1/3 cup brown rice
cooking spray
1 small brown onion, finely chopped
1 garlic clove, crushed
180 g ground beef
1 teaspoon ground cumin
1 teaspoon dried chili pepper flakes
400 g diced tomatoes
2 tablespoons tomato paste
1/2 cup beef stock
125 g four-bean mix, rinsed and drained
2 tablespoons skim-milk natural yogurt
1/4 cup flat leaf parsley, coarsley chopped

Steps:

  • Cook rice in medium saucepan of boiling water until tender; drain.
  • Meanwhile, spray medium frying pan with cooking oil; cook onion and garlic over heat, stirring, until onon softens. Add beef and spices; cook, stirring, until beef is browned.
  • Add undrained tomatoes, paste and stock; bring to a boil. Reduce heat; simmer, covered, 10 minutes. Uncover; simmer about 10 minutes or until mixture thickens slightly. Stir in beans.
  • Serve rice and chilli con carne topped with yogurt. Sprinkle with parsley.

This is Day 21: Breakfast, on the 21 Day Wonder Diet. These are totally delicious, and easily doubled to feed the family! This breakfast is to be followed by a mid-morning snack of 1 muesli muffin (See day 20: Breakfast, Recipe #366085 ).

2 slices shortcut bacon, rashers chopped finely
2 eggs
2 slices rye bread, toasted
1 small tomatoes, chopped finely

Steps:

  • Preheat oven to 200°C.
  • Divide bacon between 2 muffin pan holes. Crack an egg into each hole. Bake about 15 minutes, or until egg is set. Loosen edges of pies from pan.
  • Serve pies on toast, sprinkled with tomato.

200 g chicken breast fillets
1/4 cup skim-milk natural yogurt
2 tablespoons lemon juice
1 teaspoon coarse grain mustard
1 small red apple, thinly sliced
3 trimmed celery, salks sliced diagonally
2 tablespoons flat leaf parsley, coarsely chopped

Steps:

  • Bring the water to th eboil in a medium saucepan; add chicken. Simmer, covered, about 10 minutes or until chicken is cooked. Cool chicken in poaching liquid for 10 minutes; drain, then slice thickly.
  • Meanwhile, combine yogurt, juice and mustard in medium bowl. Add apple, celery, parsley and chicken; mix gently.

2 dried ancho chillies
2 tsp black peppercorns
2 tbsp cumin seeds
2 tbsp coriander seeds
2 tsp smoked paprika
1 tbsp dried oregano
3 tbsp vegetable oil
1 ½kg braising steak, cut into 4cm cubes - meat from the brisket, short rib, blade or chuck steak are all good
2 onions, finely chopped
6 garlic cloves, minced
2 tbsp tomato purée
1 tbsp smooth peanut butter
½ tsp instant espresso powder
2 tbsp apple cider vinegar
1l beef or chicken stock
2 bay leaves
small piece of cinnamon stick
2 tbsp semolina, polenta or Mexican masa flour
25g dark chocolate (70-80% cocoa solids)
400g can kidney beans, drained but not rinsed (optional)

Steps:

  • Heat oven to 140C/120C fan/gas 1. Over a high heat, toast the whole chillies on all sides until you can smell them cooking, then remove and set aside. Keep the pan on the heat and toast the peppercorns, cumin seeds and coriander seeds until they just start to change colour, then grind to a powder using a pestle and mortar or spice grinder. Mix with the smoked paprika and oregano (this is a standard tex-mex seasoning), then set aside.
  • Return the casserole to the heat, add half the oil and heat until shimmering. Fry the beef in batches, adding more oil if you need to, until it's browned on all sides, then set aside. Fry the onions in the pan over a low heat for about 8 mins until soft and golden, then add the garlic and cook for 1 min more. Working fast, add the meat and juices, the spice mix, tomato purée, peanut butter and coffee to the pan and cook for 2-3 mins, stirring to coat the meat until everything is thick and gloopy, then pour in the vinegar and stock.
  • Add the toasted chillies back into the casserole, along with the bay leaves, cinnamon and some salt. Bring to a simmer and stir well, then cover with the lid and cook in the oven for 3hrs, stirring occasionally, until the meat is very tender but not falling apart. Take the casserole out of the oven, put back on the stove and remove the lid. Simmer the sauce for 5 mins, then stir in the semolina flour and simmer for 2-3 mins more. Finely grate over the chocolate, stir through with the beans and simmer for a minute more to heat through. Fish out the chillies, then leave everything to rest for at least 15 mins.
  • Bring the pan to the table. Serve with bowls of accompaniments and the chilli paste (see tip below) to add heat.

1/2 cup couscous
1/2 cup boiling water
1 tablespoon sesame seeds
180 g rump steak, sliced thinly
1 small red onion, cut into wedges
1 garlic clove, crushed
150 g baby bok choy, quartered
1 long red chili, sliced thinly
2 tablespoons beef stock
2 tablespoons oyster sauce
2 tablespoons light soy sauce
150 g snow peas, sliced thinly

Steps:

  • Combine couscous with the water in medium heatproof bowl, cover; stand 5 minutes.
  • Meanwhile, toast sesame seeds in heated wok about 30 seconds; transfer to small bowl.
  • Stir-fry beef in heated wok until browned; transfer to another small bowl.
  • Stir-fry onion in heated wok 1 minute. Add garlic, bok choy and chilli; stir fry 1 minute. Add stock, sauces and beef; stir-fry until hot. Remove from heat; stir in peas.
  • Serve couscous topped with stir-fry and sprinkled with sesame seeds.

2 (400 g) cans kidney beans
2 (400 g) cans chopped tomatoes
900 g braising steak (3/4 inch cubes)
1 tablespoon flour
4 tablespoons oil
2 onions, chopped
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon cumin seed
2 tablespoons dark muscovado sugar
3 garlic cloves, crushed
600 ml beef stock
sour cream
chopped coriander, to serve

Steps:

  • Season the cubed beef with salt and pepper, dust with the flour.
  • Heat the oil in a wide frying pan and brown the beef in batches. Remove from the pan and set aside.
  • Add the onions to the same pan along with thechilli, paprika, cumin and sugar and brown 8-10 minutes until deep golden and caramelised.
  • Return the meat to the pan together with tomatoes and stock.Bring to the boil ans simmer for 1 hour. Add the kidney beans and simmer for a further 30 minutes or unlil the beef is meltingly tender.
  • Serve sprinkled with chopped fresh coriander.

You can cook the fish without it if you like. The first time I made this recipe, I was unable to buy sumac, so I used a Portugese spice blend instead.

180 g zucchini, sliced diagonally
125 g cherry tomatoes
1/4 cup of fresh mint, coarsley chopped
1/2 cup vegetable stock
1/2 cup couscous
320 g firm white fish fillets
2 teaspoons sumac
1 lemon

Steps:

  • Spray medium pan with cooking oil; cook onion and garlic over heat, stirring, 1 minute. Add zucchini and tomatoes; cook, stirring occasionally, about 1o minutes or until vegetables soften. Remove from heat, stir in mint.
  • Bring stock to a boil in a small saucepan; remove from heat, stir in couscous, stand 5 minutes. Stir into zucchini mixture.
  • Meanwhile, preheat grill. Sprinkle fish with sumac; grill until cooked, turning once.

700 g beef mince
3 teaspoons chili
1 teaspoon cumin
400 g tomatoes
1 stock, cube
3 tablespoons tomato puree
110 g chorizo sausage
2 tablespoons chili sauce
2 bell peppers
800 g kidney beans
1 teaspoon cornflour
bread

Steps:

  • In a large saucepan, fry the onion in the oil over a medium heat until soft. Add the garlic and cook for 1 minute. Add the mince and cook until it browns, stirring to break up any clumps.
  • Stir in the chilli powder and cumin, then add the tomatoes, stock, and tomato puree. Cover with a lid and simmer gently for 45 minutes, stirring often.
  • Meanwhile, peel the skin off the outside of the chorizo and discard, then cut it into small cubes. Cook in a non-stick frying pan over a medium heat for 3-5 minutes until the fat starts to run out.
  • Add the chorizo and fat in the pan to the mince, then add the sweet chilli sauce, pepper, and kidney beans. Simmer for another 10 minutes.
  • Mix the cornflour with 2tbsp cold water, stir in and cook until simmering again.
