Make the popular Chilaquiles Rojos usually served at breakfast but are perfect for any meal of the day. You can add shredded chicken or just top it with a fried egg for the ultimate experience!

12 corn tortillas (See note below)
canola & avocado oil (enough to coat the tortillas if baking or about two cups if frying. )
3 roma tomatoes
⅓ onion (white or yellow)
2 guajillo chiles (seeded)
2 or 3 chiles de arbol (Use more if you like it very spicy)
2 garlic cloves
½ Tablespoon knorr (chicken or vegetable flavor)
½ teaspoon kosher salt
1 teaspoon dried oregano
½ teaspoon black pepper
Mexican Crema
queso fresco
Avocado
red or white onion slices

Steps:

  • In a small or medium saucepan, add two cups of water, chiles, tomatoes, onion & garlic. Over medium-high heat, bring the water to a soft boil, then lower heat to medium-low. Cook for 7 minutes or until tomatoes are soft.
  • In a blender, add one cup of the cooking water, the chiles, tomatoes, onion, garlic plus all of the spices. Puree for one or two minutes until everything is pureed well.
  • Note: Reserve the remaining of the cooking water for now in case the sauce becomes too thick
  • Add one tablespoon oil to a saucepan/skillet and heat over medium heat. Add the tomato/chile puree (careful, it will sizzle!). Turn the heat to low, and simmer, stirring often, for about 5 minutes, until the sauce darkens and thickens a little bit.
  • Taste and adjust salt & pepper.
  • While the sauce is cooking, fry or bake the tortillas
  • In the saucepan where the sauce is cooking, stir in the tortilla chips, and fold until the tortilla is coated with the sauce. Remove from heat.
  • Serve immediately so that the tortillas chips don't become too soggy. They will soften up fast!
  • Drizzle with crema, sprinkle the cheese, and sliced avocado on the top.

2 tomatoes, chopped
6 dried chile de arbol peppers
1 onion, sliced
2 cloves garlic, minced
1 teaspoon chicken bouillon granules
salt to taste
water to cover
2 tablespoons vegetable oil, or to taste
2 (6 inch) corn tortillas, cut into strips
4 eggs

Steps:

  • Combine tomatoes, chile de arbol peppers, onion, garlic, chicken bouillon, and salt in a saucepan; add enough water to cover. Bring to a boil; reduce heat and cook, stirring occasionally, until tomatoes and peppers soften, 5 to 10 minutes.
  • Transfer chile peppers to a blender using a slotted spoon; blend until smooth. Pour in tomato mixture; blend until smooth.
  • Heat oil in a large skillet over medium heat. Cook and stir corn tortillas in the hot oil until crispy, 3 to 5 minutes. Crack in eggs; stir until scrambled and set, about 5 minutes. Strain blended sauce over tortillas and eggs; mix well.

Puntas de res a la Mexicana-which translates to Mexican-style beef tips-have me wondering if they are possibly the original fajitas? The classic combination of sliced tender beef, bell peppers, tomatoes and onions is unmistakably fajitas. The definition of "Mexican-style" refers to the use of tomatoes, chiles and onions-a foundation of many Mexican dishes. But puntas de res pick up where fajitas leave off: A dry spice rub on the meat imparts a great deal of flavor, and a luxurious sauce coats the stewed beef, tomatoes and fresh chiles güeros that are mellow but have just enough of a kick and a whole lot of flavor. This dish is a classic and the flavor punch will keep you coming back for another tortilla-full. The best part? It comes together in under an hour, making it perfectly suitable for weeknight dinner. Chiles güeros can be easily found at your local Latino market or substituted with fresh jalapeño.

1 1/2 pounds boneless beef short ribs, trimmed of excess fat
1 1/2 teaspoons cumin seeds
1/2 teaspoon whole black peppercorns
2 cloves garlic, peeled
Kosher salt
1 tablespoon grapeseed or canola oil
1/2 yellow onion, thinly sliced
1 pound tomatoes (about 3 large), thinly sliced
4 güero or yellow chiles (or 1 jalapeño pepper), stemmed, seeded and thinly sliced
1 bell pepper, thinly sliced
Refried beans and warm tortillas, for serving

Steps:

  • Working against the grain, slice the beef into thin strips about 1/2 inch thick and 1 inch long.
  • In a molcajete or mortar and pestle, crush the cumin, peppercorns, garlic and 1 teaspoon salt to form a coarse paste. (Alternatively, make the paste by finely mincing the garlic into a paste and mixing in ground spices until well incorporated. Reduce the spice amount in the recipe to half if using ground.)
  • Rub the paste all over the beef using your hands. Cook right away, or transfer to a bowl, cover and refrigerate until ready to cook, up to overnight.
  • Heat the oil in a large skillet over medium heat until hot and shimmering. Add the onion and cook until softened and fragrant, about 5 minutes. Add the beef and cook until lightly browned and fully cooked, 8 to 10 minutes. Season with 1 teaspoon salt.
  • Add the tomatoes, chiles and bell peppers. Cook, stirring often, until the vegetables have softened, the tomatoes have released their juices and the sauce coats the back of a spoon, 20 to 25 minutes. Taste and season with salt, about 1 teaspoon.
  • Serve in shallow bowls with a side of refried beans and piping hot tortillas.

  • For the Red Salsa, place tomatoes, onion, pepper, garlic, and onion in a medium size saucepan. Cover with water and cook at medium heat for about 15 minutes or until the tomatoes and peppers are cooked. Place the cooked ingredients in your blender with 1/2 cup of the cookign water to make a sauce. Season with salt and set aside.
  • Heat 1 tablespoon of oil in a large skillet and start frying the tortillas until golden and crisp in batches. You might need to do 2 or 3 batches to avoid overcrowding the skillet. Drain the tortillas on paper towels. Repeat the process with the rest of the tortillas.
  • Clean the skillet with a paper towel, turn the heat to medium and add 1 tablespoon of oil. Add the sauce and let it cook for 5 minutes. Add the Epazote and season the sauce with salt. Carefully stir in the tortillas to avoid breaking them. Add the chicken (if using) and coat it with the salsa. Cook for 2 more minutes.
  • Serve garnished with crumbled cheese, cilantro, onion and topped with the cream. Serve with “Refried beans”. Avocado is also a good addition to the plate.
