PESTO PASTA WITH CHICKEN AND TOMATOES



Pesto Pasta with Chicken and Tomatoes image

Pesto is easy to make from scratch with just a handful of ingredients. Its fresh flavor is the highlight of this super-fast pasta dish, packed with cherry tomatoes and chicken.

1 cup firmly packed fresh basil leaves
1/3 cup grated Parmesan cheese
1/4 cup olive oil
1 clove garlic
2 tablespoons sliced almonds, toasted
12 oz uncooked penne pasta (3 1/2 cups) (from 16-oz package)
3 cups Progresso™ chicken broth (from 32-oz carton)
2 cups shredded cooked chicken
2 cups halved cherry tomatoes
1/4 cup julienned fresh basil leaves
3 tablespoons grated Parmesan cheese

Steps:

  • In blender or food processor, place Pesto ingredients.
  • Cover and process on medium speed about 3 minutes, stopping occasionally to scrape down sides with rubber spatula, until smooth. Set aside.
  • In 4-quart saucepan, heat penne and broth just to boiling over high heat. Reduce heat to medium; cover and cook 8 to 10 minutes, stirring frequently, until al dente and liquid is almost absorbed. Remove from heat. Add pesto; stir in chicken and tomatoes; cook over medium 2 to 3 minutes or until thoroughly heated.
  • Garnish with basil and 3 tablespoons Parmesan cheese.

A had a glut of tomatoes last Summer, so sun-dried them. This pesto is a great way of using up sun-dried tomatoes, and super good value as well.

Yield Makes 2 x 250ml small jars

Number Of Ingredients 8

1 cup sun-dried tomatoes
3 cloves garlic
1/2 tsp salt + 1/2 tsp black pepper
1 cup basil leaves
1/4 cup pine nuts
1 pinch red chilli flakes
1/3 cup grated parmesan
1/3 cup extra virgin olive oil

Steps:

  • Blend all the ingredients together in a food processor except the olive oil. Start the food processor and drizzle in the olive oil slowly while still mixing. Stop the machine, scrape down the sides, and adjust salt and pepper, according to taste.
  • Any leftover pesto can be stored in a jar with a tight fitting lid. Pesto can be refrigerated for up to one week. You can also freeze the pesto in ice cube trays, and this will keep for up to 2 months.

Probably not entirely authentic, but it tastes fabulous! I'm a bit of a Luddite and enjoy making this with a pestle and mortar, but do use a food processor if that's more your bag.

1 large red bell pepper
1 mild red chili pepper
2 tablespoons pine nuts, toasted
2 medium tomatoes, peeled, deseeded and roughly chopped
1/4-1/2 teaspoon Tabasco sauce
1 garlic clove, peeled
50 g fresh basil leaves, roughly chopped
8 pieces sun-dried tomatoes packed in oil, chopped
3 tablespoons sun-dried tomato paste
6 -12 tablespoons olive oil
1 -2 ounce pecorino romano cheese or 1 -2 ounce fresh parmesan cheese, grated

Steps:

  • Grill both the chilli and red pepper under a very hot grilluntil the skin blackens and blisters. Allow to cool for a few minutes.
  • Peel the chilli and pepper and remove the seeds. Roughly chop.
  • With a large pestle and mortar crush the garlic together with the toasted pine nuts.
  • One at a time, add the red pepper, chilli, basil, sundried tomato and tomato paste, squashing together until everything is roughly blended.
  • Stir in the grated Pecorino or Parmesan.
  • Stir in the oil, stirring until everything has become a paste, but still retains a little of it's own identity.
  • Add tabasco to taste.

  • Scrape down the sides after a few seconds, and stop when you are happy with the consistency and the smoothness. I like to bite into bits of pine nuts, tomatoes and basil, so leave it semi coarse, but it's up to you.
  • Taste and adjust the seasoning. Be generous with the freshly ground black pepper. Also, it may taste salty to you but it needs to be salty. In fact, the 1/2 tsp of salt is probably not enough if you are going to stir it through pasta. You will have to add more salt when actually using this red chilli pesto in another recipe.
  • Store in a sterilised container, covered in a layer of extra virgin olive oil for about 1 week. It will definitely last a week. Use as described above, as you would basil pesto.
