CREAMY CILANTRO LIME MAYO SAUCE



Creamy Cilantro Lime Mayo Sauce image

This creamy and tangy cilantro lime mayonnaise sauce is delicious with tacos, spread on your sandwich, or drizzled over some zucchini fritters.

1/2 cup mayonnaise (here's my mayonnaise recipe)
1 big handful of cilantro, chopped
1/2 juice of lime
1 dash of cayenne pepper (optional, to taste)

Steps:

  • If you're making your own mayonnaise, make it first. Use this recipe for a perfect mayo every time.
  • Grab a big handful of cilantro and chop it finely. You can leave the stems in if you'd like. They just give a bunch of flavor!
  • Mix the mayonnaise, cilantro, and lime juice in a ramekin.
  • Add a dash of cayenne (optional). Add more if you want more spice.

4 tablespoons fresh lime juice
1 garlic clove, peeled
1/2 teaspoon hot sauce (recommended: Tabasco)
1 teaspoon Dijon mustard
1 cup fresh cilantro leaves
1 cup mayonnaise
Salt and freshly ground black pepper

Steps:

  • Blend all ingredients in food processor except mayonnaise and salt and pepper. Process until cilantro is fine. Add mayonnaise and process just until blended. Season with salt and pepper, to taste.

3 egg yolks
2 tablespoons fresh lime juice
200 ml olive oil or 200 ml peanut oil
1 long fresh chili pepper, deseeded and finely chopped
1/4 cup coriander leaves

Steps:

  • Place egg yolks and lime juice in a food processor.
  • Process until combined.
  • With motor running, gradually add about 150ml of the oil 1 teaspoon at a time, processing well after each addition, until mixture starts to thicken.
  • Add remaining oil in a thin steady stream until incorporated and mayonnaise is thick and glossy.
  • Transfer to a bowl and add the chilli and coriander.
  • Season to taste and combine.
