Categories     Dinner     Main Course

Time 30m

Number Of Ingredients 16

2/3 cup reduced-sodium soy sauce
2/3 cup beef broth
2 tablespoons brown sugar
4 cloves garlic (minced)
2 teaspoons minced ginger
1 teaspoon cornstarch
16 ounces boneless beef sirloin steak (sliced thin)
16 ounces linguini noodles
4 teaspoons canola oil (divided)
1 red bell pepper (sliced thin)
1 onion (sliced thin)
2 carrots (sliced into match-sticks)
2 cups broccoli florets
2 cups cabbage (shredded)
sesame seeds (to taste (optional))
red pepper flakes (to taste (optional))

Steps:

  • Combine soy sauce, broth, brown sugar, garlic, and ginger in a small mixing bowl. Place half of the mixture in a gallon-sized Ziploc bag, add sliced beef, seal (pressing as much air out as you can), and refrigerate for at least 2 hours.
  • Add cornstarch to remaining mixture in bowl and stir until smooth, cover and refrigerate until ready to use.
  • Prepare linguini noodles according to package directions. While noodles are cooking, heat 2 teaspoons oil in a large skillet over medium-high heat and add steak slices, discarding excess marinade. Stir-fry until just browned, remove steak from skillet and set aside.
  • Add remaining oil to the same skillet and stir-fry peppers, onion, carrots, and broccoli until onions become clear and soft. Add cabbage and beef to the skillet and cook until cabbage becomes soft.
  • When noodles are done cooking, drain and toss with beef/vegetable mixture, adding the reserved sauce mixture. Toss until noodles are coated in sauce. Top with sesame seeds and/or red pepper flakes (optional) and serve immediately.

1 tsp Chinese five-spice powder
300g pack ready-cooked rice noodle
1 large red chilli
1 fat garlic clove , chopped
4cm piece ginger , peeled and cut into matchsticks
1 stick lemongrass , trimmed and sliced

  • Cook the noodles in a large pan of boiling water as per the cooking instructions (usually 3-4 minutes). Drain, run under cold water to stop the cooking process, then place in a bowl and toss with the sesame oil to prevent the noodles from sticking together. Put to one side.

CHILLI BEEF WITH SPICY NOODLES RECIPE - BBC FOOD

From bbc.co.uk
  • For the chilli beef, heat the oil in a deep heavy-based frying pan until a breadcrumb sizzles and turns brown when dropped into it. (CAUTION: hot oil can be dangerous.
  • Heat a frying pan until hot, add the Sichuan peppercorns and dry fry for one minute, or until fragrant. Transfer to a pestle and mortar and crush until coarsely ground, then add the orange zest and crush again until well combined.
  • In a bowl, mix together the salt, rice flour and Sichuan pepper and orange zest mixture until well combined.
  • Add the beef strips and mix well to coat them in the mixture. Discard the remaining flour and Sichuan pepper mixture.
  • Carefully lower the coated beef strips into the hot oil in batches and fry for 2-3 minutes, or until crisp and golden-brown. Remove from the pan using a slotted spoon and set aside to drain on kitchen paper.
  • Carefully lower the carrot strips into the hot oil and fry for 1-2 minutes, or until just softened (they should float to the surface of the oil when ready).
  • Remove from the pan using a slotted spoon and set aside to drain on kitchen paper. Repeat the process with the remaining carrot strips.
  • For the sauce, heat a non-reactive frying pan over a medium heat. When the pan is hot, add the rice wine vinegar, sugar and soy sauce and bring the mixture to the boil.
  • Add the chillies, chilli flakes and grated ginger and cook for 2-3 minutes, or until the mixture is sticky and has thickened.
