
½ teaspoon five spice powder
¼ teaspoon white pepper
½ teaspoon sesame oil
1 tablespoon Shaoxing rice wine
1 tablespoon soy sauce
1 tablespoon hoisin sauce
2 teaspoons molasses
1/8 teaspoon red food coloring ((optional))
3 cloves finely minced garlic
2 tablespoons maltose or honey
1 tablespoon hot water

Steps:

  • Cut the pork into long strips or chunks about 2 to 3 inches thick. Don't trim any excess fat, as it will render off and add flavor.
  • Combine the sugar, salt, five spice powder, white pepper, sesame oil, wine, soy sauce, hoisin sauce, molasses, food coloring (if using), and garlic in a bowl to make the marinade (i.e. the BBQ sauce).
  • Reserve about 2 tablespoons of marinade and set it aside. Rub the pork with the rest of the marinade in a large bowl or baking dish. Cover and refrigerate overnight, or at least 8 hours. Cover and store the reserved marinade in the fridge as well.
  • Preheat your oven to 'bake' at 475 F (246 C) with a rack positioned in the upper third of the oven. (If you only have a convection oven, keep in mind the oven not only heats more quickly, your char siu will roast faster than what we have described here). It's amazing how oven temperatures can vary-from model to model, in different spots in the oven, and in how ovens pre-heat and maintain heat. Using an oven thermometer to double-check the actual oven temperature is a great safeguard to monitor your food (I say double-check because even oven thermostat calibrations vary and can sometimes be incorrect). Regardless, be sure to check your char siu every 10 minutes, reducing or increasing the temperature as needed.
  • Line a sheet pan with foil and place a metal rack on top. Using the metal rack keeps the pork off of the pan and allows it to roast more evenly, like it does in commercial ovens described above. Place the pork on the rack, leaving as much space as possible between pieces. Pour 1 ½ cups water into the pan below the rack. This prevents any drippings from burning or smoking.
  • Transfer the pork to your preheated oven. Roast for 25 minutes, keeping the oven setting at 475 F for the first 10 minutes of roasting, and then reduce your oven temperature to 375 F (190 C). After 25 minutes, flip the pork. If the bottom of the pan is dry, add another cup of water. Turn the pan 180 degrees to ensure even roasting. Roast another 15 minutes. Throughout the roasting time, check your char siu often (every 10 minutes) and reduce the oven temperature if it looks like it is burning!
  • Meanwhile, combine the reserved marinade with the maltose or honey (maltose is very viscous--you can heat it up in the microwave to make it easier to work with) and 1 tablespoon hot water. This will be the sauce you'll use for basting the pork.
  • After 40 minutes of total roasting time, baste the pork, flip it, and baste the other side as well. Roast for a final 10 minutes.
  • By now, the pork has cooked for 50 minutes total. It should be cooked through and caramelized on top. If it's not caramelized to your liking, you can turn the broiler on for a couple minutes to crisp the outside and add some color/flavor. Be sure not to walk away during this process, since the sweet char siu BBQ sauce can burn if left unattended. You can also use a meat thermometer to check if the internal temperature of the pork has reached 160 degrees F. (Update: USDA recommends that pork should be cooked to 145 degrees F with a 3 minute resting time)
  • Remove from the oven and baste with the last bit of reserved BBQ sauce. Let the meat rest for 10 minutes before slicing, and enjoy!

2/3 cup/160 mL hoisin sauce
2/3 cup/160 mL soy sauce
1/2 cup/120 mL sugar
4 cloves garlic (minced)
2 teaspoons/10 mL black bean paste
1 1/2 teaspoons/7 1/2 mL Chinese five spice powder
1 teaspoon salt

Steps:

  • Gather the ingredients.
  • Combine all of the ingredients, except for the salt, in a double boiler and mix well. Alternatively, you can combine the ingredients directly in a saucepan, but this method will require more frequent stirring to avoid sticking or burning on the bottom.
  • Simmer over medium to medium-low heat for 10 minutes, or until the sauce begins to thicken. Taste and add salt, if needed.
  • Once the sauce has thickened, remove from heat and allow the mixture to cool for 5 to 10 minutes. Use right away on your favorite recipes, or let cool off completely and transfer to a container with a lid to store in the fridge.
