VERY GREEN BROCCOLI SOUP



Very Green Broccoli Soup image

1 1/2 pounds broccoli
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter
2 tablespoons minced garlic
1 cup (1/4-inch) diced onion
1/2 cup (1/4-inch) diced celery
Gray salt
Freshly ground black pepper
2 teaspoons finely chopped fresh thyme leaves
5 cups chicken stock or canned low-salt chicken broth
2 cups packed spinach
2 teaspoons freshly grated lemon zest
1 cup heavy cream or buttermilk (if using buttermilk, cut the lemon zest in half)

Steps:

  • Cut the broccoli florets from the stems. Peel the tough outer skin from the stems and trim off the fibrous ends. Cut the stems lengthwise into slices about 1/2-inch thick and then crosswise into 1/2-inch pieces.
  • Heat the olive oil and butter in a soup pot over medium-high heat until hot. Add the garlic and cook until light brown. Add the onion and celery, lower the heat to medium, and season with salt and pepper. Cook the vegetables slowly until tender, about 10 minutes. Regulate the heat so the vegetables cook without taking on color.
  • Add the thyme and stir. Add the broccoli stems, stock, and salt and pepper, to taste, and bring to a boil. Cook, uncovered, for about 3 minutes. Add the florets and continue to cook until very tender, about 5 minutes more.
  • Puree the soup in a blender in small batches. Add some of the spinach and some of the lemon zest to each batch and then puree it. (The soup can be made to this point, covered, and refrigerated for up to 1 day or frozen for up to 1 month.)
  • Return the soup to the pan and reheat over gentle heat. Stir in the cream. Taste and adjust the seasoning with salt and pepper. Keep warm.
  • Chef's Note: When I plan on finishing a dish with the addition of a dairy product, as I do here with cream, I often add a dairy product early in the cooking, too, as I do with the butter in the initial cooking of the vegetables. It melds the flavors.

Steps:

  • In saucepan combine broth, onion, broccoli, thyme, bay leaf and garlic powder. Bring to a boil. Reduce heat; cover and simmer 10 minutes or until broccoli is tender. Remove bay leaf. Place vegetable mixture in blender or food processor. Cover and blend 30 to 60 seconds or until smooth. In same saucepan melt butter. Blend in flour, salt and pepper. Add the milk at once. Cook and stir until thickened and bubbly. Stir in vegetable puree. Cook until heated through for a warm soup. Refrigerate, covered, for several hours for chilled soup.

6 tablespoons (3/4 stick) butter, room temperature
2 pounds fresh broccoli, stems and florets separated and chopped into bite-size pieces
1 large onion, chopped
2 garlic cloves, minced
1 teaspoon chopped fresh tarragon or 1/2 teaspoon dried
6 1/2 cups chicken stock or canned low-salt chicken broth
1 cup whipping cream
3 tablespoons all purpose flour
2 cups (packed) grated extra-sharp cheddar cheese (about 8 ounces)

Steps:

  • Melt 3 tablespoons butter in heavy medium pot over medium-high heat. Add broccoli stems and onion; sauté until onion is translucent, about 6 minutes. Add garlic and tarragon; sauté 1 minute. Add stock; bring to boil. Simmer uncovered until broccoli is tender, about 15 minutes. Stir in cream.
  • Mix remaining 3 tablespoons butter with flour in small bowl to make paste. Whisk paste into soup. Add broccoli florets. Simmer until soup thickens and florets are tender, stirring frequently, about 5 minutes. (Can be made 1 day ahead. Cool slightly, then refrigerate uncovered until cold. Cover and keep refrigerated. Bring to simmer before continuing.) Preheat broiler. Place 6 ovenproof soup bowls on baking sheet. Divide soup among bowls. Sprinkle 1/3 cup cheese over each. Broil until cheese melts and bubbles around edges, about 4 minutes.

This soup is very easy to prepare and ready in less than half an hour. It can be served hot or cold.

Steps:

  • In a large saucepan, melt the butter over medium heat; cook the onion, carrot and garlic for 5 minutes.
  • Stir in the stock and bring to a boil; add the broccoli.

  • In a blender or food processor, puree the soup in batches and transfer to a glass bowl.

  • Heat butter in a large pot over medium heat. Saute onion until softened, about 4 minutes. Stir in milk, bring to a boil, and simmer for 4 minutes.
  • Cook the broccoli florets in rapidly boiling salted water until tender, about 5 minutes. Drain in a colander and rinse under cold water to set the bright green color. Drain.

This tasty, healthy soup requires no extra fat. It's just broccoli, broth, and flavorings, all cooked together and then pureed in a food processor. Pair it with a salad or sandwich for lunch or dinner. Straining the vegetables and reserving the broth, allows you to control the thickness of the soup based on your personal preference. If you don't have fresh herbs, it's better to omit them altogether than to substitute dried ones. To make 1/4 cup yogurt cheese, spoon 1/2 cup plain fat-free yogurt into a coffee filter or cheesecloth-lined strainer; place over a bowl. Refrigerate, covered, at least 8 hours or overnight.

  • In a medium-sized cooking pot, add 4 cups water and chicken bouillon granules and bring to boil. Add precooked onion mixture to soup pot. Add broccoli florets, reserving a few pieces to be added near the end of cooking time. Reduce heat and simmer, covered, for 15 to 20 minutes or until broccoli is just tender.
  • In a blender or food processor, puree soup in batches and return to pot. Stir in half and half cream and remaining broccoli florets.

1/4 cup (60 ml) vegan butter or olive oil
5 cups (360 grams) broccoli, chopped (approx. 2 heads)
2/3 cup (100 grams) chopped carrots (approx. 2 carrots)
2/3 cup (100 grams) chopped celery (approx. 2 ribs)
2/3 cups (100 grams) chopped onion, (approx. 1 onion)
2 cloves garlic, minced
6 tbsp (65 grams) flour
4 cups (1000 ml) vegetable broth
2 cups (500 ml) original or unsweetened non-dairy milk (I recommend original cashew)
3/4 cup (185 ml) full-fat canned coconut milk (or sub with more non-dairy milk)
1/4 cup (20 grams) nutritional yeast flakes (or sub with vegan cheese shreds)
1 tsp (5 ml) white wine vinegar or lemon juice
1/2 tsp (2.5 ml) salt, to taste
Black pepper, to taste
1 cup (70 grams) broccoli florets
1 tbsp (15 ml) olive oil
Salt, to taste

Steps:

  • In a medium saucepan, heat vegan butter or olive oil over medium heat. Add the broccoli, carrot, celery, onion, and garlic. Sauté until onion is translucent and just tender, about 5 minutes.
  • Sprinkle vegetables with flour. Cook for 1-2 minutes, stirring often.
  • Gradually add vegetable broth and non-dairy milk, stirring constantly to prevent lumps. Add the coconut milk and nutritional yeast. Simmer soup over medium-low heat for 10-15 minutes, or until the vegetables are tender.
  • Blend the soup to your liking. I recommend puréeing ½ to ⅔ of the soup smooth.
  • If desired, adjust consistency with vegetable broth or non-dairy milk. Stir in white wine vinegar. Taste and adjust seasoning with salt, pepper, vinegar, (and if desired, sugar if using unsweetened non-dairy milk - refer to recipe notes).
  • In a separate saucepan or skillet, heat olive oil over medium heat.
  • Add the broccoli florets and sprinkle with salt. Sauté until just nearly tender. Turn the heat up to high and continue to cook, stirring sporadically, until the broccoli has a nice brown/black edge on at least 1 side. Remove from heat and set aside.
  • Ladle soup into bowls. Drizzle with a little bit of olive oil, top with browned broccoli florets, vegan cheese shreds (optional), and cracked black pepper. Serve with crackers, bread, sandwich or salad. Enjoy!

1 lb fresh broccoli
1/2 c onion, diced
1 clove garlic, minced
2 Tbsp olive oil
4 c boiling water
2 vegetable-flavored bouillon cubes
1 Tbsp fresh parsley, minced
1/2 tsp dried rosemary
1 Tbsp lemon juice
3/4 c plain yogurt

Steps:

  • 1. Trim off the large leaves on the broccoli, and remove the tough end of the lower stalks. Wash broccoli thoroughly. Remove the tough skin on the stalk, then chop all the broccoli coarsely. Set aside.
  • 2. Saute onion and garlic in oil in a 3-quart saucepan over medium heat until tender. Add the water and bouillon cubes, stirring until the bouillon cubes dissolve.
  • 3. Add the reserved broccoli, parsley, and rosemary; bring to a boil. Cover; reduce heat, and simmer for 15 minutes.
  • 4. Transfer half of the broccoli mixture to a blender; process on high speed 1 minute or until smooth, stopping once to scrape down the sides. Repeat the procedure with the remaining half of the broccoli mixtre.
  • 5. Stir in the lemon juice. Cover and chill. To serve, ladele soup into individual soup bowls. Top each serving with yogurt.
