EASIEST TURKEY LOAF
I wanted to create a meat loaf using ground turkey. I decided to try a boxed stuffing mix to bind the ingredients, and it worked! The kitchen will smell like Thanksgiving morning when you make this.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 5 3/4x11-inch loaf pan.
- In a bowl, mix the stuffing mix with hot water, and let the mixture stand for 2 minutes to plump up the bread crumbs. In another bowl, mix the ground turkey with beaten eggs, salt, and black pepper. Mix into the stuffing until thoroughly combined. Spoon the loaf mixture into the prepared pan.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let stand 10 minutes before serving.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
- Place turkey, onion, carrots, bell pepper, crackers, egg, milk, seasoning blend, and pepper into a mixing bowl. Blend gently using your hands until combined. Mold into a loaf shape and place onto the prepared pan.
- Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), 40 to 45 minutes.

- In a medium bowl, mix the turkey, egg, onion, and bread crumbs. Adjust the amount of bread crumbs as needed to make a stiff mixture. Season with salt and pepper. Transfer the mixture to a 9x5 inch loaf pan, and sprinkle with poultry seasoning.
- Bake 1 1/2 hour in the preheated oven, or until meat is cooked through and the internal temperature is at least 170 degrees F (70 degrees C) when taken with a meat thermometer.

BEST TURKEY MEATLOAF
After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
- Mix ground turkey, buttery round cracker crumbs, milk, onion, egg, salt, garlic, and black pepper in a bowl; shape into a loaf and place on the prepared jelly roll pan.
- Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.

- In a 6-quart kettle, combine the turkey, water, bouillon, bay leaf, and salt. Cover and simmer until meat is very tender and begins to fall away from the bone, about 2 1/2 hours. Lift out meat and set aside to cool. Add wine to cooking liquid and boil, uncovered, until reduced to 3 cups.
- Remove meat from the bones, discarding skin, tendons, and bones. Tear meat into fine shreds and combine with the thyme, sage, garlic, onion, parsley, pimento (drained), and black pepper. Pack meat mixture into a 5x9-inch loaf pan, then pour in the cooking liquid. Cover and chill until set, at least 6 hours.
- Run a knife around the pan sides to loosen. Dip pan into hot water for 5 seconds, then invert onto a serving plate and slice.

- Preheat oven to 350 degrees. Line a rimmed baking sheet with parchment or spray with cooking spray.
- In a medium skillet over medium-low heat, cook the onions, olive oil, salt, pepper and thyme until translucent (about 10 minutes). Add Worcestershire sauce, chicken broth, and tomato paste. Mix well, and cool to room temperature.
- In a large bowl, gently combine ground turkey, dry stuffing mix, eggs and onion mixture. Shape into a rectangular loaf on prepared baking sheet. Spread ketchup over top.
- Bake for 60-70 minutes, or until the internal temperature of the meatloaf reaches 160 degrees. Tip: to prevent the top from cracking, place a pan of hot water in the oven under the meatloaf.
