SPICY PORK RIBS
These are the best ribs ever. The trick is to buy belly of pork and cook it fairly slowly. The spices and juices cook out to a great thick sauce, which should be brushed over the ribs as they cook.

- Preheat the oven to 350 degrees F (180 degrees C/gas 4). Pound the garlic cloves with the spices to make the spicy marinade, then add the olive oil. Cover all the pork with the marinade, then place in a roasting tray, cover with foil, and cook for 20 minutes.
- Mix the orange and lime juice and zest with the honey. Remove the pork from the oven take off the foil and brush the meat with the honey mix. Continue to cook at 375 degrees F (190 degrees C/gas 5) for about 25 minutes, basting occasionally.
CHILLI PORK SPARE RIBS

- Heat the oil in a deep-fat fryer or large wok and deep-fry the spare ribs until they are brown and crisp. Do this in several batches, draining each cooked batch well on kitchen paper.
- Combine all the sauce ingredients in a large pan and bring to the boil. Add the deep-fried spare ribs, cover and simmer for about 1 hr or until they are tender. Drain off the sauce and remove any remaining fat.
- Heat oven to 180C/160C fan/gas 4. Put the spare ribs on a rack in a roasting tin and bake in the oven for 15-20 mins until they are brown, basting with the braising sauce every 5 mins.
- Using a cleaver or a sharp, heavy knife, chop the spare ribs into 6cm-long pieces. Turn them onto a warm serving platter and serve immediately.

MEXICAN-STYLE CHILLI RIBS
Serve these sticky chipotle pork ribs come rain or shine- they can be finished by grill or barbecue

- Mix the dry rub ingredients with ½ tsp flaky sea salt, then massage into the meat. Marinate for at least 1 hr, or ideally up to 1 day in the fridge.
- To make the sauce, heat the oil in a small saucepan and soften the garlic for 1 min. Stir in the rest of the ingredients, plus 2 tbsp water and simmer for a few secs until the sugar melts. Season with salt and set aside.
- Heat oven to 160C/140C fan/gas 3. Put the ribs in a roasting tin in 1 fairly snug layer. Pour in 100ml hot water, cover the dish tightly with foil and bake for 2 hrs until the meat pulls easily from the bones. Drain off any fat. The ribs can be cooled and kept in the fridge for up to 2 days.
- For the final stage of cooking, get the barbecue ready and wait until the coals are glowing white and grey. Cook the ribs for 4-5 mins on each side until dark golden and hot through - use tongs to turn them carefully. Brush with some of the chipotle sauce and give the ribs 1 min more to char here and there. Serve on a platter with the rest of the sauce for spooning, lime wedges, plus a big bowl of Smoky corn & avocado salsa (see related recipes, right).

- Place the pork in a large pot with water to cover. Bring to a boil and simmer for 5 minutes. Drain well.
- Place all the remaining ingredients and the pork ribs in a wok. Cover and simmer for 45 minutes. Drain, reserving 1 cup liquid.
- Heat a clean wok and sear the pork until browned.
- Add the reserved liquid and cook over medium until it glazes.
- Chop the pork into bite size pieces and serve.

Steps:
- Wash 1kg of ribs and place in a pan with star anise and bay leaves.
- Add water until it covers the top of the meat. Cook on medium heat for 1 hour or more until the ribs are soft. Once cooked, drain and set aside.
- Slice onion into strips, chop chillis and spring onions, set aside for later.
- Finely chop 2 cloves of garlic and cook in a small pan with 1tsp of oil. Keep the heat low as you want to avoid burning the garlic. Cook for 5-10 minutes until garlic is golden and crispy. Place on a paper towel and set aside.
- In a large bowl add flour, cornflour, salt and pepper. Add water until it forms a thin consistency. Add the cooked and ribs and coat evenly in the batter.
- Heat up 500ml of oil in a pan or wok. Fry the ribs until golden brown. Set aside to drain on a paper towel.
- When the ribs are all fried. Heat up 3 tbsp of oil in a pan. Fry the onions, chillis and spring onions for 5 minutes or until the onions are slightly translucent.
- Add in the ribs and stir well, coat the ribs with the onions, chillis and green onions. Drizzle sesame oil and cook for further 2 minutes.
- Sprinkle with crispy garlic, salt and pepper. Mix well and transfer to a plate. Enjoy!
EASY CHINESE STEAMED PORK SPARE RIBS WITH GARLIC AND CHILLI
A home-style Chinese dish that's easy to make, this is delicious served with steamed rice and stir-fried green vegetables.

- Rinse the pork ribs and drain them well. Put them in a bowl and add the soy sauce, rice wine, salt, sugar, cornstarch and oil, then mix thoroughly. Leave at room temperature while preparing the other ingredients.
- Mince the garlic. Slice the banana chilli on the diagonal into 3mm (⅛in) pieces. Cut the bird's-eye chilli in half lengthwise and scrape out and discard the seeds. Slice the chillies into 3mm (⅛in) pieces. Mix the garlic and both types of chillies with the pork. Spread the ingredients in a shallow heat-proof serving dish.
- Place a metal rack with low feet in the bottom of a wok and add water to the depth of about 4cm (1½in). Heat over a high flame until the water boils. Place the dish of pork on the rack, cover with the lid and steam over a medium-high flame for 20 to 30 minutes.
- While the pork is cooking, mince the spring onions. When the pork is fully cooked, sprinkle the spring onions on top and serve with steamed white rice.
CHILI-GLAZED PORK RIBS

- Make shallow cuts between the ribs on the bone side with a sharp knife, piercing just the membrane.
- Mix 1 tablespoon salt, the brown sugar, garlic, thyme, chili powder, 1/4 teaspoon black pepper and the cayenne in a bowl. Rub the spice mixture evenly over the ribs. Place the ribs on a rack in a roasting pan, loosely cover and refrigerate at least 4 hours or overnight.
- Meanwhile, combine the cider, ketchup, mustard and Worcestershire sauce in a saucepan over medium heat and simmer until reduced to about 2 cups, about 30 minutes. Cover and set aside.
- Preheat a grill to low heat on one side. Cook the ribs bone-side down on the cooler side of the grill, covered, until tender, about 2 hours 30 minutes. (If using a charcoal grill, add more charcoal as needed to maintain the temperature.) Continue to cook, uncovering every 10 minutes to baste with the sauce, until the ribs are glazed, about 40 more minutes. Remove from the grill and cut into pieces.

- Add all the slow cooked rib ingredients the slow-cooker/crockpot and cook for 4-5 hours on medium or 6-7 hours on low (alternatively, place in a large pan, bring to the boil, then place a lid on, and cook on a low heat for 3½ hours. Then push the ribs to one side of the bowl and add the water to any rub that is left in the bottom of the bowl. Mix together to make a kind of creamy slurry, and mix it with the ribs. There won’t be much liquid (and the liquid doesn’t have to completely cover the ribs), but the dry rub along with a little of the wet slurry ensures you get a thin, light, crispy coating once cooked.
